Vietnamese Spring Rolls Without the Meat image

Hoisin Peanut Dipping Sauce (recipe follows). We have Vietnamese spring rolls on zaar, but what happens if you want a meatless version for some reason. eHow supplied the answer.

12 oriental dried mushrooms
1 large carrot, cut into julienne strips
2 teaspoons sugar, divided
3 cups vegetable oil, divided
2 tablespoons vegetable oil, divided
1 medium yellow onion, sliced
1 garlic clove, minced
1 tablespoon soy sauce
1 teaspoon dark sesame oil
1 1/2 cups fresh bean sprouts
14 egg roll wraps
1 egg, beaten

Steps:

  • Drain and rinse your bean sprouts. The wrappers should be 7 inches.
  • Rehydrate the oriental mushrooms in hot water for 30 minutes.
  • Toss the carrot with 1 tsp sugar until mixed then let sit tossing occasionally for 15 minutes.
  • Drain the mushrooms save 1/2 cup of the liquid. Squeeze excess water out of the mushrooms then cut off stems and cut caps into thin slices.
  • Heat the wok over med high. When hot drizzle 2 tbsp oil into it and heat for 30 seconds. Add the onion and stir fry for a minute. Then add the mushrooms, garlic and liquid reducing heat to medium. Cover and cook about 3 minutes. Mushrooms should be tender. Uncover add the soy sauce and sesame oil and sugar.
  • Cook and stir mushroom mixture 3 to 5 minutes more or until all liquid has evaporated. Transfer mushroom mixture to medium bowl; set aside to cool slightly. Cook stirring for about 4 minutes. Liquid should be gone. Then set aside in bowl to cool. Add the carrot strips and bean sprouts to mix and toss lightly.
  • Place a wrapper on surface and keep rest covered. Drain mushroom mix and place 3 tbsp on wrapper's bottom 3rd. Brush edges with beaten egg.
  • Now: Fold bottom corner up over filling.
  • Fold in and overlap the opposite right and left corners to form 3-1/2-inch-wide log. Roll up filling to remaining corner and place spring roll on tray covered with plastic wrap. Repeat with remaining wrappers and filling.
  • Now take the remaining 3 cups of oil, place in wok and heat. You want 375F on a deep fry thermometer. Fry 4 rolls 2 to 3 minutes or until golden brown.
  • Reheat oil and do next batch. Repeat until all are used. Drain on paper towels. Place on serving tray with dipping sauce. Serve.

These springrolls will bring you all the freshness and flavour you cannot find in the fried springrolls. Everytime we have a ladies' lunch, I will always be asked to make them. It is easy to make and the ingredients can be found in either chinese, thailand or vietnamese groceries stores.

100 g rice vermicelli, ready to eat kind also known as Bun
200 g prawns, medium size
1 (50 g) package rice paper
fresh chives
50 g bean sprouts
of fresh mint
200 g lean pork (optional)
hoisin sauce
oil
sugar

Steps:

  • Cook the prawns, for 3 minutes until cooked, remove and peel, cut them lengthwise.
  • Cook the pork, let it cool down and cut into thin slices.
  • Spread one sheet of paper rice on a flat surface, use your fingers to wet it with water to make pliable, place another half in the middle to avoid cracking.
  • Spread evenly a clump of noodles, 3 to 4 mint leaves, a pinch of bean sprouts at the bottom third of the rice paper.
  • Fold the bottom portion over the filling, fold the left and right sides, roll one more time so it is 2/3 rolled.
  • Place 2 or 3 halves of the prawns, face out so it looks nice when finished, next to them a leaf of chive half in and half out.
  • Roll the paper tightly until the edges stick together.
  • Place the rolls under a damp towel until serving time to keep them moist.
  • Dipping sauce.
  • Put 3 to 4 tbs of hoisin sauce with 1 tbs of cooking oil, warm it up and taste with sugar, avoid boiling.
  • Chopped finely a pinch of roasted peanuts and spread on top when serving.

My friend, Lan, who is Vietnamese, showed me how to make these delicious and healthy spring rolls. These are served cold and are NOT fried. They do require some skill to roll - unless you've made these before, you may want to have extra rice papers on hand in case you tear some! It is crucial to use only fresh herbs etc. in this dish, however you can use any cooked meat or fish combo that you prefer. Vegetarians may omit meat altogether. The prep time given is how long it should take - but first timers may find it takes longer to roll.

