Millie my neighbor used to make these for us all the time. I loved the rich buttery taste and the cherry and almond flavor. Cooking time does not include chilling time.

Number Of Ingredients 6

1 cup butter
1 cup sugar
1 egg, beaten
2 cups flour
1 teaspoon almond extract
21 -24 maraschino cherries, halves

Steps:

  • Cream butter and sugar.
  • Add egg and mix well.
  • Stir in flour and almond extract.
  • Chill dough 1-2 hours.
  • Make balls the size of small walnuts.
  • Flatten balls on cookie sheet with the bottom of a glass dipped in flour.
  • Press a ½ of a cherry onto each cookie.
  • Bake at 350 for 15 minutes until edges are light brown.
  • Do not over bake.
  • You can sprinkle with powdered sugar if desired.

These Norwegian Butter Cookies (Serinakaker) are delicate and buttery, similar to shortbread but less crumbly, with melt-in-your-mouth almond and vanilla flavors. They are the PERFECT cookie, especially if you're looking for a new Christmas cookie recipe!

1 1/2 cups salted butter (softened (3 sticks))
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
4 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
3 eggs (divided)
1/4 cup almonds (sliced or finely chopped)

Steps:

  • Preheat your oven to 350 degrees F and line one or two baking sheets with parchment paper.
  • In a large bowl, mix together softened butter (1.5 cups), baking powder (1/2 teaspoon), kosher salt (1/2 teaspoon), and flour (4 cups) with an electric hand mixer until well blended and the texture resembles coarse sand.
  • Add the sugar (1.5 cups) and mix until well combined.
  • Add the vanilla extract (2 teaspoons) and almond extract (1/2 teaspoon) and two of the eggs, then mix until well combined.
  • Using a small cookie scoop, measure out equal portions of the dough and roll into balls. Place on baking sheet and, using your thumb, press on the center of each ball to create a small indentation (if you find that the dough is too sticky, keep a small bowl of water next to you to dip your thumb into every so often).
  • Beat remaining egg in a small bowl and brush the tops and sides of each indented cookie with the egg. Sprinkle with the almonds.
  • Bake for 16 minutes, or until cookies are only JUST beginning to brown.

Yield Makes about 12 dozen

Number Of Ingredients 6

2 large eggs
1 cup sugar
4 cups all-purpose flour
1 teaspoon baking powder
3 sticks salted butter, softened
1/2 cup sugar cubes, coarsely crushed, or pearl sugar

Steps:

  • Beat together 1 egg and sugar with an electric mixer until thick and pale. Sift in flour and baking powder and add butter. Beat on low speed until mixture forms a dough. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Preheat oven to 350°F.
  • Lightly beat remaining egg. Roll level teaspoons of dough into balls and arrange 1 inch apart on ungreased baking sheets. Press thumb into center of each ball to flatten, leaving a depression, and brush lightly with egg. Sprinkle crushed sugar in centers and bake in batches in middle of oven until golden, 12 to 18 minutes. Transfer to racks to cool completely.

Similar to Italian Pizzelles, these delicious cardamom-flavored cakes (or cookies) are prepared with a krumkake iron and shaped over a cone so that they can be filled with whipped cream and fruit.

1 cup granulated sugar
½ cup unsalted butter ((melted))
1 cup whole milk ((half and half, or cream))
1½ cups all-purpose white flour
1 tsp cardamom powder
1 tsp almond extract
¼ tsp salt
1 tsp oil ((for seasoning the iron))

Steps:

  • If using a krumkake iron (paid link), heat on the stove over low-medium heat for 3 to 5 minutes. The iron is ready when a drop of water immediately sizzles when added to the hot iron. If using a Pizzelle Iron (paid link), turn it on and wait for the light indicating it's ready to use. Brush either one with oil to season them prior to use.
