200 g sour cream
1/2 lemon juice
1/2 teaspoon nutmeg
7 g chives (sliced)

Steps:

  • Put the sour cream in a pot; add lemon juice, nutmeg and chive. Cook on gentle fire until cream becomes liquid, like milk. That means the sauce is done.
  • Pour the sauce over already arranged fish and potato and serve. Don't panic, the sauce must become hard again. The best is with fresh water fish.
  • You can make the same sauce using same amounts of fresh dill. The procedure is the same.

1/2 cup good mayonnaise, such as Hellmann's
1/2 cup sour cream
1/2 cup plain yogurt, such as Stonyfield
2 tablespoons cream cheese, at room temperature
1/2 cup chopped scallions, white and green parts (4 scallions)
1/2 cup minced fresh dill
1/4 cup minced fresh flat-leaf parsley
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
1 cup seeded, grated hothouse cucumber

Steps:

  • Place the mayonnaise, sour cream, yogurt, cream cheese, scallions, dill, parsley, lemon zest, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Puree for a few seconds, until well mixed. Add the cucumber and puree for another few seconds, until combined. Pour into a container and refrigerate for a few hours to allow the flavors to develop.

This sauce goes well with all kind of chicken meals except stews. So, BBQ chicken, fried chicken, cooked chicken, you name it. The sauce is also acceptable with cooked beef or lamb, or trout's. Use fresh dill!

200 g dill
40 g butter
10 g onions
1 tablespoon lemon juice
1 egg yolk
100 g sour cream
1 cup water
5 g salt
3 g pepper

Steps:

  • Sauté finely minced onion on butter and when transparent add flour. Sauté for 2 more minutes and add water and make creamy sauce.
  • Mince dill and add into sauce. Season it with salt and pepper. Add some water and cook 10 to 15 minutes.
  • Mix yolk, lemon juice and sour cream. Before serving cool sauce to 70°C and add sour cream mixture. Stir and serve.

You can also call this Croatian hamburger. You can eat this as a plain meal with salad, you can it with beans or leek or kale stews, you can eat it cold or cook as a meat balls. You can also mix it with pork meat and your cutlet will be softer. I will submit my recipe which is not obligatory - you can change it.

500 g beef (grounded)
200 g pork (grounded)
200 g leeks (or one large leek)
1 egg
2 garlic cloves
150 g bread
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon Worcestershire sauce
150 g breadcrumbs

Steps:

  • Put grounded beef and pork into large glass bowl. Soak bread in cold water and after few minutes squeeze bread with hand to extract water; than put bread into meat.
  • Add egg, salt, pepper, Worcestershire sauce.
  • Cut leek into very thin pieces up to green parts (before it become full green) and add into meat.
  • Very finely mince garlic and put into meat. Now, mix really well to make a smooth meat pile.
  • Make cutlets with a tablespoon (approx. 100 to 150 g each) and shape them with hands, put into breadcrumbs to cover the cutlet. Now they are ready to fry. You can also make smaller meat balls and do what ever you want to do.

NORTH CROATIAN SIMPLE TOMATO SAUCE



North Croatian Simple Tomato Sauce image

This is continental version of Dalmatian tomato salsa. It is very easy to make and goes excellent with cooked beef and mashed potato. Before Mediterranean food become popular this was my familys standard tomato sauce. If you make this recipe with fresh tomato, first you have to make strained juice; that means: soak tomato briefly in hot water, remove seeds, shave the inside part of tomato skin and blend it. On the other hand, it is easier to buy the can or package of pure tomato strained juice (whatever you have).

500 g tomatoes (strained juice or package 500 g)
1 tablespoon oil (or lard)
2 teaspoons flour
2 g celery leaves (or one sprig green celery)
2 tablespoons brown sugar
6 g salt
1/2 cup water

Steps:

  • Heat oil and add flour. Fry until slight brown (or 1-2 minutes). Add gently some water and make creamy liquid.
  • Add all tomato juice, salt, sugar and celery sprig. Add the rest of the water.
  • It is cooked after 20 minutes, but you can cook more if you want (do not burn it). Remove celery sprig before serving.

Croatian Dill Soup image

This soup is in my family more than 100 years. I've found the recipe in my grandmothers writings (it is in old handwriting and very hard to read), a booklet full with old recipes. I'm cooking this soup today, so I decided to share it with Zaar.

100 g fresh dill
20 g butter
20 g onions
5 g flour
1 egg yolk
1 egg white (only white part) (optional)
100 g sour cream
1 tablespoon lemon juice
1 liter water
salt
pepper
150 g bread (or two-there slices)
20 g butter

Steps:

  • Sauté finely minced onion on 20 g butter until soft. Add flour and sauté it 2 minutes. Add water and make creamy liquid. Add the rest of the water making sure you don't have small flour clods.
  • Mince the whole dill (including stem - but very finely) and put it into soup. Season with salt and pepper and cook it for about 30-40 minutes.
  • In the meantime cut bread slices into small cubes and fry it on butter until dry and crispy. Put aside.
  • When the soup is ready to serve add (in hot soup) sour cream mixed with yolk and lemon.
  • If you want really full soup you can add egg-white mixing hard the moment you put it inches.
  • Serve with bread cubes (put them in soup).

CROATIAN BBQ BURGER (PLJESKAVICA)

This is similar meal like chevapchici but instead of sticks you have a whole burger. There is also little difference in ingredients.

1000 g ground beef (grounded, preferably young beef)
2 garlic cloves
150 g onions
3 teaspoons salt
2 teaspoons pepper
1 teaspoon paprika (red, dry, grounded, hot)
1 cup water (carbonated)
100 g goat cheese (goat, hard)

Steps:

  • Take twice grounded beef. Very finely mince garlic and onion and put them into meat. Season it with salt, pepper and paprika. Add water. Mix well with hand and let it stay in refrigerator for 2-3 hours.
  • Make burgers and put them on fire. They must be rose inside, do not overdo it.
  • Serve with fresh salted onion and bread.
  • Grate goat cheese and sprinkle over warm pljeskavica and serve.
