CAN O' BEER CAKE

Can o' Beer Cake image

Believe it or not, the light bitterness of an American-style lager, like Budweiser, Coors or Miller High Life, transforms boxed cake mix into a sophisticated, yeasty dessert. For more flavor, it's topped with a beer syrup and glaze, and also cherries, cooked in even more beer. For a stronger beer flavor, use a dark ale, lager or IPA.

Provided by Food Network Kitchen

Categories     dessert

Time 2h15m

Yield 16 to 20 servings

Number Of Ingredients 9

Nonstick baking spray, for preparing the pan
One 15-ounce box yellow cake mix
1/3 cup vegetable oil
3 large eggs
One 12-ounce can lager, such as Budweiser or Sam Adams
1/4 cup granulated sugar
1 1/2 cups confectioners' sugar, sifted
One 12-ounce bag frozen cherries, thawed
Whipped cream for serving, optional

Steps:

  • Preheat the oven to 350 degrees F and spray a 10-cup plain Bundt pan with nonstick baking spray.
  • Whisk the cake mix, oil, eggs and 1 cup beer in a large bowl until smooth and well-combined, at least 30 seconds. Pour the batter into the prepared pan, smoothing the top with a rubber spatula, then bake until a cake tester inserted in the center of the cake comes out clean, 45 to 50 minutes.
  • Meanwhile, pour 2 tablespoons beer in a heatproof glass bowl and microwave until hot, about 30 seconds. Stir in 2 tablespoons granulated sugar until dissolved.
  • Let the cake cool in the pan for 5 minutes, then invert it onto a cooling rack. Using a toothpick, poke several holes over the cake, then drizzle the beer syrup evenly over the cake until it soaks in. Let the cake cool completely.
  • Stir the confectioners' sugar and 2 tablespoons beer together in a bowl until smooth. Add more beer, 1 teaspoon at a time, as needed to form a thick glaze. Drizzle the glaze evenly over the cake and let stand until set, about 10 minutes.
  • Meanwhile, combine the remaining beer and 2 tablespoons granulated sugar with the cherries in a medium saucepan. Bring to a simmer over medium heat and cook, stirring, until the cherries are warmed through and the liquid is reduced to a thick syrup, about 10 minutes. Transfer the cherries to a bowl and let cool completely.
  • Serve cake slices with the cherries on the side and a dollop of whipped cream, if using.

BEER CAKE WITH STREUSEL TOPPING

Beer Cake With Streusel Topping image

This is an old recipe from my Mum. The beer doesn't make it bitter, it gives it a nice yeasty taste and the streusel finishes it off nicely. There's always a little beer left over for the cook too!

Provided by dreamerPrue

Categories     Dessert

Time 1h5m

Yield 1 large cake, 12-18 serving(s)

Number Of Ingredients 10

4 cups self-rising flour
2 cups sugar
1/2 cup sultana
1/2 cup currants
3 eggs, lightly beaten
4 ounces butter, melted
2 cups beer
2 cups plain flour
1 cup sugar
6 ounces butter, melted

Steps:

  • Combine sifted flour, sugar and dried fruit.
  • Add beaten eggs and melted butter and mix it all together.
  • Gradually add the beer mixing it in as you go.
  • Pour cake batter into lined or greased cake tin 9"x13".
  • To make the streusel combine the three ingredients and mix well.
  • Using your fingers, crumble the streusel topping evenly over the cake batter. Gently press it in a little.
  • Cook in moderate oven (180c) for 45 minutes or until skewer comes out clean.

OLD FASHIONED ROOT BEER FLOAT CAKE

Old Fashioned Root Beer Float Cake image

Notes about the recipe: This was one of the cakes entered in the Whirlpool Unique Cake Contest I judged last year, kind of like the Pillsbury Bake Off. It was made by Jacquelyn Smola from Piedmont, OK and it was so fun and festive looking I really wanted to share it with you for a birthday party idea and make it for Gio this year. My absolute favorite drink is a root beer float so it was hard to not give this the first place prize. But there were other judges who kept me from tipping the scale right to root beer. A chocolate cake with toffee topping won first instead and the $10,000 prize, which she donated to Heifer International. And I got a new Whirlpool kitchen out of the deal! I've also had root beer cookies, brought to me by a baking fan in Rochester, New York.

