NELDA'S SAUSAGE AND RICE DRESSING
This is an original recipe that I developed 15 years ago, and I can't count how many times I've used it since. Don't wait until Thanksgiving to try it.

- Cook rice mix according to package directions; set aside. , In a Dutch oven, saute the onion and celery in butter until tender. Stir in the remaining ingredients. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 45 minutes or until a thermometer reads 160°.

ROAST TURKEY WITH WILD RICE, SAUSAGE, AND APPLE STUFFING

Steps:
- For the stuffing: Combine the wild rice, water, and 1/2 teaspoon of the salt in a medium saucepan and bring to a boil. Reduce heat to low, cover, and simmer until the rice is tender and just bursting, about 30 minutes. (Times may very depending on the brand of rice used.) Drain and set aside.
- Adjust an oven rack to lowest position and remove other racks. Preheat to 325 degrees F.
- Melt the butter in a large skillet over medium-high heat. Add the onion, apple, celery, garlic, thyme, mace, remaining 1 teaspoon salt and pepper, to taste. Cook until the vegetables soften, about 5 minutes. Stir in sausage, breaking it up with a wooden spoon and cook until it loses most of its rosy color, but not so much that it's dry, about 5 minutes more. Stir in the cooked wild rice, pecans, and parsley into the vegetable mixture. (This can be made the day before.)
- For the turkey: Remove turkey parts from neck and breast cavities and reserve for other uses, if desired. Dry bird well with paper towels, inside and out. Melt the butter together with the poultry seasoning. Salt and pepper inside the bird cavity. Loosely add the stuffing to the cavity and set the bird on a rack in a roasting pan, breast-side up, and brush generously with the seasoned butter, then season with salt and pepper. Tent the top of the bird with foil.
- Roast the turkey for about 2 hours undisturbed. Remove and discard the foil. Baste with the remaining butter. Increase oven temperature to 425 degrees F and continue to roast until an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the thigh, about 20 to 25 minutes more. Remove turkey from oven and tent with foil for 15 minutes before carving.
SAUSAGE AND PECAN RICE STUFFING
This is great. It is my own creation because I don't care for traditonal thanksgiving stuffing. I have been making it for about 5 or 6 years now. I've served it every Thanksgiving to large groups of people and everyone loves it! Even my brother-in-law who doesn't like pecans. It tastes great reheated for breakfast or lunch I've even used it to stuff the turkey!!

Steps:
- Crumble sausage brown over medium high heat until no longer pink inside.
- Drain saving 2 Tablespoons of drippings and all of the brown bits.
- Set sausage aside.
- To drippings add chopped onion saute for about a minute.
- Add pecans and saute for about 1 minute more.
- Add half of the maple syrup and half of the apple juice.
- Cook until reduce stirring often to keep from buning.
- Set aside.
- In same dish cook rice according to package instuctions.
- After rice is done chop sausage VERY fine and stir sausage,pecans,onion,apple juice and maple syrup into rice.
- Cook until all of liquid is gone stirring often to prevent burning.
- Add a dash of cayenne pepper if desired.

NELDA'S MACARONI AND CHEESE
This is an easy mac & cheese that my friend Nelda gave me. My boys love it and it can easily be doubled to take to church suppers, etc. I'm posting it here before I lose the piece of paper I copied it down on!

Steps:
- Start cooking the macaroni.
- In a medium saucepan on medium high heat, melt the butter, then whisk the flour in and, still stirring, let it cook for a few minutes until it starts to thicken. (You may have to turn down the heat a little to keep it from scorching.).
- Start whisking the milk into the butter/flour mixture till combined.
- Still whisking, add in the Velveeta and the sharp cheddar. Keep stirring until all the cheese has melted and the mixture is smooth. Remove from heat. Stir in salt and white pepper to taste. You can also add a few shakes of ground mustard if you like.
- By this time the macaroni should be cooked. Drain the macaroni, put it in whatever dish you're using, then pour the cheese sauce over it and mix.

RICE AND SAUSAGE STUFFING

Steps:
- Put the sausage meat and onion in a saucepan, and cook, stirring to break up lumps, until the meat loses its raw look and the onion is wilted. Add the garlic, celery, green peppers and mushrooms, and cook, stirring occasionally, about five minutes.
- Drain the sausage mixture, if desired, and return it to the saucepan. Add the rosemary and stir to blend. Add the rice, salt and pepper, and stir. Let cool briefly.

MINNESOTA WILD RICE DRESSING
This recipe was given to me by a friend, and it has been a family tradition ever since. No need to stuff the turkey. This dressing can be made the day before Thanksgiving and heated in the microwave 10 minutes before serving!

- Prepare instant long grain and wild rice according to package directions. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Place ground pork sausage and ground sage pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside. Cook and stir celery, onion, mushrooms, and water chestnuts in the skillet until browned and tender. Season with garlic powder.
- Mix prepared rice, sausage, celery mixture, and eggs in the prepared baking dish. Bake 15 minutes in the preheated oven, until lightly browned.

- In a 2-quart saucepan, bring 1 3/4 cups water to a boil. Add salt; stir in wild-rice blend (do not add seasoning packet). Return to a boil; reduce heat to a simmer. Cover; cook until rice has absorbed all liquid, 25 to 35 minutes.
- Meanwhile, in a 10-inch nonstick skillet over medium-high heat, cook sausage until browned, breaking it up into small pieces with a wooden spoon, 8 to 10 minutes. Add garlic; cook, stirring, until fragrant, 1 to 2 minutes.
- In a large bowl, stir together rice, sausage, parsley, and Parmesan. Season with salt and pepper.
