1 1/2 ounces margarine
1/4 cup raisins
1/4 cherries
1/4 teaspoon salt
2 1/2 cups flour
1 package dry yeast

CREAMED SWEETBREADS

Creamed SweetBreads image

The worst part of this recipe is cleaning the sweetbreads. Sweet breads are a gland located in the neck of cattle not what you may otherwise have heard!!!! They have a wonderful delicate flavor and once tried you'll want them again. They are very difficult to find now but if you ask your butcher they should be able to bring them in for you. I also love them breaded and fried. I put six servings but that is only a taste each

RIS DE VEAU PANEES A L'ANGLAISE (BREADED SWEETBREADS)

Ris de Veau Panees a l'Anglaise (Breaded sweetbreads) image

Provided by Pierre Franey

Categories     appetizer

Time 50m

Yield 4 servings

Number Of Ingredients 14

2 to 4 pairs sweetbreads, about 1 1/2 pounds total weight
Salt to taste
4 peppercorns
1/4 cup coarsely chopped onion
1 bay leaf
1/2 teaspoon thyme
2 sprigs fresh parsley
1 egg
3 tablespoons water
Freshly ground pepper to taste
1 tablespoon plus 1/3 cup vegetable, corn or peanut oil
1/3 cup flour
2 cups fine fresh bread crumbs
6 tablespoons butter

Steps:

  • Put sweetbreads in a saucepan and add cold water to cover. Add salt to taste, peppercorns, onion, bay leaf, thyme and parsley sprigs. Bring to the boil and let simmer 10 minutes. Drain thoroughly. Run under cold water to chill.
  • Split the sweetbreads in half lengthwise. Put the halves on a rack and cover with another rack. Place a weight on top and let stand until ready to cook, 15 minutes or longer.
  • Put the egg in a flat dish and add the water, salt, pepper and one tablespoon of oil. Beat to blend.
  • Put the flour and bread crumbs in separate flat dishes.
  • Dip the sweetbread pieces first in flour, then in egg, then in bread crumbs. The sweetbreads should be thoroughly coated, but shake off excess. Pat the pieces all over to make the crumbs adhere.
  • Heat the remaining oil in a skillet large enough to hold the pieces in one layer. Cook on one side until golden. Turn and cook until golden on the other side. Cook, turning occasionally, about 10 minutes.
  • Heat the butter in a large, heavy skillet and cook, swirling it around, until foamy and starting to turn hazelnut brown. Add the sweetbreads and heat. Serve the sweetbreads with the butter poured over.

BREADED SWEETBREADS

Breaded Sweetbreads image

Categories     project, appetizer

Time 1h45m

Yield Four servings

Number Of Ingredients 10

1 pair sweetbreads, about 1 pound
1 egg
2 tablespoons water
2 teaspoons, plus 4 tablespoons, corn, peanut or vegetable oil
Salt to taste, if desired
Freshly ground pepper to taste
1/3 cup flour
2 cups fine fresh bread crumbs
4 tablespoons butter, optional
1 tablespoon finely chopped parsley

Steps:

  • Put the sweetbreads in a mixing bowl and add cold water to cover. Refrigerate overnight or for several hours. Put the sweetbreads in a saucepan and add cold water to cover. Bring to the boil and let simmer, stirring often, about five minutes. Drain and run under cold water until they are thoroughly chilled. Leave the sweetbreads whole, but cut or pull off any unsightly membranes, connecting tissues, etc. Place the sweetbreads on a rack and cover with a cloth. Cover with weights and let stand for one hour.
  • Place the sweetbreads on a flat surface. Hold a sharp knife parallel to the surface and slice through the sweetbreads. This will produce up to 10 or 12 flat pieces.
  • Put the egg in a flat dish and add the water, two teaspoons of oil, salt and pepper. Beat thoroughly.
  • Put the flour in another flat dish. Put the bread crumbs in a third dish.
  • Sprinkle the sweetbread slices with salt and pepper.
  • Coat the slices individually in flour and shake off excess. Dip the slices in the egg mixture to coat well. Dredge the slices, one at a time, in the bread crumbs and pat to make the crumbs adhere.
  • Heat two tablespoons of oil in each of two skillets so that the sweetbread slices can be cooked in one layer. When the oil is hot, add the sweetbread slices and cook until they are golden brown on one side, about six minutes. Turn the slices and cook until golden brown on the second side, about four to five minutes.
  • Transfer the slices to a warm platter. If desired, wipe out one of the skillets and add the butter. Cook until it is foamy and starts to turn hazelnut brown. Pour this over the slices and serve sprinkled with finely chopped parsley.

