SPINACH, FETA AND POTATO AU GRATIN RECIPE

SPINACH, FETA AND POTATO AU GRATIN RECIPE image

This Weight Watchers Au Gratin recipe makes a wonderful idea for a breakfast casserole, or as a dinner side dish. It's versatile, incredibly delicious. Soft, buttery potatoes sandwiched with spinach and feta, and baked in a milk and egg sauce gives this tasty casserole a lot of bang for its buck.

Provided by Wendy

Time 1h20m

Number Of Ingredients 10

5 medium sized potatoes (scrubbed and sliced about 1/8" thick (I used Yukon Gold Potatoes))
1 16 oz bag frozen spinach (thawed and drained)
1 cup fat free feta cheese
1/2 cup liquid egg substitute
2 tbsp light butter (I used Brummel & Brown)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika (plus more to taste)
2 cups fat free milk
Salt and pepper to taste

Steps:

  • Preheat oven to 375. Spray a 9x13 baking/casserole dish with non-fat cooking spray.
  • Squeeze out as much water from the spinach as possible.
  • Layer half the potato slices in the baking dish (it's ok to overlap them a bit). Season with salt, pepper, and paprika. Top with the spinach and feta cheese. Then cover with the remaining slices of potatoes. Season these potato slices with salt, pepper, and paprika.
  • In a medium sized mixing bowl, whisk together egg substitute, milk, garlic powder, onion powder, salt, pepper and the 1 tsp paprika.
  • Pour mixture over the potatoes. Dollop butter evenly over the top (I just placed little pieces of the butter all over the top, and then spread it a bit with a spoon).
  • Cover with foil and bake for 30 minutes, or until potatoes are tender. Remove foil and bake for another 30-40 minutes, or until top of au gratin is golden.
  • Remove from oven and let cool about 10-15 minutes before serving. Cut into 6 equally sized portions.

HAM AND POTATOES AU GRATIN

Ham and Potatoes au Gratin image

Easy creamy ham and and potatoes au gratin is a great way to use leftover ham with tender sliced potatoes and a cheesy béchamel sauce. The best comfort food.

Provided by Sam Hu | Ahead of Thyme

Categories     Side Dish

Time 1h30m

Number Of Ingredients 14

3 lbs. russet potatoes, peeled and sliced into 1/8-inch thick slices (approximately 4 large potatoes)
2 cups cooked ham, cut into 1/2-inch cubes
1 cup frozen peas
1 cup onion, finely chopped
1 cup sharp white cheddar cheese, shredded
1 teaspoon fresh parsley, finely chopped (for garnish)
2 tablespoons butter
1 tablespoon garlic, minced
2 tablespoons all purpose flour
1 cup milk
1/2 cup chicken broth (or 1 tablespoon chicken bouillon powder + 1/2 cup water)
1 teaspoon Italian seasoning
1 cup sharp white cheddar cheese, shredded
salt and pepper (to taste)

Steps:

  • Preheat oven to 400 F.
  • Place half of the sliced potatoes in a single layer at the bottom of a 9x13-inch casserole pan and top with cubed ham, peas and onion. Place the remaining half of the potatoes over the mixture. Set aside.
  • Prepare the sauce by melting butter in a medium saucepan over over medium high heat. Add garlic and sauté until fragrant, about 1 minute. Whisk in flour to form a thick paste similar to the consistency of cake frosting, and cook for 1 minute.
  • Stir in milk and chicken broth until sauce is smooth and uniform. Bring the sauce to a simmer over medium heat and let it simmer until thickened to desired consistency, about 5 minutes. Stir in Italian seasoning and cheddar cheese. Add salt and pepper, to taste (I did not add any salt and pepper as the ham I used was already very salty).
  • Pour the cream sauce over the potatoes and spread evenly.
  • Cover the casserole dish with aluminum foil and transfer to the oven. Bake for 50 minutes.
  • Remove from oven and sprinkle the remaining cup of cheddar cheese evenly over the casserole. Return the baking dish to the oven and bake uncovered for another 20-25 minutes until the melted cheese turns golden brown on top.
  • Let the casserole cool for 15 minutes before serving. Garnish with parsley and serve.

HAM AND POTATOES AU GRATIN RECIPE

Ham and Potatoes Au Gratin Recipe image

Easy Au Gratin Potatoes and Ham Recipe is a classic entrée, full of cheesy potato goodness and ham. Not only is it comfort food at its finest, but it also solves the age-old question of what to do with leftover holiday ham.

Provided by Sharon Rigsby

Categories     Main Dish

Time 1h25m

Number Of Ingredients 11

3 tablespoons unsalted butter
¼ yellow onion (finely diced)
3 tablespoons all-purpose flour
2 cups milk
½ teaspoon kosher salt
¼ teaspoon pepper
1 pound potatoes (washed and thinly sliced (about 3 medium baking potatoes))
1 ½ cups cooked cubed ham (about ½ of a pound)
1 cup grated sharp cheddar cheese
1 cup grated Monterey Jack cheese
chopped fresh parsley for garnish (optional )

Steps:

