EASY NAAN BREAD RECIPE (YEAST-FREE)
Once you make this easy naan bread recipe, I'm sure you'll never want to buy pre-made ones again. Just mix the four ingredients and knead them for a few minutes to bring it together, then roll it out and pan fry. It's a yeast free bread that's light, fluffy and tasty!

- Mix all ingredients together in a large bowl. You'll probably need to use your hands to bring it all together. Knead it for a minute or so in the bowl until it comes together in a fairly sticky ball. If necessary, add a little more flour to make it manageable.
- Divide it into six equal pieces. Using a rolling pin dusted with flour, roll each one out onto a floured surface to about 6" diameter.
- Heat a frying pan (without oil) until hot. Cook each flatbread for a few minutes on each side until lightly golden spots appear and it puffs up.
- Best eaten on the same day. If making ahead, warm them up in the oven before serving.

Steps:
- Mix together dry ingredients.
- Heat oil in pan.
- Add milk, egg and yogurt to pan and heat until just warm.
- Add wet ingredients to dry.
- Mix the dough, knead just until held together.
- Let rest, covered up to 45 minutes.
- On floured surface pat out into two patty shaped surfaces.
- About 1/2 inch thickness.
- Broil under medium heat, turning once.
- These will bubble and go slightly brown.
NO YEAST NAAN BREAD (READY IN NO TIME!)

- Combine dry ingredients to a large bowl: flour, baking powder, salt and sugar.
- Add wet ingredients to dry ingredients and mix with a wooden spoon. When the dough starts to form, use your hands and knead the dough for 2-3 minutes to a working surface. If the dough is too thick, add a bit more flour.
- Cut the dough into 4 pieces. Dust your working surface with flour and roll each piece of dough with a rolling pin (about 5-6 inches circle).
- In a medium-high heat pan, brush the pan with olive oil. Add naan bread and cook for 2 minutes, until bubbles start to form. Flip and cook for another minute or so. Repeat with each piece of dough. Keep in a tea towel until ready to serve and enjoy!

- If you use plain flour: Mix the sugar and yeast with the warm water and rest for about 10 minutes. (Can be omitted if you use self-raising flour).
- Place the flour in a large mixing bowl and add the yeast mixture (for plain flour) or the water (for self-raising flour). Add the ghee (or oil/butter) and salt and mix well. Add some extra water or flour as required. Tip: for a nice variation, add garlic, finely chopped coriander leaves, and sultanas to the dough.
- Knead for about 5 minutes on a smooth working surface until you have a smooth dough. Place the dough back in the bowl, cover, and leave to rise for 1-1.5 hours in a warm place.
- To finish off the bread, begin by preheating the oven grill for some 10 minutes until it is red hot. Knead the dough for another 2 minutes and either divide into 4-6 equal portions, or keep in one piece. In any case, roll out to a thickness of about 1 cm (0.5 in). lace the dough on a suitable greased oven plate and grill for 7-10 minutes, turning once or twice. Each time, brush the surface of the bread with some butter and sprinkle some poppy seeds over the bread. Tip: you can also sprinkle some sugar in addition to, or instead of, the poppy seeds. Serve warm

This recipe makes the best naan I have tasted outside of an Indian restaurant. I can't make enough of it for my family. I serve it with shish kabobs, but I think they would eat it plain.

- In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
- Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
- During the second rising, preheat grill to high heat.
- At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

NAAN BREAD

- Put 125ml warm water into a bowl and sprinkle over the yeast and 1 tsp of the sugar. Leave for 10-15 mins or until frothy. In a larger bowl, put the flour, remaining sugar, ½ tsp salt and baking powder. Mix together then make a well in the centre in which to pour the melted butter, yogurt, nigella seeds and yeast mixture. Stir well, then start to bring the mixture together with your hands. If it's very wet add a spoonful of flour but if it's dry add a splash more warm water. It should be a very soft dough but not so wet that it won't come together into a ball.
- When you're happy with the consistency, start kneading, first in the bowl, then transfer the mixture onto a well-floured surface and continue to knead for 10 mins or until smooth and elastic but still soft. Butter a large bowl, then shape the dough into a ball and place in the prepared bowl. Cover and leave in a warm place for about 1 hr or until doubled in size.
- Divide the dough into six balls and put them on a baking tray dusted with flour, then cover the tray with a damp tea towel. Heat a large non-stick frying pan over a high heat. Take one of the balls of dough and roll it out to form a teardrop shape that's approximately 21cm long and around 13cm at the widest part. When the pan is very hot, carefully lay the naan bread into it. Let it dry fry and puff up for about 3 mins, then turn over and cook on the other side for another 3-4 mins or until cooked through and charred in patches.
- Heat the oven to its lowest setting and put the cooked naan bread on a baking sheet. Brush with a little melted butter and cover with foil. Keep warm in the oven and layer up the cooked naans one on top of each other as you make them, brushing each one with melted butter or ghee as you go. Serve warm with curry or dips.
