NORWEGIAN COOKIES
Millie my neighbor used to make these for us all the time. I loved the rich buttery taste and the cherry and almond flavor. Cooking time does not include chilling time.

NORWEGIAN BUTTER COOKIES (SERINAKAKER)
These Norwegian Butter Cookies (Serinakaker) are delicate and buttery, similar to shortbread but less crumbly, with melt-in-your-mouth almond and vanilla flavors. They are the PERFECT cookie, especially if you're looking for a new Christmas cookie recipe!

Steps:
- Preheat your oven to 350 degrees F and line one or two baking sheets with parchment paper.
- In a large bowl, mix together softened butter (1.5 cups), baking powder (1/2 teaspoon), kosher salt (1/2 teaspoon), and flour (4 cups) with an electric hand mixer until well blended and the texture resembles coarse sand.
- Add the sugar (1.5 cups) and mix until well combined.
- Add the vanilla extract (2 teaspoons) and almond extract (1/2 teaspoon) and two of the eggs, then mix until well combined.
- Using a small cookie scoop, measure out equal portions of the dough and roll into balls. Place on baking sheet and, using your thumb, press on the center of each ball to create a small indentation (if you find that the dough is too sticky, keep a small bowl of water next to you to dip your thumb into every so often).
- Beat remaining egg in a small bowl and brush the tops and sides of each indented cookie with the egg. Sprinkle with the almonds.
- Bake for 16 minutes, or until cookies are only JUST beginning to brown.

Steps:
- Beat together 1 egg and sugar with an electric mixer until thick and pale. Sift in flour and baking powder and add butter. Beat on low speed until mixture forms a dough. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
- Preheat oven to 350°F.
- Lightly beat remaining egg. Roll level teaspoons of dough into balls and arrange 1 inch apart on ungreased baking sheets. Press thumb into center of each ball to flatten, leaving a depression, and brush lightly with egg. Sprinkle crushed sugar in centers and bake in batches in middle of oven until golden, 12 to 18 minutes. Transfer to racks to cool completely.
KRUMKAKER NORWEGIAN CHRISTMAS COOKIES
Similar to Italian Pizzelles, these delicious cardamom-flavored cakes (or cookies) are prepared with a krumkake iron and shaped over a cone so that they can be filled with whipped cream and fruit.

Steps:
- If using a krumkake iron (paid link), heat on the stove over low-medium heat for 3 to 5 minutes. The iron is ready when a drop of water immediately sizzles when added to the hot iron. If using a Pizzelle Iron (paid link), turn it on and wait for the light indicating it's ready to use. Brush either one with oil to season them prior to use.

- Julekake (Norwegian Christmas Bread) Unlike traditional British fruitcake, which is often made weeks in advance of Christmas Eve, this Norwegian holiday bread can be made in a single afternoon.
- Fattigman. Fattigman are fried quickly in hot oil, instead of baked on an elegant cookie iron as are other cookies from the region. Make no mistake, these diamond-shaped cookies are deliciously sweet and full of special ingredients, including superfine sugar, heavy cream, and optional cognac or brandy.
- Norwegian Krumkake Cookies. Norwegian krumkake (pronounced kroom-ka-ka) are fragile, sugary, rolled waffle cookies traditionally enjoyed in Norway at holiday time.
- Kransekake (Norwegian Ring Cake) Ring cake, or kransekaka, is the signature, splendid, tall flourless cake of Norway enjoyed at all types of celebrations, from weddings to baby showers.
- Skolebrød (Norwegian School Bread Dessert) Norwegian school bread is more like a filled donut than a bread, which explains its popularity as a lunchbox treat for Scandinavian children.
- Berlinerkranser (Norwegian Butter Cookies) Despite the fact that the name "Berlinerkranser" means Berlin wreaths, these heavenly butter cookies are a beloved Norwegian treat that are ideal for holiday gifting.
- Scandinavian Almond Cake. Bake this popular Scandinavian-American cake for potluck parties, holiday dessert swaps, or when hosting friends for brunch. It is easy to bake in a loaf pan or cake pan, and uses common baking ingredients, with almond extract adding a wonderful fragrance.
- Scandinavian Rosette Cookies. You don't have to be Norwegian to enjoy these delicate, crispy, fried-in-oil, vanilla-scented rosette cookies. All you need are a few basic baking ingredients, a rosette iron, and the patience to learn how to use it to make this traditional favorite holiday treat.
- Scandinavian Sweet Soup. Sweet soups made with dried fruits, tapioca, and warming spices are popular across Scandinavia, where they are served warm in winter, and chilled in summer.
