6 oz. Yukon Potatoes
Info 4 oz. Light Cream
Info 1 Ciabatta
3 oz. Corn Kernels
1 Shallot
1 Celery Stalk
2 fl. oz. White Cooking Wine
¼ oz. Parsley
2 Garlic Cloves

Steps:

  • Before You Cook Turn oven on to 400 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Ingredient(s) used more than once: garlic, parsley Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Cut ciabatta into 1/2" cubes.Mince garlic.Stem and mince parsley.Peel and cut potatoes into 1" dice.Trim ends off celery and cut into 1/4" dice.Peel and cut shallot into 1/4" dice.Pat cod dry, and season both sides with 1/4 tsp. salt and 1/4 tsp. pepper. 2 Bake the Croutons Add cubed ciabatta, half the garlic (reserve remaining for chowder), and 1 Tbsp. olive oil to prepared baking sheet. Toss to coat.Spread into a single layer. Bake in hot oven until golden brown and crunchy, 7-10 minutes.Sprinkle baked croutons with half the parsley (reserve remaining for garnish) and set aside.While croutons bake, cook cod. 3 Cook the Cod Place a large non-stick pan over medium-high heat.Add 2 tsp. olive oil and cod to hot pan. Cook until browned and cod reaches a minimum internal temperature of 145 degrees, 2-4 minutes per side.Transfer cod to a plate. Rest 5 minutes, then break cod into large pieces.Reserve pan; no need to wipe clean. 4 Start the Chowder Return pan used to sear cod to medium heat with 1 Tbsp. olive oil. Add potatoes, celery, shallot, and remaining garlic to hot pan and cook until aromatic, 1 minute.Add white wine and 2 cups water, increase heat to medium-high, and bring to a low boil. Cover and cook 5 minutes.Remove cover and cook until potatoes are tender, 5-7 minutes. 5 Finish the Chowder Add cream, corn, 1/4 tsp. salt, and 1/4 tsp. pepper to pan. Return to a boil and cook until slightly thickened, 2-3 minutes.Remove from burner and stir in cod.Plate dish as pictured on front of card, garnishing with croutons and remaining parsley. 4 slices bacon
3 medium carrots, each cut lengthwise in half, then crosswise into slices
3 celery ribs, diced (or 1 large fennel bulb, diced)
1 medium onion, diced
3 medium potatoes, peeled and cut into1/2-inch cubes (1 pound)
3 (8 ounce) bottles clam juice
1 (14 1/2 ounce) can chicken broth (or 1 3/4 cups homemade chicken broth)
1 bay leaf
1 (1 lb) cod fish fillet, cut into 1 1/2-inch pieces
1 cup half-and-half or 1 cup light cream

Steps:

  • In a 5-quart Dutch oven or saucepot, cook bacon over medium heat until browned. Remove bacon to paper towels to drain; crumble.
  • Discard all but 2 tablespoons bacon fat in Dutch oven. Add carrots, celery (or fennel), and onion, and cook until lightly browned, 6 to 8 minutes, stirring occasionally. Add potatoes, clam juice, chicken broth, and bay leaf; heat to boiling. Reduce heat to low; cover and simmer 10 to 15 minutes until vegetables are tender.
  • Add cod; cook, covered, 2 to 5 minutes until fish flakes easily when tested with a fork. Carefully stir in half-and-half; heat through. Discard bay leaf. Serve soup with crumbled bacon.

The following recipe is courtesy Emeril Lagasse - The Essence of Emeril. I have been making my own fish chowder in this same manner for over 40 years and I can only add this is an excellent recipe, highly rated and reminiscent of the way in which it is made in New England but then Emeril does hale from Fall River, Massachusetts. I hope you will enjoy this comforting chowdah. NOTE: Cook time and prep times are approximate.

4 ounces bacon, diced
1 large onion, finely chopped
1 leek, white and light green parts only, minced (optional)
2 teaspoons garlic, minced
4 tablespoons all-purpose flour
1 1/2 teaspoons fresh thyme leaves
1 cup dry white wine
6 cups fish stock or 6 cups bottled clam juice
1 bay leaf
1 1/2 lbs baking potatoes, peeled and cut into 1/2-inch cubes (about 4 cups or 2 large potatoes)
2 cups milk
1 cup heavy cream
salt
white pepper, freshly ground
1 1/2 lbs cod fish fillets, skinless and boneless, cut into 1-inch cubes
1 tablespoon fresh parsley leaves, finely chopped, for garnish
butter, for garnishing bowls

Steps:

  • In a large saucepan over high heat, cook the bacon until the fat has rendered and the bacon is beginning to caramelize around the edges, 3 to 4 minutes.
  • Add the onion and leek and cook, stirring frequently, until the vegetables are tender, 4 to 6 minutes.
  • Add the garlic and cook for 1minute, stirring.
  • Add the flour and thyme and cook, stirring, until the flour is very light golden, about 2 minutes.
  • Add the white wine and whisk to combine.
  • Add the fish broth, bay leaf and potatoes and bring to a boil.
  • Reduce the heat to a simmer and cook, stirring occasionally, until the potatoes are very tender, 20 to 30 minutes.
  • Add the milk and cream and cook for 10 minutes.
  • Season, to taste, with salt and pepper.
  • Add the cod, return the soup to a simmer, and cook until the fish is just cooked through, 1 to 2 minutes.
  • Serve immediately in shallow bowls, each garnished with a pinch of parsley and a pat of butter.
