To remind my daughter of wintertime in her home state, I planned a snowman theme brunch while visiting her in central California. This flavorful quiche sparked with spicy sausage and peppers got a reception that was far from chilly!

1 pound bulk mild pork sausage
1/4 pound bulk spicy pork sausage
12 large eggs
2 cups 4% cottage cheese
3 cups shredded Monterey Jack cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup all-purpose flour
1/2 cup butter, melted
1 teaspoon baking powder
2 cups sliced fresh mushrooms
3/4 cup finely chopped onion
1 can (4 ounces) chopped green chiles, drained
Grated Parmesan cheese, optional
Green and sweet red pepper strips, optional

Steps:

  • In a large skillet over medium heat, cook sausage until no longer pink; drain. In a large bowl, beat eggs, cheeses, flour, butter and baking powder. Stir in mushrooms, onion, chilies and sausage. , Transfer to two greased 9-in. round baking dishes (dishes will be full). Sprinkle with Parmesan cheese if desired. Bake at 375° for 33-38 minutes or until a knife inserted in the center comes out clean. Garnish with pepper strips if desired.

1 lb ground pork sausage (make sure it says "sausage")
8 oz cream cheese ((no need to soften))
20 oz Rotel diced tomatoes & green chilies ((two 10oz cans))
15 oz can of corn (drained)
8 oz medium cheddar cheese (shredded)
1 Roma tomato (diced)
1 Tbsp chives or green onion (finely chopped)

Steps:

  • In a large dry pot or deep skillet over med/high heat, brown sausage (10-12 min), breaking it apart with your spatula (the sausage releases enough oil to grease the pan). When browned, remove excess grease by pushing a paper towel around the pan with a spatula until fully saturated then discard.
  • Cut cream cheese into pieces and stir it into browned pork until melted and incorporated.
  • Add 2 cans un-drained Rotel tomatoes, 15 oz can drained corn, and 8 oz shredded cheddar (reserve some cheddar to garnish the top if desired). Cook over med heat, stirring occasionally just until bubbly and cheese is melted. Remove from heat, garnish with fresh tomatoes, reserved cheddar, and chopped chives. Serve with tortilla chips.

20 grape tomatoes, sliced in half and sprinkled with salt

Steps:

  • Preheat the oven to 350 degrees F.

This Sausage and Spinach Quiche makes a delicious, filling and easy meal for any mealtime and occasion. It's filled with sausage, spinach, Swiss cheese and a flavorful, silky smooth custard that's all baked into a flakey pie crust.

1 9" Pie Crust (pre-made refrigerated roll and bake)
1 lb Sausage (classic, maple, or mild)
1 1/4 cup Shredded Swiss Cheese (cheddar cheese works great too)
2 cups Spinach
6 large Eggs
1 cup Milk
1 cup Cream
1/2 tsp Salt
1/4 tsp Pepper
1/8 tsp Cayenne Pepper
1 pinch Nutmeg
1 tsp Dijon Mustard (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Roll out pie dough to about ¼" thick and press into a 9" pie plate. If using a premade pie crust, remove it from the refrigerator about an hour before you make your quiche so that it warms up to room temperature. Roll out the pie crust as directed on the packaging and arrange in a 9" pie plate.
  • Place in the freezer for a few minutes, just until it is no longer super soft, then pull out and line the inside with aluminum foil. Fill with pie weights or dried beans and bake in a preheated 350 degree oven for about 15 minutes. Remove from the oven, carefully remove the foil and set aside.
  • In a saute pan over medium-high heat, cook sliced sausage until golden brown, then drain on a paper towel. Add the sausage evenly over the bottom of the prepared pie crust.
  • Sprinkle half of the shredded cheese over the sausage, then add the spinach.
  • In a medium-sized mixing bowl, whisk together the eggs, cream, milk, salt, pepper, nutmeg, mustard, and cayenne. Mix until well combined, then pour over the sausage and spinach mixture. Top with remaining cheese.
  • Bake the quiche in a preheated 350 degree oven for about 30-40 minutes, or until the egg mixture is set in the middle. You can test by gently shaking the pan just a little to see if the middle of the quiche is still runny. If you still aren't sure, insert a toothpick or knife into the center and it should come out clean.
  • Once baked, remove from the oven and allow to cool for at least 5 minutes before slicing and serving. Enjoy!

This is my favorite, I make it at least weekly. Good flavorful sausage is key, I like the regular jimmy dean. This recipe is for two pies because I make two at once. They go fast, freeze well, and that means less dishes later.

