BLT DIP
Steps:
- In a small bowl, beat together the cream cheese, mayonnaise, and Parmesan until smooth.
- Spread in the bottom of a shallow dish (large pie plate or 8x11-inch baking pan); then layer with the lettuce, bacon, tomatoes, onions and cheddar cheese.
- Refrigerate until serving. Serve with tortilla scoops or toasted baguette slices.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain on paper towels.
- In a medium bowl, combine mayonnaise and sour cream. Crumble bacon into the sour cream and mayonnaise mixture. Mix in tomatoes just before serving.

- Mix all ingredients except lettuce and tomato until well blended. Refrigerate until ready to serve.
- Mix in a handful of lettuce and tomatoes right before serving.
- Serve with crackers, toasted bread slices cut into triangles, baguette or vegetables.
- Garnish on top with a little lettuce and a little tomato.

BLT DIP
Steps:
- Preheat oven to 325 degrees F.
- Place sun-dried tomatoes in a small bowl and cover with warm water. Let stand until tender. Drain.
- Meanwhile, cut pita into triangles, place on a baking sheet and toast for 10 minutes.
- In medium bowl, combine mayonnaise, sour cream, bacon bits, and sun-dried tomatoes. Add a pinch of salt and pepper. Use a spoon to mix together; set aside.
- Cut out the core of the lettuce head to form a bowl for the dip.
- To serve, spoon BLT dip into hallowed out lettuce head and set in the center of a serving plate. Place toasted pita triangles around edge of plate.

- Preheat oven to 400F. Lay 8 strips of bacon on a shallow cooking sheet. Cook for 14 - 16 minutes or until crispy. I prefer this method of cooking the bacon (vs stovetop) because it frees you up to mix the other ingredients. If you want to save on the baking time, you can use pre-cooked bacon.
- After the bacon is done, drain off the extra bacon grease and use a paper towel to absorb grease from the bacon. I use kitchen shears to cut up the bacon into small bits or you can use a cutting board and chopping knife.
- Add the shredded cheddar cheese, chopped bacon, lettuce, green onion, and tomato to the mayo, sour cream, cream cheese mixture (save some bacon, lettuce, green onion, and tomato for garnish). Similar to the bacon, I use kitchen shears to cut up the lettuce and green onions.