SWEETBREADS

Sweetbreads image

Sweetbread are a gland in cattle, and this is the way my husband and I prepare them. We like them in tiny pieces, but others make them in larger portions. This method of cooking and the taste remind me a little of chicken hearts, only better. One pound of sweetbreads makes plenty for 2 people using our method.

SOUTHERN-FRIED SWEETBREADS

Southern-Fried Sweetbreads image

Categories     Kid-Friendly     Dinner     Meat     Cornmeal     Deep-Fry     Candy Thermometer     Buttermilk     Gourmet     Sugar Conscious     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Small Plates

Yield Makes 4 (main course) or 6 (first course)

Number Of Ingredients 9

2 pounds veal sweetbreads, rinsed
1 cup well-shaken buttermilk
About 12 cups vegetable oil (96 fluid ounces)
1 cup all-purpose flour
1/2 cup cornmeal
2 teaspoons paprika (not hot)
1/2 teaspoon cayenne
Equipment: a deep-fat thermometer
Accompaniment: green goddess sauce

Steps:

  • Soak sweetbreads in a large bowl of ice water in the refrigerator, changing water occasionally (2 or 3 times), at least 8 hours.
  • Drain sweetbreads and transfer to a 4-quart heavy saucepan. Cover with cold water by 1 inch and add 1 teaspoon salt. Bring to a boil, then reduce heat and simmer, uncovered, until sweetbreads plump and feel slightly firmer to the touch, about 3 minutes. Drain in a colander and transfer to an ice bath to stop cooking. Cut away any fat and pull away as much membrane and connective tissue as possible with a small paring knife, then separate with your fingers into roughly 2-inch pieces.
  • Whisk buttermilk with 1/2 teaspoon salt in a bowl. Add sweetbreads and soak, chilled, 1 hour.
  • About 10 minutes before sweetbreads are finished soaking in buttermilk, start heating 2 inches oil to 350°F in a 5-quart wide heavy pot over medium heat. Whisk together flour, cornmeal, paprika, cayenne, and 1/2 tsp each of salt and pepper in a shallow dish.
  • Put a metal cooling rack in a 4-sided sheet pan and preheat oven to 400°F.
  • Drain sweetbreads well, discarding buttermilk. Dredge in flour mixture, shaking off any excess, then fry in 3 batches until golden and cooked through (cut one open to test), 3 to 3 1/2 minutes, depending on size. Transfer with a slotted spoon to paper towels to drain, then season lightly with salt. Keep warm on rack in oven. (Return oil to 350deg; between batches.) Serve fried sweetbreads immediately.

  • Soak the sweetbreads overnight or for at least 6 hours, changing the water occasionally, until they are white. Remove any skin, and pull out any sinews from the outside. Cut into ½-inch slices, about 2 slices per person, and set aside.
  • For the corn, remove the kernels from the ears, which should yield about 3 cups. Sauté the kernels in the butter for about 2 minutes over high heat, just enough for the starch to set, making the corn very sweet. Add salt, pepper, and a sprinkling of minced chives, mix, and set aside. You can always rewarm the corn in a regular oven or a microwave oven at serving time.
  • For the dressing, combine in a glass bowl the tomato, garlic, onion, capers, good olive oil, lemon juice, salt, pepper, and parsley. Set aside.
  • When ready to sauté your sweetbreads, salt and pepper the slices. Melt 2 tablespoons of the butter in a microwave oven, and dip the sweetbread slices into about 2 cups of fine dried bread crumbs, making sure that they are well coated on both sides. (I dry leftover bread, preferably from a country-style loaf or baguette, in a 180°F oven, and then process it in a food processor to a make a fine meal.)