2 deep dish pie shells
16 ounces jimmy dean sausage
8 eggs
3/4 cup half-and-half
8 ounces frozen spinach, boxed
2 cups fiesta shredded cheese
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook sausage till browned, breaking it up as you go, drain on paper towels and set aside.
  • Thaw spinach in microwave or if you are cooking fresh you will need almost double. I like the finely chopped that is in a box for 1.00.
  • Get out your pie crusts and line the bottoms with half the spinach, and sausage each.
  • In a larger bowl combine all of the cheese but a handful, the eggs, half and half, salt, and pepper.
  • Pour half of the mixture into each shell and sprinkle the remaining handful of cheese over both.
  • Bake at 350 about 40-45 minutes. You can do a toothpick test, try not to overbake, your eggs won't be as fluffy.
  • if your pie crusts are browning too fast you can cover them in foil just not the whole pie, you want a pretty light golden top and the air to make it rise.
  • Serve warm. You can make the pies the night before and bake in the morning or they do reheat well. If you are freezing let it cool completely then portion out and wrap each slice individually or wrap the whole thing and freeze.

One 9-inch deep-dish frozen pie crust
8 oz thick-cut bacon (about 6 slices), diced
½ cup chopped shallots, from 2 medium shallots
4 large eggs
1¼ cups heavy cream
¼ teaspoon salt
⅛ teaspoon cayenne pepper
Pinch ground nutmeg
4 oz Gruyère, finely shredded (about 1¼ cups)

Steps:

  • Blind bake the crust: Preheat the oven to 400°F and set a rack in the middle position. Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. (If there are any cracks in the crust, see note below on how to patch them up.) Prick the bottom and sides all over with a fork. Place the crust on a baking sheet to make it easy to move in and out of the oven. Bake on until lightly golden, 10 to 15 minutes. Keep an eye on it; if it puffs up while cooking, gently prick it with a fork so it will deflate. (If it cracks while baking, see note below for instructions on how to patch it up.) Set aside and reduce the oven temperature to 325°F.
  • In a medium nonstick sauté pan over medium heat, cook the bacon, stirring occasionally, until crisp, about 10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Pour off all but one tablespoon of fat from the pan. Add the shallots and cook over medium-low heat until soft and translucent, 3 to 4 minutes. Do not brown. Remove the pan from the heat and set aside.
  • In a medium bowl, whisk the eggs. Add the heavy cream, salt, cayenne pepper, and nutmeg; whisk until evenly combined.
  • Spread the shallots evenly over the bottom of the cooked crust. Top with half of the bacon, all of the Gruyère, and then the remaining bacon. Pour the egg/cream mixture over top.
  • Slide the quiche (still on the baking sheet) into the oven and bake at 325°F for 45 to 50 minutes, until the custard is set and lightly golden. Serve hot or warm.
  • Note: Don't panic if your crust has cracks -- you can easily fix it. Make a smooth paste by mixing 1 tablespoon of flour with 1 tablespoon of water. Use your fingers to patch up and fill any cracks, then proceed with the recipe. If the crust cracks while blind baking, patch it afterwards and place it back in the oven for a minute or so to set. It should be good as new.
  • Make-Ahead Instructions: This quiche can be fully prepared up to a day ahead of time and refrigerated. To reheat: Cover the quiche with aluminum foil and heat in a preheated 300°F oven for 35 to 45 minutes, or until hot in the center.
  • Freezer-Friendly Instructions: The cooked quiche can be frozen for up to 3 months. After baking and cooling the quiche, wrap it in a layer of plastic wrap and then a layer of aluminum foil. Remove the quiche from the freezer about 24 hours prior to eating. Remove the plastic wrap and reheat it, covered with foil, in a 300°F oven for 35 to 45 minutes, or until hot in the center.

6 ears sweet corn, kernels and scrapings removed separately
4 tablespoons butter

  • Put the beans in a saucepan, cover them with water, and simmer until tender, several minutes for frozen beans, about 25 minutes for fresh. Drain, reserving the cooking water. Add the corn kernels to the pan with the butter, 1/2 teaspoon salt, and enough of the cooking water to barely cover. Cook gently for 3 minutes, then stir in the scrapings. Turn the heat to low and cook, without stirring, until most of the liquid is cooked off, 5 to 10 minutes. Season with pepper, pour into a serving dish, and add the parsley and a dash of paprika.
