Juice of 1 lime

2 teaspoons chili powder
2 teaspoons black pepper
1 teaspoon ancho chili powder

Steps:

  • Gather the ingredients.
  • Combine vinegar, oil, cilantro, water, garlic, lime, salt, pepper, and spices.

Mexican Chicken Marinade image

This Mexican chicken marinade is easy to mix up and adds so much flavour to your chicken. Marinate and then grill or bake, or freeze for later!

4 skinless, boneless chicken breasts
1/4 cup olive oil
1 lime, juice
2 cloves garlic, minced
1/4 cup cilantro, chopped
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place the chicken breasts in a large ziplock bag. In a small bowl, whisk together the olive oil, lime juice, garlic, cilantro, chili powder, cumin, salt, and pepper.
  • Pour the marinade over the chicken and seal the bag, squeezing out all the air.
  • Move the chicken around in the marinade until it is all evenly coated.
  • Refrigerate and let it marinate for at least 30 minutes and up to 4 hours (see note).
  • You can freeze the chicken in the marinade immediately and let it marinate as it defrosts, or marinate and cook it immediately.
  • Either grill the chicken for 6-8 per side, pan fry for 6-8 minutes per side over medium heat, or bake at 375 degrees F for 20-30 minutes, or until an internal temperature of 165 degrees F has been reached.
  • Let the chicken rest, tented with foil, for 5 minutes before serving.

Beer keeps the flavour light in this marinade. Ideal for chicken, beef or pork. Feel free to use any hot sauce brand of course. I think I originally copied this out of the Tabsco cook book.

Number Of Ingredients 7

1 1/2 cups beer
1/2 cup cilantro, freshly chopped
3 cloves garlic, minced
1/2 cup lime juice
2 teaspoons chili powder (or more to taste)
1 teaspoon Tabasco sauce (or more to taste)
1 1/2 teaspoons ground cumin

Steps:

  • Mix all ingredients until well combined.
  • Wouldn't hurt to use a blender.
  • Your done.
  • Marinade can be stored for up to 3 days in a covered jar in the fridge.

2 pounds boneless pork shoulder, cut into 1-inch cubes
3 ounces dried mild red New Mexican chile pods (10 to 12)
4 garlic cloves
1 tablespoon garlic powder
3 cups water
1 1/2 teaspoons salt
Accompaniments: refried beans and cooked white rice

Steps:

  • Preheat oven to 375°F.
  • Roast pork in a 2 1/2- to 3-quart shallow baking dish, uncovered, in middle of oven, stirring occasionally, 30 minutes.
  • While pork is roasting, soak chiles in a bowl in just enough boiling-hot water to cover until softened, about 20 minutes. Drain chiles, discarding soaking water and stems.
  • Purée chiles, garlic cloves, garlic powder, 3 cups water, and salt in a blender until smooth. Stir sauce into pork and bake, uncovered, stirring occasionally, until pork is tender, about 45 minutes.

1/4 cup chopped cilantro
2 tablespoons lime juice ((juice of 1 lime))
1 tablespoon minced garlic ((about 3 cloves))
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon coarse kosher salt
1/2 teaspoon smoked paprika
1/2 teaspoon ancho chili powder
3-4 pounds chicken breasts, thighs, or any cut you prefer

Steps:

  • In a large resealable plastic bag (or a large mixing bowl), add all the ingredients and toss to combine.
  • Add the chicken (I used 3 pounds boneless skinless chicken breasts) and toss with marinade to coat.
  • Seal bag or cover and marinate in the fridge for 2 to 8 hours.
  • Remove the chicken from the marinade and grill or cook until the internal temperature reaches 165°F.

2 1/2 lbs pork shoulder
16 ounces water
6 garlic cloves, peeled and roughly chopped
1 medium onion, peeled and chopped
1 tablespoon salt
1/8 teaspoon fresh ground black pepper
1/8 teaspoon dried oregano
3 ounces red chili peppers, coarsely chopped
2 1/2 ounces red chili powder (Hatch chiles would be perfect)

Steps:

  • On a cutting board, cut the pork into 1 1/2-inch cubes and place in a roasting pan (approximately 13 by 21-inch).
  • Put the water into a blender and add the garlic, onion, salt, black pepper, oregano, chile pepper and chili powder. Blend until smooth as possible. Pour over the pork cubes and toss to coat well.
  • Preheat oven to 400 degrees F. Cover the roasting pan and place in the oven to bake for 1 1/2 hours or until fork tender.
