1 tablespoon olive oil
1 small yellow onion, finely chopped
1 clove garlic, minced
1 red bell pepper, finely chopped
1 pound ground beef
1 6-ounce can tomato paste
1.5 teaspoons chili powder
1 teaspoon cumin
1 teaspoon kosher salt
0.13 teaspoon freshly ground black pepper
0.13 teaspoon cinnamon
4 hamburger buns, toasted
0.5 cup grated Cheddar
0.5 cup sour cream

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and red pepper. Sauté until fragrant, about 3 minutes.
  • Add the ground beef and brown, about 5 minutes.
  • Stir in the tomato paste, chili powder, cumin, salt, black pepper, and cinnamon. Simmer, stirring occasionally, until thickened slightly, about 12 minutes.
  • Spoon onto the buns. Sprinkle each with the Cheddar and top with a dollop of the sour cream.

I was hungry for Sloppy Joes and didn't have any hamburger buns but I had Grand's Biscuits. I really believe you can do anything if you have biscuits in the refrigerator. Well if I don't say so myself these turned out pretty yummy.

1 lb 93% ground beef
1 1/4 c cheese, shredded
1 can(s) pillsbury grands
your favorite sloppy joe recpie

Steps:

  • 1. Line a large baking sheet with non stick aluminum foil and pre heat the oven to 350. I don't like cleaning cookie sheets. :)
  • 2. Brown and crumble the hamburger until it is fully cooked.
  • 3. Make your favorite sloppy joe recipe or open a can of Manwhich. Sometimes that is not so bad for quick kids lunch. Cook mixture until hot and flavors have blended.
  • 4. Now for the fun part! Pull the biscuits and flatten until they are about 4-5 inches across. Put about 2 heaping tablespoons of filling in the middle and top with shredded cheese. I used sharp cheddar. Now fold one side over to meet the other side and press them together. Use a fork to crimp the edges and to make sure they will be closed. Bake 15-20 at 350 until golden brown.

1 cup finely chopped onion
1 celery rib, minced
1/2 green bell pepper, cored, seeded and chopped
1/2 teaspoon dried oregano
1 lb lean ground beef
1/2 cup ketchup
1/2 cup tomato sauce
1/4 cup water
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon sucanat
1 teaspoon salt
fresh ground black pepper
Tabasco sauce, to taste
4 rolls, halved and toasted

Steps:

  • Heat the olive oil for one minute and then sauté the onion, celery, pepper and oregano for 4 minutes or until soft.
  • Crumble in the ground beef, breaking it up with a spoon. Cook until meat is brown.
  • Stir in the remaining ingredients through the black pepper and cook for 6 minutes. Add Tabasco, if using, and cooked until bubbling and heated through.
  • Spoon over toasted rolls and serve.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
3 tablespoons butter, melted
1 (18 ounce) container refrigerated heat and serve sloppy joe sandwich sauce
1 (8 3/4 ounce) can whole kernel corn, drained
1 cup shredded cheddar cheese, divided

Steps:

  • Heat oven to 425 degrees. Mix together hash brown shreds and melted butter. Press into bottom and sides of 9" glass pie plate. Bake at 425 degrees for 20 minutes. Meanwhile in medium skillet mix sloppy joe sauce and drained corn, heat over medium heat until bubbly, set aside. Remove hash brown crust from oven and reduce oven temperature to 375 degrees. Sprinkle crust with 1/2 cup of the shredded cheese. Spoon sloppy joe mixture into crust. Bake filled crust 15-20 minutes until heated through. Remove from oven and sprinkle with remaining 1/2 cup cheese and let stand 5 minutes.

Official Contest Entry: Simply Potatoes 5Fix. Love it because it is easy. Entire recipe takes approx 10-15 minutes and after a long day it is a very filling meal that only takes minutes to make. There are lots of variations to suit your family's taste. I usually use a 6 oz can of tomato sauce and a can of water to cut down on sugar as I have a diabetic husband. Add your favorite vegetables on top for that "total taco appearance".

1 1/2 lbs ground beef
1 (1 1/4 ounce) packet taco seasoning mix (Spicy but can use mild if preferred)
12 ounces salt-free tomato sauce
8 ounces shredded extra-sharp cheddar cheese
1 (20 ounce) package Simply Potatoes (any style)

Steps:

  • In a large frying pan brown ground meat until done, sprinkle with taco mix, add tomato sauce and stir well. Let simmer on very low heat approximately 5-10 minutes. While ground beef is browning, prepare Simply Potatoes as directed. Pour ground meat mixture on top of Simply Potatoes, add shredded cheese, melt and your done! Enjoy!

2 (24 ounce) packages Simply Potatoes Traditional Mashed Potatoes
1 (15 1/2 ounce) can sloppy joe sandwich sauce (I like Hunt's Thick and Chunky)
1 lb lean ground beef (or ground pork or ground turkey)
1 cup diced bell pepper (could be all red, all green or mix)
1/2 cup water

Steps:

  • Preheat the oven to 375 degrees. Begin browning the meat in a large saute pan on med-high heat. Add diced peppers after meat has been cooking for several minutes. Cook until there is no more pink in the meat. Turn heat to low and add can of sloppy joe sauce. Mix thoroughly and let it heat through. Add 1/2 cup of water and mix well. Take off heat and pour into a large (3qt) casserole dish. (could be a shallow (9x13) or deep - depends if you want thick layer of potatoes).
  • Bake for 30 minutes and cool slightly before serving.