Time 3h10m

Yield 10 to 12 servings

Number Of Ingredients 15

1 cup butter
2 cups granulated sugar
3 cups cake flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
3 1/2 teaspoons water
4 eggs
1 tablespoon root beer extract
1 teaspoon vanilla extract
1 cup milk
7 1/2 cups confectioners' sugar
2 1/2 cups butter
3 to 5 tablespoons heavy cream
3 teaspoons vanilla extract
Equipment: 12 elbow straws and colored streamers

Steps:

  • Make the Cake: Preheat oven to 350 degrees F. Grease and flour 2 (9-inch) cake pans and line the bottoms with parchment paper.
  • In a large mixing bowl, cream the butter; then add the sugar and continue mixing until light and fluffy.
  • Meanwhile, sift together the cake flour, baking powder, and salt.
  • With the mixer on low speed, gradually add the water and eggs to the butter mixture until blended. Mix in the root beer extract and vanilla. Alternately add the flour mixture and milk to form a smooth batter.
  • Pour the batter into the prepared pans and bake until just set, about 30 to 40 minutes. Let cool in pans for 5 minutes, and then invert onto cooling racks to cool completely before frosting.
  • Make the Frosting: In a standing mixer fitted with the whisk attachment, combine the confectioners' sugar and butter. Mix on low speed until well blended; then increase speed to medium and beat for another 3 minutes. Add the cream and vanilla and continue to beat on medium speed for 1 minute more, adding more cream if needed to reach spreading consistency.
  • To decorate the cake: Place 1 cooled cake layer on a cake stand, frost the top surface, and chill for 15 minutes (or freeze 5 minutes). Place the second cake layer on top, inverting it to create a flat top, and push down on it slightly. Frost the sides and top with a thin layer of frosting to hold in any crumbs (called a crumb layer), and chill 30 minutes or freeze 15 minutes.
  • Apply a second layer of frosting to finish off the cake, swirling the frosting a bit. Place 12 elbow straws in the cake around the top, and place colored streamers around the edge of the cake flowing down to the base.

CHOCOLATE BEER CAKE

Chocolate Beer Cake image

A friend made this recently and again, I had to beg for the recipe. It was the best chocolate cake I've tasted in a long time! I had to wonder if it was the beer in the recipe??? It was just wonderful.

Provided by Vseward Chef-V

Categories     Dessert

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 15

2 ounces cocoa powder
7 fluid ounces stout beer
4 ounces very soft butter
10 ounces dark brown sugar
2 large eggs, beaten
6 ounces plain flour
1/4 teaspoon baking powder
1 teaspoon bicarbonate of soda
4 ounces icing sugar, sifted
2 ounces very soft butter
2 tablespoons stout beer
4 ounces dark chocolate (50-55% cocoa solids)
1 ounce walnut pieces, finely chopped
8 walnut halves
cocoa powder, for dusting

Steps:

  • Pre-heat the oven 350°F (180°C).
  • You will need two 8 inch (20 cm) cake tins, 1½ inches (4 cm) deep, lightly greased, and the bases lined with baking parchment, lightly greased.
  • Cream the butter and sugar together, beating thoroughly for 3 or 4 minutes until pale and fluffy. Now gradually beat in the eggs, a little at a time, beating well between each addition.
  • Next, sift the flour, baking powder and bicarbonate of soda on to a sheet of baking parchment.
  • Measure the cocoa and put it in a separate bowl, gradually stirring the stout into it. Carefully and lightly fold into the egg mixture small quantities of the sifted flour alternately with the cocoa-stout liquid. Then, when both have been added, divide the cake mixture equally between the 2 tins and level it out.
  • Bake the cake in the center of the oven for 30-35 minutes. The cakes should be flat on top and feel springy and will have shrunk slightly from the side of the tin. Leave them to cool in the tins for 5 minutes before turning out on to a wire rack to cool further, carefully stripping off the base papers.
  • To make the icing, beat the icing sugar and butter together until blended, then gradually add the stout, making sure it is thoroughly mixed in after each addition.
  • Melt the chocolate in a bowl set over hot water, making sure the bottom of the bowl doesn't touch the water. Then, when it's melted, remove the bowl from the water, and carefully fold the chocolate into the icing mixture.
  • Remove a third of the icing to a separate bowl and stir in the chopped walnuts. After all the icing has cooled to a spreadable consistency, sandwich the cake with the walnut icing. Then spread the remaining two-thirds of the icing on top of the cake, using a palette knife. Next, dust the walnut halves with cocoa powder and arrange on top of the cake.
  • Now try to be patient and allow the icing to become firm before eating!

Totally delicious and not too sweet! What kind of beer you use makes a difference here (guiness is prob the best choice) - I used a belgian-style white beer because it was what i had on hand, and it ended up with a lingering alcohol taste (not in a good way).
