I combined two of my favorite dishes-fajitas and shrimp with cheesy grits-into this spicy one-dish meal. For more heat, use pepper jack cheese instead of a Mexican cheese blend. -Arlene Erlbach, Morton Grove, Illinois

1 pound uncooked shrimp (16-20 per pound), peeled and deveined
2 tablespoons fajita seasoning mix
1 cup quick-cooking grits
4 cups boiling water
1-1/2 cups shredded Mexican cheese blend
3 tablespoons 2% milk
2 tablespoons canola oil
3 medium sweet peppers, seeded and cut into 1-inch strips
1 medium sweet onion, cut into 1-inch strips
1 jar (15-1/2 to 16 ounces) chunky medium salsa
1/4 cup orange juice
1/4 cup plus 1 tablespoon fresh cilantro leaves, divided

Steps:

  • Sprinkle shrimp with fajita seasoning; toss to coat. Set aside., Slowly stir grits into boiling water. Reduce heat to medium; cook, covered, stirring occasionally, until thickened, 5-7 minutes. Remove from heat. Stir in cheese until melted; stir in milk. Keep warm., In a large skillet, heat oil over medium-high heat. Add peppers and onion; cook and stir until tender and pepper edges are slightly charred. Add salsa, orange juice and shrimp. Cook, stirring constantly, until shrimp turn pink, 4-6 minutes. Stir in 1/4 cup cilantro. Remove from heat., Spoon grits into serving bowls; top with shrimp mixture. Sprinkle with remaining cilantro.

2 tablespoons olive oil
1/2 pound andouille sausage, cut into small dice
1 yellow onion, cut into small dice (about 2 cups)
3 cloves garlic, minced
3/4 cup dry white wine
3 cups low-sodium chicken broth
1 cup whole milk
3/4 cup grits
4 sprigs fresh thyme
Kosher salt and freshly ground black pepper
1 pint cherry tomatoes, halved
1 green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 pound large shrimp, peeled, deveined and tails removed
2 teaspoons Cajun seasoning
3 dashes hot sauce, optional
4 tablespoons (1/2 stick) unsalted butter
2 tablespoons chopped fresh chives

Steps:

  • Put 1 tablespoon oil in a 6-quart or larger Instant Pot® multi-cooker. Add the sausage and set to the "Saute" function. Cook, stirring occasionally, until the sausage is crispy on the edges, about 3 minutes. Stir in the onions and garlic and cook until the onions just start to soften, 2 to 3 minutes more.
  • Put in the white wine to deglaze. Using a wooden spoon, scrape up any brown bits from the bottom of the pot. Add 1 cup chicken broth and stir to combine. Cancel the heat, place an Instant Pot® trivet into the sauce and prepare to assemble an Instant Pot® stackable steamer insert.
  • Add the milk, grits, thyme, remaining 2 cups chicken stock, 1/2 teaspoon salt and 1/4 teaspoon pepper to the bottom pan of the steamer and stir to combine. Top with the second steamer.
  • Toss the cherry tomatoes with the bell peppers and 1/2 teaspoon salt in the top pan of the steamer. Cover with the lid, fold the metal clamps around both steamer baskets and place inside the Instant Pot®. Follow the manufacturer's guide for locking the lid and set the steam valve to "Sealing." Set to high pressure for 10 minutes.
  • Meanwhile, toss the shrimp with the Cajun seasoning and remaining tablespoon oil in a small bowl to evenly coat and set aside.
  • Once the pressure cooking is complete, turn the steam valve to "Venting" and allow the steam to release until all the pressure is gone. Open the Instant Pot® and carefully remove the stackable steamer baskets and trivet. Unfold the metal clamps to separate the baskets.
  • Pour the top basket of softened vegetables in the sauce in the bottom of the Instant Pot®, along with the hot sauce, if using. Stir in the shrimp and return the lid to the Instant Pot®. Allow the residual heat to cook the shrimp until opaque and cooked through, about 10 minutes more.
  • Remove and discard the thyme sprigs from the grits. Stir in the butter cover with the lid to keep warm.
  • Serve the grits topped with the shrimp and sauce and sprinkled with the chives and serve immediately.

