GRILLED MOROCCAN CHICKEN
The spices in this grilled chicken recipe are reminiscent of ras el hanout, a North African spice blend that usually contains over a dozen spices.

Steps:
- Place chicken breasts between 2 pieces of wax or parchment paper and, using a meat mallet, pound to an even ½-inch thickness. (Skip this step if substituting chicken tenderloins.)
- Mix all ingredients except chicken together in a small bowl or measuring cup. Place pounded chicken breasts inside a 1 gallon zip-lock bag. Add marinade to the bag, press air out and seal shut. Massage marinade into the breasts until evenly coated. Place the bag in a bowl in the refrigerator (to protect against leakage), and let the chicken marinate for 5-6 hours.
- Clean grill and preheat to high. Place chicken breasts on grill, spooning marinade over top. Grill, covered, for 2-3 minutes per side. Do not overcook.

GRILLED CHICKEN SKEWERS

- Preheat a grill or grill pan to medium heat.
- To make the peanut sauce, put the peanut butter in a blender with the soy sauce, honey, ginger, red pepper flakes, chili oil and lime juice. Add 1/4 cup very hot water as you blend the mixture. Check the consistency and add a little more hot water if needed to make it very smooth. Transfer the sauce to a small dish, cover it with plastic wrap and set aside.
- Brush the grill with oil. Thread the chicken onto the skewers and grill on both sides until the chicken is done in the middle, 2 to 3 minutes per side. Remove to a serving platter and sprinkle on the cilantro.
- Serve the skewers with dishes of the peanut sauce and a good-quality barbecue sauce for dipping.
NIF'S GRILLED HAWAIIAN CHICKEN SKEWERS
This is a dish that I made up as I went along! It's easy and uses ingredients that most of us have on hand. There is probably enough marinade for twice the amount of chicken. I wasn't going to have a chance to stir the chicken so I wanted to make sure that it covered all of the chicken. I served this over brown basmati rice. The marinating time is not included. ****NOTE: I do not recommend marinating this for more than 2 hours. I find it gets a grainy texture if marinated too long. Enjoy!

- Mix all marinade ingredients and add chicken. Marinate for 1 to 2 hours, no more.
- If you are using wooden skewers, be sure to soak them in water for 2 hours.
- Heat grill to medium-high.
- Alternate chicken, pineapple and pepper pieces on skewers. Place on grill until chicken is cooked through, about 5 minutes on each side.

MOROCCAN CHICKEN KABOBS

- Cut the chicken into 1-inch cubes and place in a large, shallow, nonmetallic dish. Put all the remaining ingredients, except parsley, in a bowl and whisk together. Pour the marinade over the chicken cubes and toss the meat in the marinade until well coated. Cover and let marinate in the refrigerator for 8 hours or overnight, turning the chicken 2-3 times if possible.
- If using wooden skewers, soak the skewers in cold water for about 30 minutes to prevent burning and to keep food from sticking. If using metal skewers, lightly brush with oil. Preheat the broiler or grill pan. Remove the chicken pieces from the marinade, reserving the remaining marinade and thread an equal quantity onto each prepared skewer leaving a little space between each piece.
- Brush the broiler rack or grill pan with a little oil. Add the kabobs and cook, turning frequently and brushing with the reserved marinade halfway through cooking, for 15 minutes or until browned on all sides, tender, and cooked through. Serve hot, sprinkled with chopped parsley to garnish.

NIF'S LIGHT GRILLED MARINATED CHICKEN
A nice light, yet flavourful dish that is easy and the breasts can be served whole or on skewers. If you are using wooden skewers, be sure to soak them in cool water for 30 minutes. I also place a strip of tinfoil under the exposed skewers when on the grill. I recently purchased metal skewers and I really like them. I did not include marinating time. Enjoy!

- Spray grill with nonstick cooking spray and heat to medium-high.
