1/2 stick (4 tablespoons) unsalted butter
1/2 cup semisweet chocolate chips
1 3/4 cups finely ground graham cracker crumbs
2 tablespoons coconut oil
1 cup semisweet chocolate chips
3 cups vanilla ice cream, softened
1/4 cup finely ground graham cracker crumbs
1/2 cup semisweet chocolate chips
7 1/2 ounces marshmallow creme
20 to 24 marshmallows

Steps:

  • For the graham cracker crust: Melt the butter in a small saucepan over medium heat. Remove from the heat and whisk in the chocolate chips until melted and combined.
  • Combine the graham cracker crumbs and melted butter mixture in a large mixing bowl. Mix with a wooden spoon until combined.
  • Press the crumb mixture into the bottom and sides of a 9-inch pie dish. Transfer to the freezer for 10 minutes to firm up.
  • For the homemade magic chocolate shell: Melt the coconut oil and chocolate chips in a small saucepan over low heat, just until smooth. Remove from the heat.
  • To assemble the pie: Evenly spread half of the softened ice cream on the bottom of the pie crust. Drizzle a layer of chocolate shell over the ice cream, followed by the graham cracker crumbs and chocolate chips. Add the second half of the ice cream, followed by another drizzle of chocolate shell. Lastly, add a layer of marshmallow creme and a layer of marshmallows on top. Freeze for at least 2 hours or overnight.
  • Serving options: Place under a broiler to toast the marshmallows, 20 to 30 seconds. Keep an eye on the marshmallows as they toast up extremely quick. Or you can torch the top for the burnt marshmallow flavor.

Steps:

  • Mix cookie crumbs with melted butter. Press into a 9-inch pie plate.
  • Arrange bananas over bottom of crust. Spread ice cream in an even layer over bananas. Top with drained pineapple. Whip the cream and spread over top. Sprinkle with nuts.
  • Place pie in freezer for 4 hours or until firm. Garnish with cherries, if desired. Makes 8 servings.

1 ½ Granny Smith apples, diced
2 cups brown sugar
1 pinch ground cinnamon, or more to taste
1 (9 inch) prepared graham cracker crust
1 (.25 ounce) package unflavored gelatin
1 tablespoon ground cinnamon
½ teaspoon salt
1 (14 ounce) can sweetened condensed milk
2 eggs, beaten
1 (24 ounce) jar cinnamon applesauce

Steps:

  • Place Granny Smith apples in a saucepan over medium-high heat; stir in brown sugar. Cook, stirring occasionally, until brown sugar thickens, 5 to 10 minutes. Stir 1 pinch cinnamon into apple mixture; pour into graham cracker crust.
  • Combine gelatin, 1 tablespoon cinnamon, and salt together in a saucepan; stir in sweetened condensed milk and eggs. Let gelatin mixture stand until dissolved, about 1 minute. Place saucepan over medium-low heat; cook and stir until mixture thickens, 7 to 10 minutes. Remove saucepan from heat and stir in applesauce until thoroughly mixed; pour over apple layer. Chill until set, 2 1/2 to 3 hours.

2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cardamom (optional, but delicious)
3 large Honeycrisp apples, peeled, halved vertically and cored
4 tablespoons salted butter, melted
2 tablespoons brown sugar
1 orange, zested and juiced (about 3 tablespoons juice and 2 teaspoons zest)
1/2 cup quick-cooking oats
1/4 cup slivered or sliced almonds
Pinch kosher salt
Honey, for serving
Vanilla ice cream, for serving

Steps:

  • For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
  • For the apples: Preheat the oven to 400 degrees F.
  • Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
  • Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
  • Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. Sprinkle the oat mixture over the apples, making sure to get some between the slices without breaking the apples. Bake until the topping is slightly crisp and golden, another 10 minutes. Drizzle with honey and serve with ice cream.

1 large store-bought graham cracker crust
2 tablespoons unsalted butter
3 Golden Delicious apples, peeled, cored, and cut into 1-inch chunks
1/4 cup confectioners' sugar, sifted
1 1/2 tablespoons fresh lemon juice
One 12-ounce jar Dulce de Leche caramel topping
1 quart vanilla ice cream
1/2 cup chopped walnuts or pecans, toasted

Steps:

  • 1. Read the package directions on the graham cracker crust and prebake if necessary. You can, of course, use your favorite homemade crust recipe, pressed into a 9-inch pie pan and prebaked. In either case, let the crust cool on a cooling rack while you prepare the apples.
  • 2. Melt the butter in a large nonreactive skillet or sauté pan. Add the apples and cook, stirring, over medium heat until they're just about tender, 5 to 6 minutes. Stir in the confectioners' sugar and lemon juice, cook for another minute or so, and remove from the heat. Scrape the apples and their juice onto a large plate and let cool.
  • 3. When the apples are almost cool, scrape them and their juice into the pie shell, spreading them evenly in the crust. Without measuring - that's the fun part, not measuring - slowly pour a little less than half of the bottle of caramel evenly over the apples. Put the pie shell in the freezer for 30 minutes to firm up the apples and caramel. When you do this, put the ice cream in the refrigerator to soften it.
  • 4. After 30 minutes, spoon the softened ice cream over the apples, pressing it down and smoothing it out with the back of a fork. Now pour as much of the remaining caramel over the ice cream as you like. You can pour it in a spiral, a zigzag, or any decorative fashion you like. (Note to kids: you probably won't need to use all of the remaining topping, but you don't have to tell your parents I said that, if you don't want to.) Sprinkle the nuts over the top of the pie, then put the pie back in the freezer for 1 hour to firm it up. No cheating and taking it out before an hour is up. Slice and serve.