1/4 cup ancho chili powder
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon sugar
1/4 cup semi-sweet chocolate chips
3 dried ancho chilies, seeds removed
1/4 cup sesame seeds
1/4 cup pumpkin seeds
Chicken broth, to cover
1 tablespoon salt
1/2 cup red bell pepper, roughly chopped
1/2 cup yellow onion, roughly chopped
4 cloves garlic, roughly chopped
2 tablespoons canola oil
2 cups basmati rice
4 cups chicken broth
2 teaspoons cumin seeds
2 tablespoons finely chopped fresh cilantro leaves

Roasted Poblano Pesto:
3 poblano peppers
2 jalapenos
2 teaspoons adobo seasoning
2 limes, juiced

3 (16-ounce) cans of black beans
2 teaspoons ground cumin
1 cup tomatoes, small dice
1 bay leaf
1 cup chicken broth
1 teaspoon salt

Plantain chips, for garnish

Steps:

  • In a large pot, over high heat, coat bottom of pot with oil and brown off the chicken breast until golden on both sides. The chicken may have to be browned off in smaller batches to brown evenly. Remove chicken from pot and set aside. Next, add the onion, jalapeno, and the poblano pepper to the pan and saute over medium high heat for 3 minutes. Deglaze with beer and add all other ingredients. Return chicken to the pot and bring to a boil. Turn the heat to low and simmer for approximately 1 hour or until chicken is falling apart. Remove the chicken at this point and set aside to cool. Use a stick blender to puree the mole and continue to cook over medium heat until the sauce has become thick. Once chicken is cooled, shred chicken and toss with hot mole just before serving.
  • For the arroz con pollo rice cakes:
  • Place red bell pepper, onion, and garlic in a food processor and pulse ingredients until finely chopped. In a medium sized pot, heat oil over medium-high heat and saute red bell pepper, onion, and garlic mix for about 3 minutes. Next, add the basmati rice and continue to stir for about 3 more minutes. Add the chicken broth and the cumin seeds and bring to a boil. Turn the heat to low and cover and cook approximately 15 to 20 minutes until all liquid has evaporated. Spread the rice out onto a sheet try and let cool. Once rice is completely cooled, place rice in a medium sized mixing bowl and mix in all other ingredients. Form 8 even sized rice cakes (or patties). In a medium sized saute pan over medium-high heat, cook the rice cakes until golden brown on both sides and cooked through on the inside.
  • For the red pepper sofrito:
  • Place red bell peppers, onions, and garlic in a food processer and pulse ingredients until finely chopped. In a medium saute pan, heat oil over medium-high heat and cook red bell pepper, onion, and garlic mix for approximately 10 minutes or until the raw onion flavor has mellowed. Season with salt and pepper and set mixture aside until ready to serve.
  • Preheat oven to 450 degrees F.
  • Place the poblano peppers, jalapenos, and the garlic on a sheet try and roast in oven until peppers are charred (almost black) and garlic is golden brown and soft. Set aside and allow to cool. Next, (using rubber gloves) remove seeds from the poblano peppers and the jalapenos. Place into a food processor along with garlic and all other remaining ingredients, except oil. While machine is running, slowly add enough oil to emulsify mixture. The mixture should be nice and smooth. Set aside until ready to serve.
  • For the black bean ragu:
  • In a medium pot over medium-high heat, heat oil and saute the poblano pepper and onion for about 5 minutes or until golden brown. Next, add all other remaining ingredients and bring to a boil. Turn heat to medium-low and cook approximately for 30 minutes or until most of the liquid has evaporated (it should resemble a thick chili). Turn heat to low (as low as you can) and still frequently until ready to serve.
  • Place approximately 1/2 cup of black bean ragu on a plate and then place 2 rice cakes on top of the ragu. Put a spoonful of red pepper sofrito on top of each rice cake.
  • Next toss the shredded chicken with the mole and place chicken on top of rice cakes. Drizzle a little of the roasted poblano pesto on top of the chicken and garnish with plantain chips. Serve immediately.

