Steps:
- Melt the butter in a large saucepan over medium-high.
- Add the milk and salt to the butter and stir to combine, then allow the mixture to come to a boil (it should develop a frothy head).
- Add the flour to the butter mixture and stir with a fork until a loose ball is formed. Continue stirring for 1 or 2 more minutes.
- Scrape dough ball into a bowl and allow to sit at room temperature for about 5 minutes.
- Add the eggs 1 at a time, stirring each into the mixture until it's smooth.
- Preheat oven to 375 degrees F.
- Coat 12 muffin cups with butter liberally, including the area around the mouth of each cup. Do the same to a #9 disher (one of those ice cream scoops with the thumb lever that helps push out the scoop). Drop about half a scoop of the mixture into each muffin cup. Dust the top of each puff with a pinch of sugar (turbinado sugar works well for this).
- Slide pan into the oven and allow to bake for 30 minutes, until puffs have more than doubled in size and are golden brown.
- Poke each puff with a fork to let out its steam (so the insides don't get soggy) and remove from the pan. Allow each puff to cool slightly before eating, then dig in!

NUN'S PUFFS
Steps:
- Preheat the oven to 375 degrees Fahrenheit. Grease a regular size muffin pan with oil, on the inside and on the rim.
- In a medium saucepan, melt the butter. Add the milk and bring to a low boil.
- Add the flour all at once and stir vigorously with a wooden spoon, keeping the saucepan on low heat, until the dough comes together in a ball that stays together.
- Cool for 5 minutes.
- Add the eggs, one at a time, using a wooden spoon, until each egg is evenly mixed in. At first, the dough will separate into chunks, but then will become smooth.
- Divide the dough evenly among the prepared muffin cups. Sprinkle each puff with sugar.
- Bake in the preheated oven for about 30 minutes, until puffy and golden brown.
- Serve with a drizzle of honey.
NUN'S PUFFS WITH CREAM
Okay, first of all don't ask me why these are called Nun's Puffs, I'm just posting the recipe!! lol But these are really good if you like eggy flavors--don't try them if you don't.

- Grease 12 muffin cups including the area around the top of the cup as well as the sides. (DO NOT USE PAPER MUFFIN CUPS!).
- In a medium saucepan melt butter and add milk. Bring to boiling.
- Add flour all at once, stirring vigorously.
- Cook and stir until mixture forms a ball that does not separate and cool for 5 minutes.
- Add the eggs, one at a time, beating for 1 minutes after each egg until smooth. divide dough evenly among muffing cups, don't worry if they aren't full, these will rise.
- Preheat oven to 375°F and sprinkle puffs with sugar.
- Bake about 30 minutes or until golden brown and puffed. Remove from pan.
- Plop a dollop of whipped cream on top of each and serve immediately or drizzle honey over the top and serve immediately.*.
- *NOTE: If the eggy flavor is a bit strong for you, let cool a couple hours and that will cut it down a lot.

MARY BERRY'S RELIGIEUSES
A French favourite: choux pastry buns filled with a smooth vanilla crème patissiere (pastry cream) and coated with dark chocolate ganache. Each bun is decorated with a frilly white collar of whipped crème to make it resemble a miniature nun.

Steps:
- Start by making the choux pastry. Heat your oven to 220°C/200°C fan/425°F/Gas 7. Draw eight 5cm circles and eight 2.5cm circles on the paper lining the baking sheet.
- Put the butter and water into a heavy pan and heat over a medium heat until the butter has completely melted, then bring the mixture to the boil, taking care not to burn the butter. Remove from the heat and tip in the flour. Stir vigorously with a wooden spoon until the mixture forms a soft ball. Set the pan back on a low heat and cook for 3-5 minutes, stirring constantly, to dry out the dough. Remove from the heat and leave to cool slightly. Gradually add the eggs, beating well after each addition, to make a smooth, shiny paste.
- Spoon the choux dough into a piping bag fitted with a 1.5cm plain tube. Pipe discs inside the drawn circles on the baking sheet. Dip your finger in water and gently smooth the top of each disc. Place in the heated oven and bake for 10 minutes, then reduce the oven temperature to 190°C/170°C fan/375°F/Gas 5 and bake for a further 10-15 minutes until a good golden brown.
- Remove the baking sheet from the oven and pierce each bun with a skewer to allow the steam to escape. Return the choux buns to the oven and bake for 4-5 minutes so they dry out. Transfer the buns to a wire rack and leave to cool.
- Meanwhile, make the crème patissiere. Pour the milk into a heavy-based medium pan. Using the tip of a small knife, scrape out the vanilla seeds from the split pod and add to the milk. Slowly bring to the boil, then remove the pan from the heat and set aside. Put the egg yolks and sugar into a heatproof mixing bowl and whisk together until pale, then add the cornflour and flour and whisk in. Continue to whisk as you pour on the hot milk in a thin steady stream. Pour the mixture back into the pan. Set over a medium heat and bring to the boil, whisking constantly. Cook for 1 minute until smooth and thick. Pour into a bowl and cover the surface of the crème patissiere with clingfilm (this prevents a skin from forming). Leave to cool, then chill.
- For the chocolate ganache, bring the cream to the boil in a small pan, then remove from the heat. Add the pieces of chocolate and stir until melted and the mixture is smooth and shiny. Transfer to a bowl and leave to cool, then cover and chill until the ganache has a thick coating consistency.
- To assemble the religieuses, spoon the crème patissiere into a piping bag fitted with a long thin tube (or use a jam or icing syringe) and fill the choux buns through the 'steam hole' made earlier. Dip the tops of the filled buns into the chocolate ganache to coat them halfway up the sides. Set a small bun on top of each large bun.
- Whip the cream until it stands in peaks. Spoon into a clean piping bag fitted with a star tube. Pipe a line of cream around the join where the two buns meet to form a white collar. Serve as soon as possible after assembling.

The name of this recipe doesn't sound appealing but trust me it is. It's been a family French recipe for years and I would love to share it with you.

Steps:
- -Pre-heat oven to 375.
- -Roll your room temperature dough to less then 1/2 inch thickness into a rectangular shape.
- -With a spoon, spread 2 tbsp of butter evenly over dough.
- -Evenly cover the butter with brown sugar leaving a little room around the edges of the dough.
- -Sprinkle cinnamon over brown sugar.
- -Tightly roll up the dough and seal the seam with your left over butter.
- -Trim ends off and cut rolled dough about 1/2 in thick and lay flat on sprayed cookie sheet.
- -Bake for about 12 min or until brown sugar is caramelized.
- -Lay waxed paper on your work surface.
- -Once out of the oven, wait about 5 min then gently remove from pan and place them onto the waxed paper.
- -Let cool completely - about 10 minute.
- -These can be frozen for future use for up to a month.