  • Melt the butter in a large skillet over medium-low heat. Add the onions and cook for about 10 minutes until they are soft and translucent.
  • When the onions are done, sprinkle flour over them and whisk to combine. Continue cooking the onion and flour mixture until the flour is golden brown, about two to three minutes.
  • Slowly add the milk and continue whisking to prevent lumps. Cook until the sauce has thickened, which usually only takes a few minutes. Add salt and pepper, mix well and remove from the heat.
  • Spray a medium-size casserole dish with non-stick cooking spray or butter the dish. Add half of the sliced potatoes, then half of the cubed ham, and about half of both kinds of grated cheese.
  • Pour on half of the sauce. Repeat the next layer with the remaining potatoes and ham, pour the remaining sauce over the top and sprinkle with the remaining cheeses.
  • Preheat the oven to 350 degrees F.
  • Cover the baking dish tightly with aluminum foil or a cover and bake at 350 degrees F. for 40-60 minutes. How long it takes depends on the thickness of the potato slices.
  • Remove the cover and test to see if your potatoes are done by piercing them with a fork. The fork should slide through easily. If not done, continue cooking for another 10 minutes or so. Once the potatoes are fork-tender, remove the cover and bake for another 20-30 minutes, or until the sauce is bubbling and the cheese is golden brown.
  • Remove from the oven and garnish with chopped parsley before serving.

Potato, Spinach, and Feta Gratin image

Number Of Ingredients 7

2 pounds russet (baking) potatoes (about 3 large)
2 pounds fresh spinach, washed well and the coarse stems discarded
1/2 pound Feta cheese
1 1/2 cups half-and-half
3 large eggs
1 1/2 teaspoons salt
3/4 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F. Oil an 8-inch-square (2-quart) baking dish lightly, line it with wax paper, and oil the paper lightly. Peel the potatoes and food processor fitted with a 2-mm. slicing disk slice the potatoes crosswise. (Alternatively, the potatoes may be sliced thin with a hand-held slicing device.) In a kettle of salted boiling water boil the potatoes for 7 minutes, or until they are just tender, drain them in a colander, and rinse them briefly under cold water. In the kettle cook the spinach in the water clinging to the leaves, covered, over high heat, stirring occasionally, for 2 minutes, or until it is wilted, drain it, and refresh it under cold water. Squeeze the water from the spinach by wringing it by handfuls in a kitchen towel, transfer it to the food processor fitted with the metal blade, and add the Feta. In a bowl whisk together well the half-and-half, the eggs, the salt, and the pepper, add half the custard to the spinach mixture, and pulse the motor of the processor until the mixture is coarse.
  • Transfer the potatoes to the prepared baking dish and spread them in an evenly layer. Pour the remaining custard over the potatoes, shaking the dish slightly to distribute the custard evenly, and top the potatoes with the spinach mixture, smoothing the top. bake the gratin in the middle of the oven for 45 to 50 minutes, or until it is set in the middle, and let cool on a rack for 30 minutes. Run a knife around the side of the dish, invert the gratin onto a flameproof plate, and peel off the wax paper. Broil the gratin under a preheated broiler about 4 inches from the heat for 10 to 15 minutes, or until top is golden brown, and serve it cut into squares.

  • In a large pot, cover the potatoes with cold water. Season with salt. Bring to a boil and let simmer for 20 minutes or until tender. Drain and return to the pot. With a potato masher, crush the potatoes with the butter. Gradually add the milk and purée until smooth. Season with salt and pepper. Keep warm.
  • Spread the mashed potatoes over the spinach. With a spatula or the back of a spoon, smooth the potatoes into a wave pattern. Top with the cheese slices. At this stage, the dish may be refrigerated.

  • Peel the onion and cut it in half or quarters to grate it. A food processor with the grater attachment is easiest. Alternately, you can slice the onion super thinly. Add the grated onion to a strainer over a bowl and set aside.
  • In a large sauce pot, combine the half and half with the garlic, thyme, nutmeg and allspice. Bring to a boil and then immediately reduce to a low simmer. Simmer until the the mixture has reduced by about 1/4, about 25 minutes. Remove from the stove, strain, and add the salt and pepper. Let it cool until it's warm, or to room temperature.
  • Peel the potatoes and slice them as thinly as possible, adding them to the half and half mixture as you go. Make sure the slices aren't stuck together and that all of them become well coated with the mixture. (I use the slicer attachment on my food processor for this.) Let the potato slices soak for about 30 minutes.

  • In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat until it shimmers. Add the shrimp and cook, stirring occasionally, until just opaque, 3 to 5 minutes. Transfer to a large bowl and set aside.
  • Lower the heat to medium, drizzle in another tablespoon of the oil if the skillet is dry, and add the spinach. Cook, stirring often, until it gives off no more liquid, 8 to 10 minutes. Transfer to a colander to cool.
  • Drizzle the remaining tablespoon of oil into the skillet and add the onion. Cook, stirring occasionally, until golden, 7 to 10 minutes. Add the garlic and presunto and cook for 2 minutes more. Pour in the port and let it burble until almost evaporated, 1 to 2 minutes. Scrape the mixture into the bowl containing the shrimp.

  • Preheat oven to 400 degrees, lightly coat a 2-qt casserole dish with cooking spray and set aside. Place a large skillet over medium heat then melt butter. Add onions and cook 3–4 minutes until translucent. Add garlic then cook 1 additional minute.
  • Add flour then cook, stirring constantly for 1 additional minute. Add milk, salt and nutmeg then stir until combined. Bring liquid to a bubble then reduce heat to low and simmer for 10 minutes, stirring frequently to prevent scorching.
  • Squeeze as much liquid as possible from the spinach—the successful outcome of the dish depends on removing as much water as possible! Add spinach and Parmesan cheese to sauce and stir until completely combined. Taste and season with additional salt and pepper if necessary.
