CHEF JOHN'S CLOTTED CREAM

Chef John's Clotted Cream image

While the name doesn't exactly make the mouth water, the flavor and texture of clotted cream are the stuff of legends. The long, slow cooking sort of toasts the cream, which imparts a sweet, nuttiness that I don't think I've tasted in any other preparation. This is just delicious spread on warm biscuits or scones and topped with homemade jam.

Steps:

  • Set a coffee filter basket, lined with a filter, in a strainer, over a bowl. Pour the cream almost to the top of the filter. Refrigerate for 2 hours. The whey will sink to the bottom passing through the filter leaving a ring of clotted cream. Scrape this down with a rubber spatula and repeat every couple of hours until the mass reaches the consistency of soft cream cheese.

CHEF JOHN'S SCONES

Chef John's Scones image

This recipe is very slightly adapted from one by someone called Friendlyfood on Allrecipes, who claims it was adapted from a version made at the Savoy Hotel in London. I have to say, I am very impressed. It was light, tender, moist and very delicious.

Provided by Chef John

Categories     Bread     Quick Bread Recipes     Scone Recipes

Time 35m

Yield 8

Number Of Ingredients 10

1 ¾ cups all-purpose flour
¼ cup white sugar
4 teaspoons baking powder
⅛ teaspoon salt
5 tablespoons unsalted butter
½ cup milk
¼ cup sour cream
⅓ cup dried currants
1 egg, lightly beaten
1 tablespoon milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk flour, white sugar, baking powder, and salt in a mixing bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs.
  • Stir together 1/2 cup milk, sour cream, and currants in a small bowl; stir into flour mixture with a fork until just moistened and holding together.
  • Transfer dough to a lightly floured surface and pat into rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, flatten back into a rectangle, and repeat. Cut into eight pieces and place each scone on a silicone baking mat.
  • Whisk egg and 1 tablespoon milk together in a small bowl; brush mixture on top of each scone.
  • Bake scones in the preheated oven until risen and golden brown, about 15 minutes. Remove and transfer to cooling rack.

MAKE CLOTTED CREAM IN A SLOW COOKER - FEARLESS FRESH
The key to making clotted cream is maintaining a good surface-area to cream ratio. In other words, you want to have as much of the heavy cream exposed to the air as possible, to maximize the amount of clotted cream you get in the end. So, if you have a huge slow cooker, great! If you have a smaller slow cooker (like 3 quarts or less), you might consider halving the …

WHAT IS ENGLISH CLOTTED CREAM? - THESPRUCEEATS.COM
Clotted cream is a traditional British topping that originated in England. It is a smooth, yellow cream that is very thick and indulgent. It is believed that clotted cream originated in Devon as well as Cornwall in the southwestern corner of England, but it is also successfully made in Yorkshire (which does not sit very well with those from the Southwest).

This was super yummy. My husband was skeptical but we're all fans now. I only did half a recipe to try it and used cream bought from a regular grocery store. I think I'll use the good stuff from the local creamery next time and see if I get a little more clotted cream out of it since it'll have more fat solids. Now to learn how to make scones. :)
