Fresh thyme pairs surprisingly well with juicy plums and adds a welcome savory note to this sweet focaccia.

Yield One 12-by-18 inch focaccia

Number Of Ingredients 9

6 cups unbleached all-purpose flour
1/4 teaspoon active dry yeast (not rapid-rise; from one 1/4-ounce envelope)
4 tablespoons granulated sugar
1 tablespoon plus 1/4 teaspoon kosher salt
1 tablespoon plus 2 teaspoons fresh thyme leaves
2 3/4 cups cold water
2/3 cup plus 1 tablespoon extra-virgin olive oil
2 pounds plums, pitted and cut into 1/2-inch-thick wedges (about 3 1/2 cups)
1/3 cup pearl sugar

Steps:

  • In a large bowl, whisk together flour, yeast, 2 tablespoons granulated sugar, 1 tablespoon salt, and 1 tablespoon thyme. Add cold water and 1/3 cup oil. Stir with a wooden spoon or your hands until a wet dough forms and no dry flour remains. Cover bowl with plastic wrap and let rise at room temperature until dough quadruples in volume and top appears bubbly, at least 12 hours and up to 18 hours.
  • Pour 1/3 cup oil onto a 12-by-18-inch rimmed baking sheet. Lightly coat your hands with oil on sheet, and scrape dough onto center of sheet. Turn dough to evenly coat with oil, then press to spread in an even thickness to edgesof pan. Use your fingers to make dimple-like indentations all over dough. Cover and let rise at room temperature until doubled in volume (dough should reach top of sheet rim), about 1 1/2 hours.
  • Preheat oven to 500 degrees with rack in lower third. In a bowl, toss plums with remaining 2 tablespoons granulated sugar, 2 teaspoons thyme, and 1/4 teaspoon salt. Scatter evenly over dough; drizzle with any accumulated juices from bowl. Sprinkle the top evenly with pearl sugar.
  • Bake until puffed slightly and golden brown on top, 16 to 18 minutes (if top is browning too quickly, tent with foil). Let focaccia cool in pan on a wire rack until warm but no longer hot, about 20 minutes. Serve warm or room-temperature, or let cool completely and store in an airtight container at room temperature up to 2 days.

I was very excited to try this high-hydration focaccia, which simply means the dough has a lot of water. In fact, this has the highest amount of water used than any other Food Wishes dough. It holds big bubbles in the baked dough and because of the long fermentation time, has a far superior flavor.

4 cups bread flour
2 tablespoons bread flour
¼ teaspoon active dry yeast
2 teaspoons kosher salt
4 teaspoons extra-virgin olive oil, or more as needed
1 ⅔ cups water, at room temperature
1 tablespoon minced fresh rosemary
1 tablespoon flaky sea salt

Steps:

  • Stir yeast into bread flour in a bowl. Add salt, followed by 4 teaspoons oil, and water. Stir with a spoon until a wet, sticky dough forms.
  • Cover and let sit at room temperature for 12 to 14 hours.
  • Uncover dough and transfer to an oiled work surface. Using oiled hands, press and push the dough into a rectangle, 16x12 inches in size. Fold dough into thirds horizontally; fold vertically into thirds. Transfer smooth side up into a generously oiled pan.
  • Cover the pan with plastic wrap and let rest until almost doubled in size, for 1 hour.
  • Using oiled hands, fold once more into thirds horizontally, then into thirds vertically to develop gluten structure. Flip dough, smooth side up, on the pan; cover with plastic wrap and let rest for 1 hour more.
  • Unwrap and stretch and fold dough once more in each direction using oiled hands.
  • Transfer, smooth side up, into a generously oiled metal baking pan. Lightly drizzle with additional olive oil and stretch to fit the pan. Cover and let rest for 2 hours.
  • Preheat the oven to 425 degrees F (220 degrees C)
  • Unwrap and poke holes in the top of the dough using oiled fingers if desired for the traditional focaccia look. Scatter over rosemary and flaky sea salt.
  • Bake in the center of the preheated oven until browned, about 30 minutes. Let cool in the pan for 10 minutes; transfer to a wire rack and let cool to room temperature, about 30 minutes. Slice and serve.
