Old Bay Marinated and Grilled Shrimp image

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

Number Of Ingredients 6

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

1 lb raw shelled shrimp (16-20/lb) (about 4 per person)
1 1/2 tspn Old Bay Seasoning
1 clove garlic (grated)
1/4 tspn kosher salt
2 lemons zest and juice of 1/2 lemon (remaining lemons to be grilled with shrimp)
1 tbspn olive oil

Steps:

  • Gather all ingredients before starting recipe.
  • Prepare the grill for medium-high heat. Lightly oil grate.
  • Transfer shrimp to a medium bowl. Add 1 tablespoon oil, two-thirds of the garlic, 1½ teaspoon of Old Bay Seasoning, and 1/4 teaspoon. salt. Toss to combine. Set aside for 10-15 minutes while you prepare the aioli.
  • Place shrimp on hot grill and cook for 2-3 minutes or until the shrimp begins to turn pink, turn and grill for another 2-3 minutes, the tails should be slightly charred.
  • Place lemons, cut in half, cut side down, on the grill at the same time that you place the shrimp on the grill. Allow the lemons to char, serve with grilled shrimp

1 pound peeled and deveined medium shrimp
1/3 cup panko breadcrumbs
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
1 large egg, lightly beaten
1/4 cup canola oil
1/2 cup mayonnaise
1 teaspoon to 1 tablespoon Old Bay seasoning
4 brioche buns, halved and lightly toasted
Avocado slices, for topping
Lettuce leaves, for topping
Tomato slices, for topping

Steps:

  • For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
  • For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
  • To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

2 slices cured lemon
½ cup mayonnaise
1 tablespoon minced fresh tarragon
1 teaspoon lemon juice
1 pound extra large shrimp, peeled and deveined
2 teaspoons olive oil
1 teaspoon smoked paprika
½ teaspoon kosher salt

Steps:

  • Soak cured lemons briefly in a bowl with cold water to remove curing brine, about 10 minutes. Dry lemons with paper towels and finely mince.
  • Stir minced lemon, mayonnaise, tarragon, and lemon juice together in a bowl. Cover bowl with plastic wrap and chill aioli in the refrigerator until cold, at least 15 minutes.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Put shrimp in a bowl. Drizzle olive oil and sprinkle paprika and salt over the shrimp, stir to coat shrimp completely.
  • Cook the shrimp on the preheated grill until they are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes per side. Transfer shrimp to a plate and serve with lemon aioli.

16 bamboo skewers, 12 inch
1 cup olive oil
1 teaspoon chopped fresh basil
1 cup mayonnaise
1 teaspoon chopped fresh cilantro
16 medium shrimp (size 21/25)
3 teaspoons chopped fresh garlic
4 romaine lettuce leaves
2 ounces fresh lemon juice
1/2 ounce honey

Steps:

  • Peel and devein the shrimp, leaving only the tail attached.
  • Take 4 shrimp for each bamboo skewer and skewer through the the center of the tail and set aside.
  • In a 12" flat pan mix the olive oil, basil and 2 teaspoon of chopped garlic.
  • Add the shrimp to the olive oil, marinate, cover and place in cooler for at least one hour.
  • For Aioli: Mix the mayonnaise, lemon juice, cilantro and honey in a small mixing bowl and keep cool until ready to serve.
  • Light coals on grill until ready to cook.
  • Take shrimp skewers out of marinade, lightly dry on paper towel and place on grill.
  • Cook on each side 3-4 minutes or until pink.
  • For each serving, place one lettuce leaf on a plate and put one grilled shrimp skewer on top of lettuce.
  • Put 3 oz of cilantro aioli in a small ramekin and place next to the gripped shrimp for dipping and serve.

You may end up cutting a little but of the flesh, but the aim here is to make it easy to peel the shell later (if you choose!) without compromising the shrimp’s tenderness. The shells are a protective barrier, so keep them on when grilling.
  • Transfer shrimp to a medium bowl. Add 1 Tbsp. oil, two-thirds of garlic, 1½ tsp. Old Bay, and ¾ tsp. salt and toss to combine. Let sit 10–15 minutes while you prepare the aioli.