MEXICAN SHRIMP AND GRITS



Mexican Shrimp and Grits image

1 pound medium fresh shrimp, shells left on
6 cups water
1 teaspoon salt, divided
3/4 cup white grits
3 tablespoons butter
6 ounces pepper jack Velveeta cheese, cubed
1/2 pound chorizo sausage, casings removed
3 tablespoons olive oil, optional
1 1/2 cups chopped Vidalia onion
1 red bell pepper, seeded and chopped into 3/4-inch pieces
1 jalapeno pepper, seeded and minced
3 tablespoons all-purpose flour
2 tablespoons heavy whipping cream
1 teaspoon fresh lime juice
2 green onions, chopped, plus more for garnish
3 tablespoons chopped fresh cilantro leaves
1/8 teaspoon ground black pepper

Steps:

  • Peel the shrimp and set aside, reserving the shrimp shells.
  • In a large saucepan, bring the water to a boil over medium heat. Add the shrimp shells and reduce the heat to medium-low. Cook for 15 to 20 minutes, stirring occasionally. Cool the shrimp stock, and strain. Discard the shells.
  • In a large saucepan, bring 3 1/2 cups shrimp stock and 1/2 teaspoon salt to boil over medium heat. Add the grits, stirring well. Add the butter and stir until melted. Cover, and reduce the heat to low. Cook until thickened, stirring occasionally, about 15 to 20 minutes. Add the Velveeta, and stir until melted. Set aside and keep warm.
  • In a large skillet over medium heat, add the chorizo and cook until browned and crumbly, about 5 minutes. Remove the chorizo, to a plate or bowl, leaving the drippings in the skillet. Add up to 3 tablespoons olive oil, if necessary. Put the skillet over medium heat, and add the onion. Cook for 4 minutes, then add the red pepper and jalapeno, and cook, stirring frequently, for 3 minutes. Sprinkle with the flour, stirring constantly for 3 minutes. Gradually add 2 cups of shrimp stock, stirring to scrape the bottom of the skillet and to prevent lumps. Stir in the cooked chorizo, and increase the heat to medium-high. Bring the mixture to a boil, and cook until slightly thickened. Add the shrimp, and cook until they turn pink, about 2 to 3 minutes. Remove the skillet from the heat, then add the cream and lime juice. Stir in the green onion, cilantro and remaining 1/2 teaspoon salt, and pepper. Transfer the grits to a serving platter and spoon the shrimp mixture over the top. Garnish with green onion and serve.

1 stick (8 tablespoons) unsalted butter
1 teaspoon kosher salt
1/2 teaspoon freshly ground white pepper
1 cup grits
1/4 pound bacon, diced
1/2 cup finely diced red onion
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1 to 4 tablespoons whiskey, such as Southern Comfort
Two 14-ounce bottles ketchup, such as Heinz
1/2 cup brown sugar
Kosher salt and freshly ground white pepper
1 1/2 pounds large shrimp, peeled, tails removed and deveined
Shredded extra-sharp Cheddar, for serving
Diced scallions, for serving

Steps:

  • For the grits: Bring the cream and 2 cups water to a boil in a medium saucepan. Add the butter, salt and pepper. Slowly add the grits and reduce the heat to medium low. Cook, stirring continuously to keep the grits from getting lumpy and avoid scorching on the bottom of the pan, until the grits are rich, creamy and tender, about 20 minutes. Keep warm until ready to serve, stirring occasionally.
  • For the sauce and shrimp: Cook the bacon in a large skillet over medium-high heat until some of the fat has rendered and the bacon has started to crisp and is about three-quarters done, 5 to 7 minutes. Add the onion and peppers and cook, stirring, until softened, 5 to 7 minutes. Add the whiskey and carefully flambe. When the whiskey burns off, add the ketchup and brown sugar and season with salt and pepper. Simmer for 10 minutes, stirring occasionally. Add the shrimp to the sauce and simmer until just cooked through, about 1 minute.
  • To serve, put some grits in the middle of 6 shallow bowls, then place the shrimp in a halo around each serving of grits. Top off with some extra sauce and sprinkle with extra-sharp Cheddar and diced scallions.

