1 1/2 pounds turnips, peeled and cut into wedges
4 tablespoons unsalted butter
1/4 cup honey
4 wide strips lemon zest, removed with a vegetable peeler
2 bay leaves (preferably fresh)
Kosher salt
1 pound parsnips, peeled and cut into 2-inch pieces
2 tablespoons chopped fresh chives

Steps:

  • Prepare the pearl onions: Bring a pot of water to a boil. Fill a large bowl with ice water. Add the pearl onions to the boiling water and cook 1 minute. Drain and transfer to the ice water to stop the cooking. Drain again, then slip off the skins.
  • Combine the turnips, butter, honey, lemon zest, bay leaves, 1 3/4 teaspoons salt and 1/4 cup water in a large nonstick skillet. Bring to a boil over medium heat, then cover and cook until the turnips are just slightly tender, 8 to 10 minutes.
  • Stir in the parsnips and pearl onions, cover and cook until the vegetables are tender, 8 to 10 minutes. Uncover and simmer, stirring occasionally, until most of the liquid is evaporated, 5 to 7 minutes. Gently toss the vegetables to coat and transfer to a serving dish. Top with the chives.

1 (16 ounce) bag frozen pearl onions, thawed
1/4 cup honey
1/4 cup butter

Steps:

  • Drain onions and place in small sauté/fry pan.
  • Add honey and butter.
  • Cook over MEDIUM heat, stirring carefully until honey and butter are completely coating onions and start to caramelize or brown. The coating should be a little bit thick and sticky, and very little moisture should remain in the pan. This should take about 15 to 20 minutes.
  • Serve in a smaller, heavy bowl with a SMALL spoon, so that by the time you get to the table there will still be some left!
  • Good with roasted poultry and pork.

10 medium Spanish onions
1 cup seasoned bread crumbs
1 cup whole kernel corn (frozen or canned)
1 cup diced zucchini
1 cup grated carrot
1 cup diced canned beet
1 cup water
1/2 cup honey
3 tablespoons Dijon mustard
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
2 teaspoons paprika
1/2 teaspoon ground ginger
1 1/2 teaspoons salt, more to taste
1/2 teaspoon fresh ground black pepper, more to taste

Steps:

  • Onion and Filling: Preheat the oven to 350°F.
  • Slice the onions in half on the equator.
  • Remove the centers, leaving a "bowl" in the center of the onion halves (reserve the centers for another use).
  • In a bowl, stir together 1/2 cup bread crumbs, corn, zucchini, carrots and beets.
  • Firmly pack the filling in the hollowed-out onion halves and arrange them in a shallow baking dish so that the onions fit snugly.
  • Pour the water around base of the onions.
  • Glaze: In a separate bowl, whisk together the glaze ingredients.
  • Drizzle half of the mixture over the tops of the stuffed onions.
  • Bake 30 minutes.
  • Drizzle with the remaining glaze sauce.
  • Bake 30 minutes more.
  • Just before serving, sprinkle the onions with the remaining 1/2 cup bread crumbs and place the onions under the broiler until the crumbs are toasted and golden brown.
  • Enjoy!

1 fully cooked bone-in ham, shank end (about 10 pounds), at room temperature 1 to 2 hours
1/2 cup honey
1/4 cup apricot jam
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
4 cloves garlic, smashed
2 jalapenos, seeded and diced small
Zest and juice of 1 orange
Freshly ground black pepper
Cheeses (such as Swiss and Cheddar), deli-sliced and cut into triangles
Hawaiian sweet rolls, split
Mustards (such as whole-grain mustard, Dijon, yellow mustard)
Mayonnaise
Sliced cornichons
Pickled Red Onions, recipe follows
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
1 bay leaf
Red pepper flakes
1 large red onion, halved and sliced into 1/4-inch-thick half-moons

Steps:

  • For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
  • Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
  • Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
  • Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
  • Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
  • Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
  • For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
  • To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

1 lb baby carrots (think 1-2 bites, leave the skinny parts whole, halve or quarter fat ones) or 1 lb carrot, peeled, washed, and sliced into sticks about the size of baby carrots (think 1-2 bites, leave the skinny parts whole, halve or quarter fat ones)
2 tablespoons butter
1 large garlic clove, peeled and quartered
2 tablespoons honey (use a little more for winter carrots or ones that have sat in the fridge a while, as they'll be more)
salt and pepper
1/4 cup green onion tops, cut small (about 3-4 green onions once you discard the very tops and the white parts) or 1 tablespoon dried chives

Steps:

  • Salt a large saucepan full of water and bring to a rapid boil. Add carrots and boil 5-7 minutes, until tender. Drain.
  • In a large skillet or saute pan, melt butter over medium heat. Add garlic and cook, stirring constantly, for 2 minutes. Remove garlic and discard.
  • Add the honey, stirring to blend. Add carrots and salt and pepper to taste (it doesn't need much, a few shakes should do it). Stir around until carrots are coated. Cook, stirring occasionally, for 7-10 minutes, until carrots begin to brown. (You may need to increase heat to medium-high on some stoves.)
  • Pour carrots and all the "juices" into a serving bowl. Add green onions and toss.

1.3kg piece pork belly, boned, rind left on and scored (ask your butcher to do this)
2 tsp sunflower oil
1 tsp white peppercorns, crushed
3 large onions, sliced
2-3 tbsp clear honey
2 tsp ground cumin
1 red chilli, deseeded and chopped

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Lay the pork, skin-side up, on a rack in a roasting tin. Trickle with a little oil, then lightly press on the crushed peppercorns and a sprinkling of coarse sea salt. Place in the oven, then cook for 1 hr. Remove from the oven and baste with the juices. Continue to cook for a further 1½ hrs, basting every 20 mins.
  • Put the sliced onions in the roasting tin under the pork. Mix the honey together with the cumin and chilli, brush it over the pork, then increase the oven to 200C/fan 180C/ gas 6. Cook for a further 30-40 mins, basting occasionally, until caramelised with a rich, golden glaze over the pork. Once cooked and tender (this can be easily tested by piercing the flesh with a knife), remove pork from the oven, then leave to rest for 10-15 mins.
  • While the pork is resting, heat the tin on the stove with the onions, adding 2 tbsp water. This will lift any residue from the pan, creating a moist cooking liquor. Season the onions with salt and pepper, then divide between 6 plates. Carve pork into 6 portions, then serve on top of the onions. Pour any remaining liquor over and serve with the Pumpkin mash (below).
