Number Of Ingredients 10

1 small coconut or 1 cup thawed frozen grated coconut
2 tablespoons brown mustard seeds
7 small fresh Thai chiles (2 to 3 inches; preferably green), 6 slit lengthwise on one side(not all the way through)
3 tablespoons water
1 lb large shrimp in shell (21 to 25 per pound), peeled, leaving tail and first segment of shell intact, and deveined
1 teaspoon ground turmeric
1 teaspoon salt
3 tablespoons vegetable oil
Special Equipment
an electric coffee/spice grinder; a mortar and pestle (optional); a wok

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • If using whole coconut, pierce 2 softest eyes of coconut with a small screwdriver or a metal skewer, then drain and discard liquid. Bake whole coconut 15 minutes. Break shell with a hammer and remove flesh, levering it out carefully with screwdriver or point of a strong knife. Finely shred enough coconut to measure 1 cup using the 1/8-inch-wide holes of a box grater.
  • Finely grind mustard seeds with a pinch of salt in grinder. Finely chop whole chile (without slit) and mash in mortar with pestle along with ground mustard seeds and a pinch of salt until chile is finely ground. Add 1 tablespoon water. Mix to a paste. (Alternatively, very finely chop chile, then stir with mustard seeds and water to form a paste.)
  • Toss shrimp with turmeric and salt.
  • Heat oil in wok over moderately high heat until hot but not smoking. Sauté shrimp, stirring, until it just turns pink, 2 to 3 minutes. Add grated coconut, mustard paste, remaining 6 chiles, and remaining 2 tablespoons water. Sauté, stirring, until water is absorbed and shrimp are well coated, about 2 minutes more.

24 prawns or 24 large shrimp
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon sugar
2 eggs
2 teaspoons milk
2 -4 dashes hot sauce
2 cups shredded coconut
2/3 cup peanut oil

Steps:

  • Shell and devein and butterfly prawns-leave the tail if possible.
  • In a bowl beat together the eggs, milk and hot sauce.
  • Combine flour, salt and sugar on a separate plate and put the coconut in a bowl.
  • Dip each prawn in: flour mixture first, egg mixture second, coconut third.
  • At this point they can be placed on waxed paper and refrigerated until ready to cook.
  • OR Heat oil in a large skillet over medium high heat, and fry to golden on each side.
  • Serve with warmed jalapeno pepper jelly or cocktail sauce.

oil (for frying)
1 1/2 lbs large shrimp
3/4 cup self-rising flour (OR 3/4 cups all-purpose flour, 3/4 tsp baking powder and 1/4 tsp salt)
2 -4 tablespoons club soda
1/2 cup flaked coconut
1/4 cup all-purpose flour
1/3 cup Dijon mustard
1/3 cup sour cream
1/3 cup honey
1 teaspoon cream-style prepared horseradish
1/8 teaspoon ground cinnamon or 1/8 teaspoon nutmeg (optional)

Steps:

  • SAUCE: mix together all ingredients and set aside.
  • SHRIMP: Peel and devein shrimp, leaving the tails on.
  • Rinse and drain.
  • In Bowl 1, place 1/4 cup all-purpose flour.
  • In Bowl 2, mix 1/2 cup self-rising flour with club soda to form a batter.
  • In Bowl 3, place flaked coconut.
  • Holding each shrimp by the tail, dip in flour to cover, then in batter, and lastly in coconut.
  • Place each shrimp on waxed paper, repeating process until all shrimp are battered and covered in coconut.
  • At this point you can cover and refrigerate for several hours if you like, making it a quick-cook dinner later that day or the next day.
  • In hot oil, deep fry several shrimp for about 1-2 minutes until coconut is lightly golden brown.
  • Drain on paper towels.
  • Repeat process until all shrimp are cooked.
  • Serve with Honey Mustard Sauce.
  • Note: Spicy cocktail (tomato-based) sauce is not good with these shrimp.

