2 cups flour, unsifted
1 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup mashed ripe banana (about 3 small)
1/2 cup butter, room temperature
2 eggs
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • Lightly grease the bottom only of a 9 1/4 by 5 1/4 by 2 3/4 inch loaf pan.
  • Preheat oven to 350 degrees.
  • In large mixing bowl, combine all dry ingredients: flour, sugar, baking powder, salt and baking soda.
  • Add butter, eggs and bananas and blend well on medium speed of mixer.
  • Stir in small chocolate chips and walnuts.
  • Bake at 350 for 60 to 65 minutes or until wooden pick inserted in center comes out clean.
  • Cool 10 minutes; remove from pan.
  • Cool completely.

  • Remove from heat and allow mixture to cool 5-10 minutes.
  • Carefully spoon into a silicone mini muffin tin until 3/4 full. (This makes 34 for me)
  • Sprinkle with sea salt if desired.

Steps:

  • Preheat oven to 350 degrees.
  • Grease a casserole dish or deep rimmed baking sheet with shortening, butter, or nonstick baking spray.
  • Mash peeled ripe bananas in a large bowl.
  • Add in butter, eggs, and brown sugar and cream together.
  • Stir in milk.
  • Add in vanilla, cinnamon, baking soda, salt, and mix well.
  • Fold in flour and mix until there are no lumps - but to not overwork.
  • Add chocolate chips in right at the end, mixing through thoroughly.
  • Pour batter into prepared baking dish, and bake for 25 minutes or until toothpick inserted into the middle comes out clean (you might get melted chocolate on the toothpick, disregard that.)
  • Let cool completely before cutting.

1 cup almond flour
1 cup rice flour
2 teaspoons baking soda

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
  • In a large bowl, mash the bananas with the back of a fork until only a few lumps remain. Add the egg and mix until smooth. Using the fork, whisk in the almond milk, sugar, almond butter, coconut oil, vanilla and salt until smooth and incorporated.   • 1. Preheat your oven to 160C. Line a 900g (23x13x7cm) loaf tin with parchment paper. Then put your 2 ripe bananas in a small bowl and mash them with a fork until they are a lumpy liquid consistency.
  • 2. Cream the butter and sugar together, using a hand mixer or a stand mixer, until they are pale and well blended together. Then keep the mixer on medium speed and add the eggs one by one. Add the banana to this mixture

  • In a large mixing bowl, mash the two bananas until smooth. Add the golden syrup and beaten egg, stir, and set aside.
