NO-BAKE COOKIES
These classic no-bake peanut butter and chocolate treats are also known as cow patties or preacher cookies. The story goes like this: If a housewife looked out the window and saw the preacher coming up the mountain on his horse, she could whip up a batch of these cookies in the amount of time it would take him to reach the front door. True or not, it's a good story - and a great cookie that's a cinch to put together. Combine all the ingredients in a pot over medium heat, then drop spoonfuls on a sheet pan and chill until set. Be sure to use quick-cooking oats, not instant, when making these cookies. The less-processed oats provide delightful texture and chewiness.

Steps:
- Line two large sheet pans with parchment paper. In a pot, combine the sugar, milk, butter, cocoa powder and salt. Bring ingredients to a rolling boil over medium heat, stirring constantly and being careful not to let the mixture burn, then cook until the cocoa powder and sugar have fully dissolved, about 1 minute. Remove from heat.
- Add the oats, peanut butter and vanilla. Stir until well combined, then let cool for about 15 minutes. Drop heaping tablespoonfuls onto the prepared sheet pans, gently pressing the center to flatten slightly. (You should have about 36 cookies.) Chill for a few hours until firm. Store in an airtight container at room temperature for up to 1 week.
LARGE BATCH SUGAR COOKIES
This recipe is very versatile, and can easily be broken down into several smaller parts to add different ingredients, as for Holiday cookies.

Steps:
- Mix together flour, salt, soda, and baking powder and set aside.
- Cream butter and sugar together until light and fluffy. Add eggs, one at a time, and beat well. Add vanilla, beat. Add milk, beat. Slowly add in the flour mixture, one to two cups at a time, and mix well.
- When all ingredients have been added in, cover with plastic wrap and refrigerate at least two hours or overnight before baking.
- Before baking, preheat the oven to 350.
- Scoop dough by teaspoon-fulls and roll into balls, then place onto cookie sheet. Use a kitchen glass dipped in white sugar to flatten the balls of dough. Bake in preheated oven aprox 12 min, or until golden.
- Let set on cookie sheet for aprox 3 min, until firm, then transfer to cooling rack, or wax paper, to cool completely.
- *These can also be sprinkled with Cinnamon before baking to make Snickerdoodle or Spice Cookies.

DELIGHTFUL PEANUT BUTTER COOKIES (BIG BATCH)
This is a very flexible cookie recipe you can add in all sorts of different things you can opt out creamy peanut butter and put in chunky peanut butter to add a few nuts. Or if you are looking to make it a real treat you can put in one bag of each Hershey's dark chocolate chips and Reese's peanut butter chips to make it almost like a Reese's peanut butter chocolate chip cookie. I make this recipe in a stand mixer.

- Cream together butter and peanut butter.
- Combine sugar eggs and vanilla.
- Wisk together flour and baking soda as separate Bowl.
- Add flour baking soda mixture to the other wet ingredients and mix well.
- Once cookie dough is prepared drop on cookie sheet using a small cookie scoop 2 inches apart as cookies will spread slightly.
- Bake at 350 for 10 to 11 minutes do not over bake.

Steps:
- Heat the oven to 190C/170C fan/gas 5. Cream the butter in a large bowl with a wooden spoon or in a stand mixer until it is soft. Add the sugar and keep beating until the mixture is light and fluffy. Sift in the flour and add the optional ingredients, if you're using them. Bring the mixture together with your hands in a figure-of-eight motion until it forms a dough. You can freeze the dough at this point.
- Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 10-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.
