WHITE CHRISTMAS FUDGE
Steps:
- Preheat oven to 350 degrees. Arrange your sliced almonds on a baking sheet and bake for 5-8 minutes, or until lightly brown, set aside. Line a 9x9 inch square baking pan with aluminum foil and grease the bottom and the sides with the 1 teaspoon of butter, set aside.
- In a large saucepan, combine powdered sugar, milk, and the ¼ cup butter. Over medium heat while stirring continuously, bring to a boil. Let boil for 5 minutes without stirring. Reduce heat to low then stir in the white chocolate until melted and smooth.
- Remove from the heat and stir in the almond extract. Stir in the almonds, cherries and the cranberries. Quickly spread into the prepared pan. Refrigerate for 2 to 3 hours or until set.
- Lift out of the pan using the foil, remove foil. Cut into 1-inch squares and enjoy!

- Lightly spray the bottom of a 9" x 9" baking pan. Cut a piece of parchment paper into a 9" x 18" rectangle and line the pan, making sure that the paper sticks to the bottom and the edges overhang. (You'll use the excess paper to pull the fudge out of the pan.) Place the condensed milk, butter, and salt into a medium-size saucepan. Cook over medium-low heat until the butter is melted and the mixture is hot. Do not boil. Remove the saucepan from the heat, add the chocolate and vanilla and stir until the chocolate has melted completely. Pour the mixture into the prepared baking pan and quickly insert a bamboo skewer or toothpick into the red gel food coloring jar and dot the fudge about 12-14 times. Repeat the process with the green food coloring. (You'll need to dip the bamboo skewers or toothpicks at least 2 times each into the gel colorings to have enough color in the fudge.) As quickly as possible, with a clean toothpick, swirl the fudge until most of the color has blended and a pretty pattern has formed. Press a piece of plastic wrap against the surface to prevent a skin from forming. Let it cool completely for at least 12 hours, or overnight.
CHRISTMAS FUDGE
A fantastic fudge recipe. It is easier to make than the cooked varieties that require a candy thermometer, but it sets up better than some of the other recipes I've tried that use marshmallows or marshmallow cream. The best of both worlds!! I rich, dense fudge that's fairly simple to prepare. NOTE: I prefer to use dark chocolate chips for a richer, fudgier taste. See the bottom of the instructions for variations.

- Combine butter, evaporated milk, sugar and salt in medium, heavy saucepan.
- Bring to a boil over medium heat, stirring constantly.
- Boil for 4-5 minutes, stirring constantly.
- Remove from heat. Stir in marshmallows, chocolate chips, nuts and vanilla.
- Stir vigorously for 1 minute or until marshmallows are melted.
- Pour into foil-lined 8-inch square baking pan.
- Sprinkle with additional nuts if desired.
- Chill until firm.
- Variations: Milk Chocolate Fudge: Substitute 2 cups milk chocolate chips for the semi-sweet chocolate chips.
- Butterscotch Fudge: Substitute 2 cups butterscotch chips for the semi-sweet chocolate chips.
- Mint-Chocolate Fudge: Substitute 1 1/2 cups mint-chocolate chips for the semi-sweet chocolate chips.

- Mix sugar and milk in a 3 quart saucepan over medium heat, add butter and stirring constantly, bring to a boil. Without stirring, boil for 5 minutes.
- Over low heat, add chocolate and almond extract. Stir, then whisk until chocolate melts and mixture is smooth.
- Stir in dried cherries and toasted almonds.
- Pour mixture into pan. Refrigerate 2 hours until firm.
- Invert pan, peel off foil and cut in 1 inch squares.
- Tip: To toast almonds, spread in single layer on cookie sheet. Bake in 350 oven for 5-10 minutes, shaking pan occasionally until they begin to brown.

- 1. Chop cherries into small pieces Line & butter lightly or pam sprayed 8 X 8 pan with foil leaving enough over edges for handle to use later.
- 2. Melt Chips in Double boiler with the condensed milk,vanilla, & salt, on med low heat. Stir till melted and smooth.
- 3. Remove from heat; Stir in cherries, till evenly distributed.
- 4. pour into foil lines pan. spread evenly. Chill in refer 1 1/2 hrs. (you cannot over chill)

- Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.
- Continue to boil for 8 to 10 minutes over medium heat, or 234°F on a candy thermometer, stirring constantly to prevent scorching.

- Line a 22cm square non-stick tin with baking parchment. Put the caster sugar, double cream and liquid glucose in a pan. Slowly heat together, stirring continually, until the sugar melts and stops feeling grainy on the bottom of the pan. Turn up the heat and fast boil until a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can pick up on a teaspoon. By this time the bubbles in the mixture will look small and even.
- Turn off the heat and keep stirring for 5 mins or until the mix starts to thicken a little. Sprinkle in the white chocolate and swirl it through the mixture once using a spatula or the handle of a wooden spoon. Pour into a tin and leave the fudge overnight to set, then turn out and cut into squares. Will keep for up to 2 months in an airtight container - don't store in the fridge or the fudge will go soft.
