Delicious vegetarian appetizer. These nut balls have a meaty taste and are very addictive! You can easily vary the types of nuts and spices to suit your taste.

3/4 cup finely ground walnuts
1/2 cup finely ground sunflower seeds
1/2 cup finely ground cashews
1/4 cup finely ground almonds
1 small onion, coarsely grated
2 beaten eggs or 4 egg whites
3/4 cup whole wheat bread crumbs, finely ground
1 cup cooked brown rice
1 tablespoon soy sauce
1/2 teaspoon poultry seasoning
2 tablespoons chopped fresh basil or 1 tablespoon dried basil
1 cup alfalfa sprout, chopped
prepared mustard (for dipping, e.g. dijon, raspberry, honey, etc.)

Steps:

  • Preheat oven to 350°F.
  • Note: you can use any combination of ground nuts and seeds to equal 2 cups.
  • Mix all ingredients except mustard.
  • Form one inch balls.
  • Place on oiled cookie sheet.
  • Bake until light brown and crunchy, about 20 minute.
  • Serve with assorted mustards for dipping.

This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

½ cup butter, softened
1 ⅛ cups all-purpose flour
1 cup chopped walnuts
⅛ teaspoon salt
1 teaspoon vanilla extract
2 tablespoons white sugar
½ cup super fine sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
  • Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

1 cup butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups cake flour
1 cup chopped pecans
½ cup confectioners' sugar for rolling

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, 1 cup confectioners' sugar and vanilla until smooth. Stir in the cake flour, then fold in the pecans. Roll dough into 1 inch balls and place them 1 inch apart onto ungreased cookie sheets.
  • Bake for 15 to 19 minutes in the preheated oven, until lightly browned. Cool cookies completely before rolling in additional confectioners' sugar. If you are storing the cookies in a tin, add remaining sugar to the tin.

2 cups Rice Krispies
1 cup chopped pistachios or almonds
1/3 cup butter, cubed
1 package (8 ounces) pitted dates, finely chopped
1 cup sugar
1 teaspoon vanilla extract
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

12 ounces semi-sweet chocolate chips (REAL chocolate please)
1 cup chopped nuts (almonds, hazelnuts, walnuts, brazil nuts, pick your favourite)
3/4 cup sweetened condensed milk
1 teaspoon vanilla
1/8 teaspoon salt
chocolate sprinkles or finely grated chocolate, if preferred

Steps:

  • In the top of a double boiler over hot (but not boiling) water, melt the chocolate chips.
  • Stir in nuts, condensed milk, vanilla and salt.
  • Mix well.
  • Cool the mixture until until you can work with it comfortably. If it is too soft, chill it in the refrigerator until it is workable. The temperature in your kitchen and the type of nut (and fineness of chopping) used can influence how much it needs to chill before being workable.
  • Butter hands and roll mixture into 1 inch balls.
  • Roll the balls in the chocolate sprinkles (or grated chocolate) and refrigerate.

  • Preheat the oven to 325 degrees. In a bowl, cream together butter and 3/4 cup of the powdered sugar. Add the flour, vanilla and ground pecans. Stir to combine.
  • Shape dough into balls, using a slightly rounded teaspoon for each. Place 2 inches apart on a parchment-lined cookie sheet. Bake until the edges turn gold, about 20 minutes.
  • Transfer cookies to a rack to cool. Cookies can be frozen in an airtight container, with wax paper between each layer for up to 6 months. Defrost 30 minutes. 2 tablespoons honey
1 teaspoon bourbon or fresh orange juice

Steps:

  • Whisk together flour, pecans, confectioners' sugar, and salt in a medium bowl. With an electric mixer on medium-high speed, beat butter and honey until fluffy, about 3 minutes.
