VEGAN ROASTED CAULIFLOWER SOUP



Vegan Roasted Cauliflower Soup image

This vegan cauliflower soup combines roasted cauliflower with white beans, cashews (optional), and garlic for a rich, creamy, cozy, comforting dairy-free soup the entire family will love!

1 1/2 to 2 pounds cauliflower
1 tbsp oil
2 cloves garlic (minced)
3 cups vegetable broth
1 cup plant-based milk
1/3 cup cashews (soaked (see recipe notes))
1 (15 oz) can cannellini beans (drained and rinsed)
1 tsp onion powder
1/2 tsp paprika
1/2-1 tsp sea salt ((or less/more to taste))
1/2 tsp ground oregano ((or thyme))
Black pepper (to taste)
1 tbsp fresh lemon juice (or lime juice)
Fresh parsley (for garnish)

Steps:

  • You can watch the video in the post for visual instructions.Soak cashews for a couple of hours or boil them for 15 minutes in water until they are soft.
  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • Cut the cauliflower into florets, spread them on a baking tray (optionally lined with parchment paper), and drizzle with 1 tablespoon oil and a little salt. Toss with your hands and roast the cauliflower in the oven for about 30-35 minutes until nicely browned and tender. Set aside a few cauliflower florets for garnish.
  • In a blender, combine all ingredients (add the broth & milk in batches if necessary) and blend until completely smooth.
  • Taste the soup and adjust seasonings. If you prefer a spicy soup, add some red pepper flakes!
  • If the cauliflower soup is too thick (it does get thicker as it sits), add a little bit more broth or plant-based milk and blend again.
  • Transfer it to a pot and heat it until it's warm. Also, taste it and add more spices, if desired.
  • Garnish with fresh parsley and the reserved cauliflower florets. Enjoy!

1 head cauliflower, cut into small pieces
3 garlic cloves, crushed
1 yellow onion, chopped
1 yukon gold potato, peeled and 1/4 diced
2 tablespoons olive oil
salt and pepper
3 cups vegetable broth
1 1/2 cups non-dairy milk substitute
2 tablespoons fresh chives, for garnish
3/4 raw cashews
1 1/2 tablespoons curry powder
1/4 teaspoon salt
1/2 cup non-dairy milk substitute, warmed

Steps:

  • Preheat oven to 425.
  • In large oiled baken pan, combine cauliflower, garlic, onion and potato.
  • Drizzle with olive oil and season with salt and pepper to taste.
  • Roast about 30 minutes or until tender and golden, stirring once about 1/2 way through.
  • Transfer roasted veggies to a large pot, add broth and bring to a boil.
  • Reduce heat to low and simmer for 10 minutes.
  • Transfer soup to blender or food processor in batches and blend til smooth. Or use a handheld blender in the pot.
  • Return soup to pot if necessary and stir in non-dairy milk. Season with salt and pepper to taste.
  • Simmer 10 minutes longer.
  • To serve: ladle into bowls, spoon a swirl of Curried Cashew Creme into the center of each bowl, then sprinkle with chives. Serve Hot.

  • In a blender, process cashews to a fine powder. Add curry powder, salt and non-dairy milk and blend until smooth.

6 carrots, peeled and chopped
½ head cauliflower, trimmed and chopped
1 ½ teaspoons olive oil
2 cloves garlic, chopped
1 teaspoon salt
1 teaspoon ground black pepper
3 cups vegetable broth, or more if needed
1 tablespoon curry powder
1 cup coconut milk
½ lime, juiced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place carrots and cauliflower in a casserole dish; toss with olive oil, garlic, salt, and black pepper.
  • Roast carrot mixture in the preheated oven for 20 minutes; stir and roast until vegetables are tender and slightly charred, another 25 minutes. Remove from oven and stir.
  • Bring vegetable broth to a boil in a large pot. Stir in curry powder and add the roasted vegetables. Cover and boil soup until vegetables are soft, 8 to 10 minutes. Remove from heat.
  • Blend the soup with a potato masher or an immersion blender until smooth. Return pot to burner on medium heat. Stir coconut milk and lime juice into soup; simmer until heated through, 5 to 10 minutes.

1 head cauliflower, cut into florets
2 tablespoons vegetable oil
1 teaspoon salt
1 tablespoon butter, cut into small pieces
1 large yellow onion, diced
1 teaspoon chopped garlic
1 teaspoon curry powder
1 teaspoon cayenne pepper
1 teaspoon ground turmeric
1 quart chicken stock
1 cup heavy whipping cream
salt and ground black pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Toss cauliflower florets with vegetable oil and 1 teaspoon salt in a bowl; spread onto a baking sheet.
  • Roast cauliflower in preheated oven until browned, about 25 minutes.
  • Melt butter in a saucepan over medium high heat. Saute onions in hot butter until soft, about 5 minutes. Stir garlic into the onion and continue to cook until fragrant, about 2 minutes more; season with curry powder, cayenne pepper, and ground turmeric. Cook the seasoned onion mixture, stirring continually, for 5 minutes more.
  • Stir roasted cauliflower with the onion mixture. Pour stock over the cauliflower mixture. Place a cover on the saucepan and bring the stock to a boil. Immediately remove the cover, reduce heat to low, and cook at a simmer until the liquid reduces slightly, about 10 minutes.
  • Puree mixture in the saucepan with an immersion blender until mostly smooth. Stir cream into the soup; season with salt and pepper. Ladle soup into bowls and garnish with parsley.

1 tablespoon olive oil
1 cup onion, diced
6 cups water
2 teaspoons salt
1/2 cup vegan chicken seasoning (I use Mckay's vegan chicken seasoning)
1 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon dried parsley
1 cup celery, diced
2 cups potatoes, diced
2/3 cup carrot, shredded
1 cup raw cashews
4 cups water
1 1/2 cups cauliflower, fresh and chopped
1 cup peas (frozen or fresh)

Steps:

  • In a large 4-quart pot, saute onions in olive oil until clear.
  • Pour in 6 cups of water, add seasonings and bring to a boil.
  • Add celery, potatoes and carrots, and simmer over low heat until cooked.
  • Place cashews and 2 cups water in a blender and blend until creamy and smooth.
  • Add blended mixture to soup stock and bring to a boil, stirring consantly. Reduce heat.
  • Add fresh cauliflower and peas 5 minutes before serving.