1 package clear edible rice paper sheet
1/2 lb cooked chicken
1/2 lb cooked small shrimp (, peeled, deveined, halved)
1 bunch fresh cilantro leaves
1 bunch fresh mint leaves
1 head leafy lettuce, washed and separated into leaves
1 cucumber, peeled and cut into very,very thin strips
1 cup fresh bean sprout, optional
1 package vermicelli rice noodles, prepared according to package directions
hoisin sauce, to taste
chopped peanuts
nuoc nam, vietnamese spicy fish sauce

Steps:

  • Have all meats precooked and cold and the rice noodles prepared already (the noodles should be white, long and at room temp).
  • Make sure all veggies and herbs are cleaned, dried, and set out before you start.
  • Dip a sheet of rice paper wrapper into water very quickly, no longer than a second or two (or they will get too soggy) and lay flat on a work surface.
  • On one edge, lay a small handful of noodles, a few strips of meat, some shrimp, some cilantro and mint leaves, a lettuce leaf, some cucumber strips and bean sprouts, all to taste but don't overstuff.
  • Carefully start to roll up eggroll style, tucking in the sides, then continue to roll up-but not too tightly or the spring roll will split.
  • These rolls will be thicker than the typical Chinese-style fried eggrolls.
  • Combine a few spoonfulls of hoisin sauce with some chopped peanuts to use as a dipping sauce (or serve with prepared spicy fish sauce dip called Nuoc Mam, available at Asian markets).
  • Serve immediately- these do not keep and will harden up in the fridge, so it is best to make just as many as you plan to serve (store any extra unassembled fillings in fridge and roll later).
  • Note: Please be sure to get the correct spring roll rice papers- these are not the same as wonton/eggroll wrappers, which must be cooked.
  • Look for edible rice paper wrappers, rice noodle vermicelli, and hoisin sauce in Asian markets.

I love spring rolls, but can't stand deep fried foods - this recipe saves calories and fat by baking not frying spring rolls. My family of three eats these for a light dinner, however, they also make a great appetizer.

8 ounces boneless skinless chicken breasts, cooked and chopped finely
2 ounces bean thread noodles (rice noodles)
2 cups cabbage, shredded
1/2 cup bean sprouts
1/2 cup carrot, thinly julienned
1 garlic clove, minced
1 tablespoon fresh ginger, minced
1 tablespoon hoisin sauce
1 tablespoon fish sauce
1/2 teaspoon ground coriander
15 spring roll wrappers, 8 inch diameter (approximately)
1 1/2 tablespoons rice wine vinegar
1/2-1 tablespoon Splenda granular
2 teaspoons soy sauce
1 teaspoon hot sesame oil
1/2 teaspoon chili-garlic sauce
1/4-1/2 teaspoon sesame seeds

Steps:

  • Preheat oven to 400 and prepare baking sheet with parchment paper, sprayed with cooking spray.
  • Prep chicken, rice noodles and veggies.
  • Combine cabbage, bean sprouts, carrots, garlic and ginger. Set aside.
  • Heat saucepan over medium heat and spray with cooking spray. Add cabbage mixture and cook for 2 minutes, stirring from time to time. Add hoisin sauce, fish sauce and ground coriander. Stir until well combined.
  • Remove saucepan from heat, add chicken and noodles, combine. Set aside.
  • *Note there are two different types of rice papers - I use the hard rice kind found in the refrigerator section, directions for those wrappers are as follows. I have not tried using the other wrappers, (I can't find them around here!), but feel free to use them as you normally would. I've heard they are easier to use than the crisp ones.
  • Working with one rice paper at a time. Dip rice paper in warm water for 12-15 seconds until pliable. Remove rice paper to clean towel. Add about two tablespoons of noodle mixture to rice paper and wrap up tightly. Place seem side down on prepared baking sheet. Repeat until all filling is gone.
  • Spray spring rolls with fine layer of cooking spray.
  • Bake for 20-25 minutes, flipping rolls half way through.
  • While rolls are baking, combine dipping sauce ingredients with wire whisk.

Most supermarkets now stock oriental ingredients, such as rice paper ingredients. Keep them as a store cupboard ingredient as they are great for a last minute starter or snack - or you do is soak them in hot water and then fill with your favourite ingredients. Be careful when handling them as they tear quite easily.

rice paper sheet
1 carrot, cut into matchsticks
75 g piece cucumbers
4 green onions, shredded
1 tablespoon sesame seeds
4 tablespoons hoisin sauce
50 g fresh coriander
350 g lean cooked chicken, shredded

Steps:

  • Place the rice paper wrappers in a heatproof bowl and cover with hot water, leave to soak for 5 minutes until soft and pliable.
  • In a separate bowl, toss together the carrot, cucumber, salad onions and sesame seeds.
  • Drain the rice paper on a clean tea towel and spread 1 Tsp of the hoisin sauce across the centre of each. Sprinkle with a few coriander leaves. Place the vegetables and then the chicken on top. Make sure that you don't over fill them as they may split if you do.
  • Fold 2 sides in, then roll up to make a neat cylindrical shape. Serve immediately with extra hoisin sauce to dip into.
