1/2 cup fat-free sour cream
1 tablespoon packed brown sugar
1 tablespoon chopped crystallized ginger
1 medium pineapple (3 lb)
1 tablespoon butter or margarine, melted
6 maraschino cherries

Steps:

  • Heat gas or charcoal grill. In small bowl, mix all ginger cream ingredients. Cover and refrigerate until serving time.
  • Cut 1/2-inch slice off top and bottom of pineapple. Cut off rind. Cut pineapple crosswise into 6 slices; remove "eyes" from slices. Drizzle both sides of pineapple slices with butter.
  • Place pineapple slices on grill. Cover grill; cook over medium heat 10 to 15 minutes, turning once, until hot and light brown. To serve, top pineapple with ginger cream; garnish with cherries.

Nonstick cooking spray
2 teaspoons butter
1/4 cup brown sugar
1/4 cup rum
1 pint light vanilla ice cream

Steps:

  • Cut the top and bottom off of the pineapple, peel and cut it crosswise into 8 rings, about 1/2-inch each. Use a spoon or apple corer to carve out the center core of each ring.
  • Spray a large grill pan with cooking spray and heat over a medium flame. Grill the pineapple, in 2 or 3 batches, for 2 to 3 minutes on each side, until it is nicely brown and grill marks have appeared. (You can also grill this on an outdoor grill sprayed with cooking spray before being heated.)
  • While the last batch of pineapple cooks, heat the butter, sugar and rum in a small saucepan over a low heat, stirring, until the sugar is dissolved and the sauce has thickened slightly, about 2 minutes. Remove the sauce from the heat.
  • Place a pineapple ring on each plate, scoop 1/4 cup of ice cream into the center of the ring, and drizzle about 2 teaspoons of sauce on top.

1/2 cup spiced rum
1/3 cup brown sugar
2 tbsp butter
1/2 tsp ground cinnamon
pinch salt
8 scoops vanilla ice cream

  • In a small bowl add the spiced rum and brown sugar and mix until sugar is dissolved.
  • Place the pineapple spears in a shallow baking dish and pour the brown sugar and rum mixture over top. Cover and ace in the fridge for 2-4 hours flipping once halfway through to coat the other side with the rum mixture.
  • Over medium-high heat preheat a grill pan or BBQ grill. Add the pineapple spears perpendicular to the grill grates so you can get those nice brown grill marks across the pineapple. Grill for about 3 minutes per side.

  • Make crust:

  • While coals are lighting, put pineapple quarters on a cutting board, long cut sides down, and cut lengthwise into slices slightly less than 1/4 inch thick with an adjustable-blade slicer or a knife (use caution; peeled pineapple is extremely slippery). Grill pineapple in 2 batches, covered only if using a gas grill, on lightly oiled grill rack, turning over once with tongs, until tender, about 5 minutes total. (If pineapple sticks to rack, use a metal spatula to loosen before turning.) Transfer to a platter and cool to room temperature, about 15 minutes. Trim pineapple and discard core from slices.
  • Assemble tart:
  • Spread filling in tart shell, then press raspberries into cream. Gently push up bottom of pan to loosen pan bottom (with crust) from side of pan, then carefully lift out tart and transfer to a work surface. Gently insert a thin wide metal spatula between crust and pan bottom, then run spatula under crust to loosen from pan. Using spatula, slide tart shell carefully onto a serving platter. Arrange pineapple decoratively over cream.
  • Make glaze:
  • Melt jelly with water in a small saucepan over moderate heat, stirring until smooth, then brush glaze onto pineapple with pastry brush.

Rub brown sugar over the slices and let stand until the grill is fully heated. Place pineapple slices on the grill and cook, flipping once, until tender, golden and lightly charred, about 2-4 minutes per side (this may vary, depending on the thickness, ripeness of pineapple, and actual heat of grill). Use a wide metal (sharp) spatula/turner for easy removal and flipping of the pineapple slices. If you find the pineapple sticking at all, use a bit more oil on the grill grates.
  • CRUMBLE: Preheat oven to 350 degrees F. Spray an 8x8-inch baking pan with cooking spray or line with parchment paper and set aside. Finely chop 1/3 cup of the walnuts and add to a large bowl. Crush the graham crackers into crumbs (using a blender or food processor or crush in a bag using a rolling pin) and add to the bowl. Add the brown sugar, white sugar, melted butter, cinnamon, salt, and vanilla to the bowl and stir until combined. Pour the mixture into the prepared pan and spread evenly into one layer. Bake for 7 to 10 minutes or until lightly browned. Allow to cool and then crumble and sprinkle on top of frozen vanilla yogurt. Coarsely chop the remaining few tablespoons of walnuts and add on top of the crumble.
  • ASSEMBLE: Place grilled pineapple slices on plates and top each slice with a large scoop of frozen vanilla yogurt. Add the crumble on top and coarsely chopped walnuts. Enjoy immediately.
