Steps:
- Cook the noodle with boiling water by following directions on the package, rinse under cold water, drain well and set aside.
- Whisk soybean paste, sweet bean paste, cooking wine, water and sugar in a container in advance and set aside for later use.
- Heat a pan under medium-low heat, add oil and stir in mushroom, onion, ginger and green onion, stir fry for 3-4 minutes until the onion turns translucent.
- Add the ground beef into the pan, stir fry for 1-2 minutes until the beef has turned color.
- Pour in the sauce, stir and mix well with the ingredients and simmer for about 2-3 minutes with low heat.
- Pour the meat sauce onto the noodle and top with cucumber to serve.
- Mix well to enjoy!

- Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
- About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.
SZECHUAN NOODLES WITH SPICY BEEF SAUCE

- Brown ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
- Pour sesame oil in pan and heat till hot. Saute onion and next 4 ingredients hot sesame oil until tender.
- Combine cornstarch and beef broth, whisking until smooth.
- Stir broth mixture, hoisin sauce, and soy sauce into onion mixture.
- Bring to a boil, stirring constantly; boil, stirring constantly, 1 minute.
- Stir in ground beef.
- Toss with hot cooked pasta, and sprinkle with sliced green onions.
- Yield: 4 servings.
BEEF AND NOODLES
I was looking for a recipe for beef and noodles that didn't use any sort of condensed soup. I found one at Better Homes & Gardens and made a few changes to come up with this. I use Homemade Noodles (recipe 27344) for the noodles, and they absorb a lot of liquid so this is pretty thick - if you like it thinner, adjust accordingly (I've not tried this with purchased noodles but they may make a difference as well).

- Add oil to a large dutch oven over medium heat.
- Sprinkle the flour over the meat and toss to evenly coat cubes with flour.
- Brown half of the coated meat in hot oil. Remove from pan. Brown the remaining meat and remove. Set aside.
- In the same pan, brown the onion and garlic, adding more oil, if necessary. Drain off any excess fat. Return all meat to the pot.
- Stir in the broth, wine, marjoram, and pepper. Bring to a boil; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until meat is tender.
- When meat is tender, remove with a slotted spoon and set aside to cool briefly.
- In the meantime, stir noodles into broth. Bring to a boil; reduce heat to low.
- Shred beef and add back to pot with noodles.
- Cook, uncovered, for about 30 minutes or until noodles are tender and mixture is thick. Add additional broth or water if necessary (if noodles are absorbing it all).

Steps:
- Heat oil in a large skillet or wok.
- Add garlic, ginger root, and pepper flakes and saute about 5 seconds.
- Add onions and stir fry until translucent, about 5 minutes.
- Stir in ground meat, breaking it up with a spoon or spatula.
- Cook until meat has lost pink color.
- Combine 1/2 cup chicken broth, hoisin sauce, soy sauce and sherry.
- Stir into meat mixture.
- Cover, reduce heat and simmer 10 minutes, stirring once or twice.
- Meanwhile, dissolve the cornstarch in the remaining 1/2 cup of chicken broth.
- Slowly stir into meat mixture and cook and stir until sauce thickens.
- In a big bowl, toss warm cooked vermicelli with sesame oil.
- Pour sauce over top and toss gently to combine.
- Sprinkle with sliced green onions.

- Stir black bean sauce and sugar and rice wine together in a small bowl.
- Prepare scallions on a small plate, ready to add during stir-frying.
- Have sesame oil measured and ready.
- Put on a gallon of water to boil.
- Heat dry wok or large skillet over high heat. When hot, add peanut oil. Swirl in wok until hot but not smoking.
- If using garlic, add to oil and stir until fragrant.
- Add ground meat to wok, and stir-fry until well-separated and cooked but not browned.
- Add bean sauce and stir well.
- Add scallions and sesame oil, stir well.
- Remove wok from heat.
- Combine vinegar and chili oil in a serving bowl, to be sprinkled on individual servings at the table.
- Clean and chop cilantro to be used as a garnish.
- Once your water has reached a rolling boil, add spaghetti and cook until tender.
- Drain spaghetti, pour into bowl, top with meat sauce, stir together, and serve immediately.

- Toss pork, 2 teaspoons water and baking soda in bowl until thoroughly combined. Let stand for 5 minutes. Whisk 1/2 cup water, miso paste, soy sauce, hoisin and molasses together in second bowl.
- Pulse white and light green scallion parts, garlic and ginger in food processor until coarsely chopped, 5 to 10 pulses, scraping down sides of bowl as needed. Add mushrooms and pulse until mixture is finely chopped, 5 to 10 pulses.
- Heat oil and pork mixture in large saucepan over medium heat for 1 minute, breaking up meat with wooden spoon. Add mushroom mixture and cook, stirring frequently, until mixture is dry and just begins to stick to saucepan, 5 to 7 minutes. Add miso mixture to saucepan and bring to simmer. Cook, stirring occasionally, until mixture thickens, 8 to 10 minutes. Cover and keep warm while noodles cook.
- Bring 4 quarts water to boil in large pot. Add noodles and cook, stirring often, until almost tender (center should still be firm with slightly opaque dot), 3 to 5 minutes. Drain noodles and transfer to wide, shallow serving bowl.
- Ladle sauce over center of noodles and sprinkle with cucumber, sprouts and dark green scallion parts. Toss well and serve.

- 1. Saute onions in small amount of olive oil until light brown. If using fresh garlic, dice up two cloves and put in with onions.
- 2. Once onions are soft and light brown, mix in meat, and sprinkle with Mrs Dash salt/pepper. Saute until brown.
- 3. Add in can of crushed tomatoes and can of tomato sauce and stir.
- 4. Simmer for 45 minutes at least. Taste and add more seasoning if needed.
- 5. Boil water for pasta and cook pasta for 8 to 10 minutes. We like our pasta al dente (not too soft). Taste as you go.
- 6.When ready - strain - make sure all the water is gone. Put a little sauce on pasta so it does not stick. Keep the rest of the sauce in the bowl so you can each have as much as you want. A salad is a great side dish -- add grated parmesan if you like.

- Heat a wok and add half of the oil. Add half of the pork and cook quickly over high heat, stirring and chopping down to break up any lumps. Cook only until the pork loses its raw look.
- Add two-thirds cup of the brown bean sauce and half of the chili paste with garlic. Cook, stirring rapidly, about one or two minutes. Add half of the sugar and half of the Sherry, and cook one minute longer over high heat.
- Turn the mixture into a four-quart casserole.
- Rinse and wipe out the wok, and repeat the procedure using the remaining half of the corn oil, pork, brown bean sauce, chili paste with garlic, sugar and wine. Add the second batch to the first. Let stand to room temperature. Refrigerate for up to three days (or the mixture may be frozen in small batches up to a month or longer).
- When ready to serve, bring to room temperature. Reheat the sauce gently. Twenty minutes before serving, bring a large kettle of water to the boil. Add the noodles and cook four minutes.
- Drain the noodles and cut them into shreds of manageable length. Pour the noodles into a heated, heatproof serving dish.
- Add the scallions to the simmering sauce and stir. Pour the sauce over the hot noodles and toss to blend. Serve with the three garnishes, letting each guest help him or herself.
