This banana bar recipe is soft and moist with browned butter icing. Think of the best banana bread made into easy to eat bars.

Number Of Ingredients 14

1 ½ cups sugar
1 cup sour cream
½ cup unsalted butter, softened
2 large eggs
1 ¾ cups 3 or 4 ripe bananas, mashed
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts ((optional))
½ cup unsalted butter
3 3/4 cups powdered sugar
1 teaspoon vanilla
about 3 tablespoons milk or half and half

Steps:

  • Heat oven to 375 degrees. Grease and flour 10x15 jelly roll pan or line with parchment paper (for thicker bars use a 9x13 pan and bake for 10 minutes longer than directed). In a large mixing bowl, beat first four wet ingredients with an electric mixer or stand mixture with the paddle attachment until creamy.until creamy. Blend in the mashed bananas and vanilla for one minute. Add dry ingredients and blend flour mixture for one minute. Stir in nuts and pour batter into the pan. Bake 20 to 25 minutes until golden brown. Cool slighty until warm but not hot and frost with Browned Butter Frosting (recipe below).
  • For the Browned Butter Frosting Recipe: Heat butter in saucepan over medium heat past the melting point until it is boiling and a delicate brown. Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze and thinner than frosting. You can add milk to get it to the correct consistency. Using a spatula smooth over the top of the banana bars immediately for the best results. The frosting will be easier to spread once it's on the warm bread.

You didn't hear it from us, but Banana Bars with cream cheese frosting will fly off the plate, so make sure to save yourself a few before serving them.

1 cup granulated sugar
1 cup mashed very ripe bananas (2 medium)
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 package (3 ounces) cream cheese, softened
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
  • Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
  • Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

Frosting
1/2 cup butter
8 ounces cream cheese
4 cups powdered sugar
1 teaspoon vanilla

Steps:

  • 1. Heat oven to 375. Grease and flour 9 x 13 pan. Beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts. 2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown. 3. For frosting, beat butter, cream cheese, and powdered sugar together. Add vanilla. 4. Using a spatula, spread the frosting over the cooled bars.

JUDY'S BUMBLE BARS

My mom tried a Bumble bar when in Idaho and recreated the recipe. This is her basic recipe which is great. I have tried dried fruit with the basic recipe for a wonderful taste. Note: Since I got this recipe I have not been able to find evaporated cane syrup. My mom's solution was to dissolve pure cane sugar and cook it down a little to make it thicker. I just use corn syrup.

1 1/2 cups sesame seeds
3/4 cup almond meal
1/2 cup flax seed (golden flax is preferred)
1/2 cup macadamia nuts (finely chopped)
1/4 cup cashews (finely chopped)
1/2 cup brown rice syrup (or corn syrup)
2 tablespoons evaporated cane syrup (or corn syrup)
2 teaspoons cinnamon
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • Mix all ingredients together in a bowl and press into a well oiled 9 X 13 pan (I use olive oil spray).
  • Bake for 20 minutes at 300 degrees.
  • Cut in to bars while hot (it's so much easier than trying to cut when cool!).
