These no bake coconut and peanut butter bars are a really tasty idea for an afternoon snack. Delicious but not too sweet and so quick to make too! What are you waiting for?

40 g coconut oil
45 g peanut butter (unsalted and unsweetened)
30 g agave nectar
100 g dessicated coconut
50 g oats

Steps:

  • Put the coconut oil, peanut butter and agave nectar in a large microwave-proof bowl. Heat for about 40 seconds and then stir them together until they are fully combined.
  • Add the coconut and oats and stir well. At this stage you could add extra nuts, seeds, dried fruit or chocolate chips if you wanted.
  • Line a square dish with cling film and press the mixture down well using the back of a spoon.
  • Put in the fridge to harden up.
  • Take the dish out of the fridge and cut into bars and gently ease out of the dish. I found the first couple crumbled up but after that the rest came out fine.
  • Store the bars in the fridge.

These No Bake Coconut Peanut Butter Bars are very easy to make and high in nutrients. They are suitable for vegetarians and pescaterian and are gluten, dairy and lactose free.

100 g Desiccated coconut
100 ml Coconut milk
3 tbsp Peanut butter
2 tbsp Honey
50 g Dark chocolate ((I used Green & Black's Organic Dark Chocolate 70%))

Steps:

  • Combine all ingredients except the dark chocolate in a food processor and pulse until smooth.
  • Place the mixture into a lined tin or container and press down firmly. Chill for 30 minutes until firm. Remove from the fridge and cut into bars.
  • Melt the dark chocolate, allow it to cool down for 4-5 minutes and dip each bar in it. Chill in the fridge for 20 minutes.
  • Enjoy!

1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter
2 1/2 cups graham cracker crumbs
2 cups miniature marshmallows
3/4 lb butterscotch chips
3 tablespoons peanut butter
1/2 cup chopped pecans or 1/2 cup chopped walnuts
1/2 cup shredded coconut

Steps:

  • Butter a 9" X 13" baking pan.
  • Combine eggs, sugars, and butter in a large, heavy saucepan.
  • Bring to a boil and cook over low for about 2 minutes, stirring constantly.
  • Remove from heat and add the Graham crumbs, marshmallows and coconut.
  • Spread mixture on bottom of prepared pan.
  • Melt butterscotch chips and peanut butter together.
  • Spread over the top of the bars.
  • Chill for at least 6 hours before cutting into squares.

1 1/2 cups Rice Krispies (for a firmer bar increase up to 2 cups)
1 1/2 cups quick-cooking oats
1/2 cup brown sugar, packed
1/2 cup light corn syrup or 1/2 cup honey
1/2 cup reduced-fat peanut butter (or can use regular peanut butter)
1 teaspoon vanilla
1/2 cup dark raisin (or can use either 1/2 cup chopped nuts or 1/2 cup seeds or 1/2 cup coconut)
1/3 cup mini chocolate chip (to prevent melting refrigerate or freeze the chocolate chips before mixing in)

Steps:

  • lightly grease 11 x 7-inch, can use a 13 x 9-inch baking dish but you will have a thinner bar.
  • In a large bowl combine Rice Krispies cereal, oats and raisins.
  • In a saucepan stir the corn syrup or honey and brown sugar until just at a boil.
  • Immediately remove from heat and stir in the peanut butter and vanilla until well combined.
  • Pour over the dry ingredients in the bowl; mix to combine.
  • Mix in mini chocolate chips (if using) work fast the mixture hardens quickly.
  • Transfer the mixture into prepared baking dish, then using slightly wet hands push evenly down into the pan.
  • While the mixture is still soft, for easier slicing take a sharp knife and slice into desired size bars.
  • Chill until firm.
