2 lbs ground beef, cooked and drained
1 (1 1/4 ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise or 4 ounces light sour cream
8 ounces cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix (I would find something else for this to many carbs!!!! )
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
  • In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
  • Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 inches greased casserole dish.
  • Saute remaining onions and bell peppers until slightly tender.
  • On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
  • Bake for 30-40 minutes or until edges of dough are lightly browned.

2 pounds ground beef (browned and drained)
1 ounce packet taco seasoning plus water listed on the back or my homemade taco seasoning
16 ounce can large biscuits
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces cheddar cheese (shredded and divided)
1 medium onion (halved and sliced)
2 medium tomatoes (sliced)
1 medium red bell pepper (halved and sliced)
4 ounces canned sliced Jalapeno peppers

Steps:

  • Preheat oven to 350 F and place your oven rack in the center. Spray a 13x9 glass baking dish.
  • Place biscuits in pan in a single layer and press into the pen, joining them together, pressing the dough halfway up the sides of the pan. Place pan on a baking sheet and bake dough in preheated oven for 15-25 minutes; checking every few minutes after 15. The dough should be very light brown where the edges are just starting to get color. Remove from oven and set aside, leave oven on.
  • While biscuits are baking, combine the browned ground beef with the taco seasoning and water, and cook according to packet instructions. Transfer cooked taco meat to a bowl and set aside. Wipe out pan.
  • In a separate bowl, combine sour cream, mayonnaise, half of the cheddar cheese, and half of onions. Stir well and set aside.
  • Saute remaining onions and bell peppers on the taco meat pan until slightly tender.
  • On top of baked biscuit crust, layer ingredients in the following order: taco meat, tomato slices, bell pepper and onion mixture, Jalapeno peppers, sour cream mixture and sprinkle with remaining shredded cheese. Bake uncovered for 30-40 minutes or until edges of dough are lightly browned and cheese is melted.

¾ cup water
½ cup sour cream
½ cup light mayonnaise
1 cup shredded cheddar cheese (divided)

2 cups Bisquick biscuit mix
1 cup water
1 green bell pepper (diced)
2 roma tomatoes (diced)
4 ounces diced green chilies (1 can )

Steps:

  • Preheat oven to 325 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • Brown ground beef until no longer pink, drain grease. Then add taco seasoning and water and let simmer for 3-4 minutes.
  • In a medium bowl mix sour cream, mayo, half of the cheese, and half of the onion together and set aside.
  • In another bowl, mix together biscuit mix and water to make a soft dough. Press dough into the bottom and 1/2" up the sides of greased 9 x 13 inch pan.
  • Saute remaining onions and green peppers until barely tender.
  • On top of the biscuit, layer the remaining ingredients in this order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
  • Bake for 30-35 minutes or until edges are slightly browned.

2 pounds ground beef, browned, crumbled and drained
1 1-oz. packet taco seasoning
¾ cups water
1 small onion, sliced thin in about 1 inch pieces
1 red bell pepper, sliced thin in about 1 inch pieces
2 ¼ cups Bisquick mix
⅔ cup water
½ cup mayonnaise
½ cup sour cream
8 ounces sharp cheddar cheese, shredded and divided
2 Roma tomatoes, sliced thin
1 4-oz. can green chiles

Steps:

  • Preheat oven to 325 degrees F. Lightly spray a 9x13-inch baking dish with non-stick cooking spray.
  • In a 12-inch skillet brown the ground beef until thoroughly cooked, then drain and return to the skillet. Add ¾ cup water, the taco seasoning packet and bring to a boil. Add the onion and the peppers. Turn down the heat and simmer for three to five minutes, or until the onions and peppers begin to soften. Set aside
  • In a small bowl mix together the biscuit mix and ⅔ cup water to make a soft dough. Press the dough into the bottom and up the sides about ½ inch in the prepared baking dish. The dough was a little sticky so I used parchment paper to press it out on the bottom, and I used a spatula to bring it up the sides.
  • In a small bowl mix together the mayonnaise, the sour cream and half the cheese. Set aside.
  • Spread the ground beef mixture evenly over the biscuit layer. Evenly layer the sliced tomatoes over ground beef mixture. Evenly layer the green chilies over the tomatoes. Evenly spread the sour cream mixture over the green chilies. Top with remaining cheese.
  • Bake for 30 to 35 minutes or until edges are lightly browned.