2 teaspoons vegetable oil
1 teaspoon garlic clove, finely-minced
1 teaspoon ginger, finely-minced
1/2 teaspoon lemongrass, finely-minced
1 teaspoon shallot, finely-minced
1 cup coconut milk
2 Kaffir lime leaves, available at Asian grocery stores
1/3 cup water, or light stock
1 1/2 teaspoons fish sauce, to taste
1 teaspoon palm sugar, coarsely-chopped, available at Asian grocery stores
Thai dried chile, or to taste
3 head-on prawns, large, peeled and sliced in half lengthwise
1/3 cup Asian long beans, cut into 1-inch pieces, or substitute green beans
1 tablespoon soft tofu, diced
2 tablespoons pan-roasted mushrooms, such as shiitake or shimeji, sauteed in a very hot pan with a little olive oil and salt
Lime, to taste
Cilantro leaves, to garnish
Thai chili oil, to garnish

Steps:

  • In a small saucepan set over medium-high heat, heat the vegetable oil until shimmering. Add the garlic, ginger, lemongrass and shallot. Saute until fragrant, about one minute. Add the coconut milk and bring to a simmer. Add the kaffir lime leaves and water, and return the soup to a simmer. Add fish sauce to taste.
  • To the saucepan, add the palm sugar, and let the soup gently simmer for 3 to 4 minutes. Add the dried chili and stir to combine. Simmer the soup for about 10 minutes, to blend the flavors.
  • Remove the heads from the prawns and squeeze the roe into the soup. Discard the heads. Peel and slice the shrimp and add to the soup. Simmer gently for a minute, until the shrimp are barely cooked through. Add the long or green beans, tofu, and mushrooms to the soup. Remove the soup from the heat and finish with a squeeze of lime juice. Pour the soup into a deep bowl, removing the kaffir lime leaves. Garnish with cilantro and chili oil. Serve immediately.

Golden and crunchy these are so tasty they are irresistible, serve as a starter, appetizer or light summer lunch.

20 large shell on fresh prawns
2 tbsps plain flour
1 egg
6 tbsps desiccated coconut
6 tbsps fresh breadcrumbs
8 tbsps bottlegreen lime and coconut cordial
1 large red chilli
2 tbsps rice wine vinegar
Oil for frying

Steps:

  • Remove the shell from the prawns keeping the tail on, prepare 3 bowls, one with the flour in, one with the beaten egg and one with the coconut and breadcrumbs mixed together. Dip the prawns first in the flour, then the beaten egg and finally toss in the coconut mix until evenly coated.
  • To make the dipping sauce, place the cordial, chilli and rice wine vinegar in a small saucepan, bring to the boil, simmer until reduced a little and syrupy.
  • Heat the oil in a pan, cook the prawns until golden for approx. 5 mins, turning half way if shallow frying, drain on kitchen paper.
  • Serve the prawns with the lime and coconut dipping sauce

1 large onion , quartered
0.5 thumb-sized piece ginger (no need to peel)
4 garlic cloves
4 tomatoes , 2 halved, 2 cut into wedges
2 tsp rapeseed oil
½ cinnamon stick
½ tsp black mustard seeds
3 cloves
seeds from 4 cardamom pods , crushed
½ tsp ground turmeric
1 tsp ground coriander
10 fresh or dried curry leaves
½ fish stock cube
15g creamed coconut , chopped
1 red chilli , halved, deseeded and sliced or diced
150g pack raw, shelled king prawns
140g skinless cod , cut in half, then halve again to make chunky strips

Steps:

  • Put the onion, ginger, garlic and the halved tomatoes in a food processor with 50ml water and blitz to a smooth purée. You may need to scrape down the inside of the food processor a couple of times. Heat the oil in a large, deep non-stick frying pan, pour in the purée, cover with a lid and cook for 10 mins.
  • Add the 1/2 cinnamon stick, mustard seeds, cloves, cardamom, turmeric, coriander and curry leaves, and cook for a few mins, stirring. Pour in 300ml water with the stock cube, coconut and chilli, then leave to simmer for 10 mins more. Taste to ensure that the onion is fully cooked - if not, it is worth cooking for another 5 mins.
  • Finally, add the tomato wedges, prawns and fish, gently stir into the sauce, then cover and cook for 5 mins. Serve with the Spicy cauliflower pilau (see Goes well with).

Allow to cool. Then transfer to a bowl. Stir through the cucumber, shallots and chillies. Make a batter by mixing the flour with 1½ cups water. Dip each prawn into the batter and then coat in the coconut. Set aside on a tray until ready to cook. Fill a saucepan or wok to about 1/3 capacity with the vegetable oil.

Cover prawns thoroughly in flour. Working 1 prawn at a time dip in egg mix and then coat in breadcrumb mix. Place prawns on a lined baking tray.
