- Preheat oven to 400°.
- Mix first 5 ingredients in a large bowl. Add the butter; rub with fingers until mix resembles coarse meal.
- Make well in center; add sour cream and vanilla to the well.
- With a fork, stir sour cream mix into dry until dough forms.
- Turn out onto lightly floured surface; sprinkle the apricots over.
- Knead dough until apricots are incorporated; flatten dough into 8-inch round and then cut into 8 wedges.
- Transfer to baking sheet. Brush with the egg and sprinkle with a bit of brown sugar.
- Bake until golden, about 20 minutes.

- Preheat oven to 425degrees. Use an ungreased baking sheet. Combine the flour, baking powder, salt, and sugar in a bowl, stirring with a fork to mix well. Add the dried fruit. Still using a fork, stir in the cream and mix until the dough holds together in a rough mass (the dough will be quite sticky). Lightly flour a board and transfer the dough to it. Knead the dough 8 or 9 times. Pat into a circle about 10 inches round. For the glaze, spread the butter over the top and side of the circle of dough and sprinkle sugar on top. Cut circle into 12 wedges and place each piece on the baking sheet, allowing 1-inch between pieces. Bake for 15 minutes, or until golden brown.;\

- Preheat oven to 350F.
- Line a baking sheet with parchment paper. Set aside.
- In a large bowl, combine flour, sugar, baking powder and salt whisking well.
- Using a pastry blender, cut butter into flour mixture until mixture resembles coarse crumbs.
- Add the chopped apricots and stir to combine.
- In a liquid measuring cup combine sour cream, 6 tablespoons heavy cream and the vanilla extract.
- Add it to the flour mixture, stirring until mixture comes together.
- Note: If the dough seems dry, add more cream, 1 tablespoon at a time until dough is uniformly moist.
- Working gently, bring mixture together with hands intil dough forms.
- Turn out dough onto a lightly floured surface. Knead gently 4-5 times.
- Using a rolling pin, roll dough to a 1/2 inch thickness. Using a 2 inch round cutter cut 20 scones from dough.
- Place scones 2 inches apart on prepared baking sheet. Brush tops of scones with the left over heavy cream and bake in the oven at 350F/180C for about 18 minutes or until a wooden pick inserted in the centers comes out clean.
- Serve warm.

- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

JEN'S EASY APRICOT, CREAM & GINGER SCONES
I made this up based on 'Lemonade Scones" and what I had in the fridge :) You can also make these lighter in calories by using diet gingerale and light or lowfat cream. I am sure there are numerous combinations of drinks & fruits. Have fun trying them out :) If you are using metric measures the cream & gingerale are 150mls of each. The first time I made these I only had 100mls cream so I added in 2 Tablespoons of sour cream and this worked as well.

- Pre heat oven to 400'F/200'C.
- In a bowl mix together all the dry ingredients and stir through the apricot pieces.
- Add in the cream and gingerale and mix lightly with a knife until mixture holds together in a ball.
- Tip out onto a floured board and gently pat out into a rectangle and cut into 9 scones or cut out scones with a 6cm diam cutter.
- Place close together on a baking tray lined with baking paper and bake in hot oven for 15 minutes.
- Tip out onto a clean teatowel and wrap up to keep warm.
- These are nice just buttered but even better spread with some apricot jam and topped with a dollop of whipped cream for a special treat.

- Preheat oven to 400; seasoned baking stone or greased cookie sheet; set aside.
- In a bowl, combine dry ingredients; cut in butter.
- In a small bowl, combine eggs; reserve ONE TABLESPOON for glazing; set aside.
- In another bowl, combine sour cream, milk and eggs; add apricots; stir into crumb mixture until dough clings together.
- Turn onto lightly floured table, knead 12-15 times; divide down into two portions.
- Pat one portion into a 6-7 inch disk on the baking sheet.
- Combine filling ingredients, sprinkle over first disk in pan to within 1/2-inch of edge.
- Pat remaining down into matching disk, place over filling, softly pinch edges, but don't worry if they're not sealed.
- Glaze top with reserved 1 T. egg, sprinkle with additional sugar (brown or white); cut into wedges, leaving in place on pan.
- Bake for 15-20 minutes (golden brown).
- Cool slightly, break apart carefully; serve warm with honey and apricot jam.
- VARIATION: try dried cranberries for a tangy eye-opening breakfast treat!

- Heat oven to 400 degrees; lightly grease cookie sheet; in large bowl, combine flour, sugar, baking powder, orange peel and salt; mix well.
- Add apricots and white baking chips; mix well.
- Add whipping cream all at once; stir just until dry ingredients are moistened.
- On lightly floured surface, knead dough 6 or 7 times until smooth; divide dough in half.
- Pat each half into a 6 inch round; cut each round into four wedges.
- PLace two inches apart on the cookie sheet.
- Bake at 400 for 10 to 13 minutes or until light golden brown; cool five minutes.
- Meanwhile, in small bowl, blend powdered sugar and enough orange juice for desired drizzling consistency.
- Drizzle icing over warm scones; serve warm.