1 pound ground beef
1 packet taco seasoning (or 2 tablespoons homemade)
1/4 cup water
1/2 yellow onion (diced)
1 can Rotel (drained (20 ounces))
1 can Mexi Corn (drained (7 ounces))
3 cups Bisquick
1 cup water
1/2 cup mayonnaise
8 ounces cream cheese (softened)
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1 1/2 cup mozzarella
1 cup sharp cheese

Steps:

  • Preheat the oven to 350 degrees. Then grease your 9x13 pan and set it aside.
  • Start by cooking your ground beef in a skillet on the stove. Toss in the diced onions to cook with the meat.
  • Once done drain off the grease, and then add the taco seasoning and water. Stir to coat all the meat in the taco seasoning.
  • Next, add in the drained corn and Rotel and mix well. Leave on simmer stirring occasionally.
  • In a bowl you will add your Bisquick and the cup of water. Mix well and this will be a thicker texture. Pour into the 9x13 pan spreading it out evenly.
  • Top with the ground beef mixture, spreading evenly.
  • In a stand mixer or with a hand mixer add the softened cream cheese, mayonnaise, garlic salt, and onion powder. Mix till creamy and pour on top of the meat.
  • Top with both blends of cheese.
  • Bake for 35-40 minutes or until the cheese is melted and the top has a slight golden brown color.
  • Once the John Wayne casserole is done, you can allow to cool for about 5 minutes, and then slice and serve!

1 16-ounce can large biscuits, uncooked
2 lbs ground beef, 85% lean
1 1-ounce ounce packet taco seasoning
1 yellow onion, halved and sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 can diced tomatoes
1 cup sour cream
8 ounces shredded mild cheddar, divided
1 4-ounce can diced jalapeños

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Spray a large baking dish generously with cooking spray.
  • Place the biscuits in a single layer in the baking dish, pressing them together to create one layer of dough.
  • Transfer to the oven and bake until golden, about 12 minutes.
  • While the biscuits bake, add 1 tablespoon of oil to a large heavy-duty skillet over medium heat. When the oil shimmers, add the ground beef and cook, stirring occasionally until no longer pink, about 10 minutes.
  • Drain most of the excess fat from the skillet. Add the taco seasoning, water, and salt to taste. Continue to cook, stirring occasionally, until the water evaporates, 3 to 4 minutes. Transfer to a bowl and set aside.
  • Add the remaining 1 tablespoon of oil to the skillet. When the oil shimmers, add the onions, bell peppers, and salt to taste. Cook over medium heat, stirring occasionally until tender, about 10 minutes.
  • Add the tomatoes and continue cooking, stirring occasionally, until the tomatoes are warmed through, about 3 minutes. Set aside.
  • Combine the sour cream, half the cheddar, and the jalapeños in a medium bowl.
  • Layer the ingredients evenly on top of the baked biscuit crust in this order; ground beef, onion-pepper-tomato mixture, sour cream-cheddar mixture, then top with the remaining cheese.
  • For two layers, divide the mixtures in half, layer twice as directed above, leaving the cheese for the top layer only.
  • Bake until the cheese is bubbling and beginning to brown slightly, about 20 minutes.
  • Remove from the oven, let sit 5 minutes, and serve.

2 tablespoons taco seasoning
¾ cup water
½ cup sour cream
½ cup mayonnaise
1 cup shredded cheddar cheese divided
1 onion finely chopped and divided
2 cups Homemade Bisquick Mix
1 cup water
1 green pepper diced
2 tomatoes diced
4 ounces diced green chilies

Steps:

  • Preheat your oven to 325 degrees Fahrenheit.
  • Take out a 9x13 casserole dish and set aside. Grease it lightly with cooking spray.
  • Brown ground beef until no longer pink and drain.
  • Add in my homemade taco seasoning, mixed with some warm water and let simmer for 3-4 minutes (to thicken)
  • In a medium sized bowl mix in the sour cream, mayonnaise, one half of the cheese, and half of the finely chopped onion. Set aside.
  • In a new bowl, mix together my homemade biscuit mix and water until it forms a dough.
  • Press this newly formed dough into the greased 9 x 13 inch pan, making sure it goes at least half way up the sides of the dish.
  • Cook together the remaining onions and green peppers until tender.
  • Layer the remaining ingredients into the 9x13 on top of the dough in the following order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
  • Bake for 30-35 minutes or until edges are slightly browned.

1 medium yellow onion
3 TBS homemade taco seasoning or 1 pkt store bought
1/4 cup beef broth or water
2 (10oz) cans rotel tomatoes
1 (14.5) oz canned corn, drained
3 cups bisquick baking mix (I have a recipe on my page for homemade bisquick mix
1 cup water
1 (8oz) pkg cream cheese, softened
1/2 cup mayonaisse
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp salt
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
  • In a large skillet over medium high heat add ground beef and onion. Cook until ground beef is cooked through and no longer pink and the onions are softened. Drain any excess grease.
  • Add in taco seasoning and beef broth. Stir and let simmer for 5 minutes.
  • Add in rotel tomatoes and corn. Stir and lower heat to low. Let simmer.
  • In medium bowl whisk together bisquick and water to form a loose dough.
  • Place biscuit dough into bottom of prepared baking dish and spread out evenly.
  • Pour the meat mixture all over the biscuit dough evenly.
  • In a medium bowl blend together using an electric hand mixer the cream cheese, mayo, garlic powder, onion powder and salt. Dollop cheese mixture all over the meat mixture. spread evenly.
  • Sprinkle the cheddar cheese to cover the cheese mixture.
  • Bake for 30 - 35 minutes in preheated oven. Casserole should be golden brown on top, mixtures heated through and biscuit cooked through. Cool for 5 minutes before serving. Enjoy.
