Millionaire Pie is a family favorite. A rich creamy base is loaded with pecans, coconut, pineapple and cherries. You'll need just about 5 minutes to prepare this pie and no baking is required!

1 prepared graham cracker crust
1 cup sweetened flaked coconut
1 can (15.25oz crushed pineapple, well drained)
1 cup maraschino cherries (drained & chopped)
½ cup pecans (chopped)
1 can Sweetened Condensed Milk (14 oz)
5 tablespoons lemon juice
1 tablespoon maraschino cherry juice
1 ½ cups whipped topping (plus extra for garnish if desired)

Steps:

  • In a large bowl, combine coconut, crushed pineapple, maraschino cherries, pecans, (Eagle Brand) Sweetened Condensed Milk, lemon juice and maraschino cherry juice.
  • Gently fold in whipped topping. Pour into crust.
  • Top with additional whipped topping and cherries if desired. Refrigerate 3 hours or overnight.

1 (15 ounce) can crushed pineapple, drained
1 (14 ounce) can eagle brand sweetened condensed milk
1/3 cup lemon juice
1 cup flaked coconut
1/3 cup chopped walnuts or 1/3 cup pecans
1 (8 ounce) carton Cool Whip
2 graham crackers, pie crust(s)

Steps:

  • Combine all ingredients as listed above.
  • Divide mixture evenly into the 2 graham cracker pie shells.
  • Chill at least one hour before serving.

1 1/2 cups pecans, ~ (divided, and chopped )
1 1/4 cups sweetened shredded coconut
1 (8-ounce) container frozen whipped topping (thawed )
1 (8-ounce) container frozen whipped topping (thawed )
2 tablespoons coconut (toasted )
6-8 maraschino cherries

Steps:

  • In a large bowl, mix together sweetened condensed milk and lemon juice, using a hand-held electric mixer, until it's slightly thickened.
  • Stir in the crushed pineapple, pineapple tidbits, 3/4 cup pecans and 1 cup coconut until well incorporated.
  • Fold in 8 ounces of the thawed whipped topping. Pour into prepared crust and smooth evenly. Cover and refrigerate until well chilled, about 4-6 hours.
  • Before serving, top with remaining 8 ounces of thawed whipped topping, and garnish with 1/4 cup pecans, 2 Tablespoons toasted coconut and Maraschino cherries and serve.

This recipe has been floating around our workplace for a few years and we all take turns making it since we all have the recipe now. Easy to double as well. Hope you try it!

1/3 cup lemon juice, bottled is OK
0.5 (14 ounce) can sweetened condensed milk
16 ounces Cool Whip
1 (20 ounce) can crushed pineapple in juice (drained)
0.5 (7 ounce) can mandarin orange sections (drained)
3 -4 maraschino cherries (drained)
1/4 cup sweetened flaked coconut
1 1/2 cups pecans (chopped small)
1 1/2 cups walnuts (chopped small)
2 graham cracker pie crusts

Steps:

  • Place all drained fruit into a food chopper or processor and pulse to make into smaller bits.
  • Place fruit into a mesh strainer and press out juices. The fruit must be fairly dry in order for the pie to set properly.
  • Put the nuts and coconut into the chopper and pulse a few times to make into smaller pieces.
  • Mix lemon juice and sweetened condensed milk with a mixer until well blended and it thickens.
  • Fold milk mixture, strained fruit, nuts, coconut and Cool Whip together. Mix together lightly until all ingredients are well blended and evenly distributed in the filling.
  • Divide the filling between the two pie shells, cover and refrigerate overnight to allow flavors to blend and the filling to set firmly.
  • Serve cold.

1 (3 ounce) package cream cheese
1 (8 ounce) can pineapple tidbits, drained with juice reserved
1 banana, peeled and sliced
1 quart fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
3 drops red food coloring
3 cups frozen whipped topping, thawed
½ cup flaked coconut, toasted
½ cup slivered almonds, toasted

Steps:

  • Slice the strawberries and combine them with sugar, corn starch and red food coloring (if desired). Mix well. In a medium saucepan cook the strawberry mixture over medium heat until thickened. Set aside to cool.
  • Cream together 2 tablespoons of pineapple syrup and cream cheese. Spread mixture in the bottom of the pastry shell. Slice the bananas on top of the cream cheese and pour the drained pineapple tidbits over the top of the bananas. Pour the strawberry mixture over the cream cheese/banana filling. Add your favorite whipped topping and sprinkle the top with toasted coconut and nuts. Serve.

This is a great recipe for a quick pie that does taste like a million bucks. My daughter has been making this every Thanksgiving since she was 11. Very easy preparation. The recipe calls for 2 graham cracker crusts, but we have also made it with the chocolate crumb crusts as well. They are delicious as well.
