- In 2-quart saucepan, stir together brown sugar and 1/3 cup whipping cream. Cook over medium heat 2 minutes, stirring constantly, until bubbly. Stir in vanilla and apple cider. Cook 10 minutes, stirring often, until thoroughly heated.
- Serve cider in mugs. Top with whipped cream, caramel topping and/or cinnamon.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
- In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Stir in the rolled oats. Finally, stir in dried apple and caramel bits.
- Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

- Heat 1/4 cup cream and 1/4 cup brown sugar in a saucepan over medium heat until mixture starts to boil. Raise heat to medium-high and stir in apple cider and water. Cook until mixture starts to simmer, about 4 minutes.
- Beat 1/2 cup cream and 1 tablespoon brown sugar together in a bowl until soft peaks form. Lift your beater or whisk straight up: the whipping cream will form soft mounds rather than a sharp peak.
- Pour cider into mugs and top with caramel whipped cream.

HOT CARAMEL APPLE CIDER
One morning when it was really cold and raining out, I was doing my Crossing Guard job at the corner I "work" at. A few yards from the corner is a small Espresso/coffee hut. After I got done and was getting ready to leave the corner, one of the girls who works at the espresso hut came up to me and asked me if I wanted either a hot chocolate or a Hot Caramel Apple Cider. I opted for the Hot Caramel Apple Cider. I was so cold and wet that I drank it hot without letting it cool off at all!! It was so good and it immediately started to warm me up. I could taste the caramel in it. A couple of days later when I got one on my own I asked what was in it and the girl who gave me my first one, told me. I think I have the right amounts of ingredients. You can add more caramel sauce and/or vanilla to suit your taste. This recipe can easily be multiplied to serve more people. I am sure you could use apple juice if you don't have apple cider on hand.

- First, bring the cream and brown sugar to a boil in a medium saucepan over medium heat. Stir in the cider and the water and raise the heat to medium high, heating just until the cider begins to steam, about 4 minutes.
- Divide among 4 mugs, top each one with 2 tablespoons of caramel whipped cream (recipe follows) and serve immediately.
- Caramel Whipped Cream: In a small chilled bowl, whip the heavy cream with the brown sugar until soft peaks form.

My friend Kaela sent them to work with her husband. Her husband and my husband work together and John thought they were so good he saved one for me and brought it home for me to try. These Caramel Apple Cider Cookies are full of caramel apple flavor with a surprise of caramel in the middle. The texture of the cookies is to die for. Almost good enough to make me give up my clean linen carpet powder. I like mine heated up in the microwave for about 5 seconds to make sure the caramel is nice and gooey. I think they would be great with a warm cup of hot cocoa. Kaela's food blog has a new location so make sure to check her out at 1 (7.4 oz) box Alpine Spiced Apple Cider Instant Original Drink Mix (10 packets - found next to hot chocolate mix) Preheat oven to 350°. Line cookie sheets with parchment paper (you need this so that the caramel doesn't stick to the bottom of your cookie sheet). In a small bowl whisk together flour, baking soda, baking powder and cinnamon. With an electric mixer, cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix well. Gradually add flour mixture to butter/egg mixture. Mix until just combined. Shape the dough into a ball, and place on parchment covered cookie sheets about 3 inches apart. Makes around 2-3 dozen cookies. Eat at room temperature or slightly warmed in the microwave. I love sweet things, but these are really really sweet [1 c of sugar, 10 apple cider packets, and caramel] so I would suggest cutting down on the sugar somewhere in there. Tried these today and the flavor was really good, but we had a problem with the caramel leaking out the bottom while it was baking and the cookies were a tad too soft and crumbly. Would adding a little more flour make the cookies chewier and denser? Oh no. You could try adding more flour. Did you let them sit on the pan after baking to cool for a while? That's key.