3 slices bacon, chopped
Peanut oil
1 pound medium shrimp, peeled and deveined
2 tablespoons all-purpose flour
1 1/4 cup mushrooms, trimmed and sliced
1 large clove garlic, pressed
1/4 cup thinly sliced scallions
2 teaspoons lemon juice
1/2 teaspoon hot sauce, such as Tabasco
Cooked grits, for serving

Steps:

  • In a medium skillet over low heat, cook the bacon, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, reserving the bacon fat in the pan. Add enough peanut oil to the bacon fat to amount to 1 1/2 tablespoons if necessary. Reserve the skillet and fat. In a medium bowl, toss the shrimp with the flour until lightly coated.
  • Heat the fat in the reserved skillet over medium-high heat. Add the shrimp and cook until they begin to turn pink, about 1 minute. Stir in the mushrooms and reserved bacon and cook 1 minute. Stir in the garlic (do not let brown) and cook about 30 seconds. Remove from the heat and stir in the scallions, lemon juice and hot sauce. Serve immediately over grits.

LEMON-GARLIC SHRIMP AND GRITS

1/4 cup grated parmesan cheese
3 tablespoons unsalted butter

Pinch of cayenne pepper (optional)
Juice of 1/2 lemon, plus wedges for serving
2 tablespoons roughly chopped fresh parsley

Steps:

  • Bring 3 cups water to a boil in a medium saucepan over high heat, covered. Uncover and slowly whisk in the grits, 1 teaspoon salt and 1/2 teaspoon black pepper. Reduce the heat to medium low and cook, stirring occasionally, until thickened, about 5 minutes. Stir in the parmesan and 1 tablespoon butter. Remove from the heat and season with salt and black pepper. Cover to keep warm.
  • Meanwhile, season the shrimp with salt and black pepper. Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the shrimp, garlic and cayenne, if using, and cook, tossing, until the shrimp are pink, 3 to 4 minutes. Remove from the heat and add 2 tablespoons water, the lemon juice and parsley; stir to coat the shrimp with the sauce and season with salt and black pepper.
  • Divide the grits among shallow bowls and top with the shrimp and sauce. Serve with lemon wedges.

Grits are one of the ultimate comfort foods and for good reason! They're warm, creamy, and cheesy. In this dish, the grits are topped with spiced steak and the Cajun holy trinity of onions, peppers and celery.

1 1/2 pounds flank steak
Kosher salt and freshly ground pepper
2 tablespoons Cajun seasoning
2 tablespoons extra-virgin olive oil
1 cup quick-cooking grits
4 ounces extra-sharp cheddar cheese, shredded (about 1 cup)
1/2 cup whole milk
3 tablespoons unsalted butter
1 onion, diced
1 red bell pepper, diced
2 stalks celery, diced, plus celery leaves for topping
3 tablespoons apple cider vinegar

Steps:

  • Cut the steak into 4 equal-size pieces. Season lightly with salt and pepper. Rub the Cajun seasoning all over the steak. Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat until almost smoking. Add the steak; cook until charred in spots, about 4 minutes per side for medium rare. Remove to a plate.
  • Meanwhile, make the grits: Bring 3 1/2 cups water to a boil in a large saucepan; season with 1/2 teaspoon salt. Whisk in the grits and reduce to a simmer. Cover and cook, stirring occasionally, until thickened, 5 to 6 minutes. Lower the heat and whisk in the cheese, milk and 2 tablespoons butter; season with salt and pepper. Keep warm over low heat.
  • In the same skillet you cooked the steak, heat the remaining 1 tablespoon olive oil over medium heat. Add the onion, bell pepper and celery and season with salt and pepper. Cook, stirring occasionally, until softened and browned, 7 to 8 minutes. Add the vinegar and cook until evaporated, about 30 seconds. Remove from the heat and stir in the remaining 1 tablespoon butter.
  • Divide the grits among bowls. Slice the steak and place on top of the grits. Top with the vegetable mixture and celery leaves.
