EASY RUM CAKE
This is an easy recipe for a rum-soaked cake filled with walnuts and a rum glaze.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
- Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
- Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
- To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.

ALMOST TORTUGA RUM CAKE
Next best to the original! On our visit to the Caribbean, we brought home the best Rum Cake I've ever had.... in fact it's the very best of all cakes I've ever had!!! I then thought I'd send for some to be shipped to us and found the price to be $35 for the med. size ( I paid $18 on the Island) So my search for the recipe began! You can not purchase Tortuga Rum ANYWHERE except in the Caribbean - Whaler's Vanille Rum should be a close match. This next best copy-cat comes from Newsgroup Rec.food.recipes.

- Basic Cake Mix: In a large mixing bowl, combine basic cake mix ingredients.
- On low speed combine ingredients until the mix is the consistency of fine gravel, and all particles are about the same size.
- This mix may be contained and stored for up to 3 months in the refrigerator.
- For the Cake:.
- Preheat oven to 325 degrees.
- Spray a large Bundt pan (12 cup) with nonstick cooking spray.
- Sprinkle the chopped walnuts on the bottom.
- Place Basic Cake Mix, pudding mix, milk, eggs, rum, oil, and vanilla extract in a large bowl and combine on medium speed with electric mixer for 2 to 3 minutes, scrape down the bowl halfway through.
- Batter should be very smooth.
- Pour into Bundt pan.
- Bake for about 55 minutes- until fully golden and tester comes out clean and cake springs back.
- Remove from oven and place on a cooling rack while making the soaking glaze.
- Rum Soaking Glaze:.
- Combine butter, water and sugar in a small saucepan.
- Bring to a boil carefully as mixture boils over very easily.
- Reduce to a simmer and cook until sugar is dissolved and syrup is well combined and a little thicker.
- Remove from the heat and add the rum, mix to combine.
- While cake is still cooling, pour some of the hot syrup on top of the cake, allowing it time to soak in (this may take a few minutes as there will be a lot of syrup) continue to add syrup until all of the syrup is added.
- Allow cake to cool completerly in pan before turning out onto serving platter.
- This cake is delicate, so once it is turned out, it can not be moved around easily.
- Can be eaten when fully cool, but even better the next day!
TROPICAL RUM CAKE
Rum cake with a tropical twist prepared with spiced rum, pineapple, maraschino cherries, coconut, banana cream pudding mix and nutmeg.

- Preheat your oven to 325 degrees F.
- Place grapes and maraschino cherries in a bowl and pour in 1 cup of spiced rum. Stir to coat, cover and refrigerate.
- Spray a bundt pan generously with cooking spray. Place pineapple slice halves in ridges of bundt pan evenly and evenly distribute cherries around pineapple slice halves.
- Sprinkle evenly with pecans.
- In a large bowl, mix together the cake mix, pudding mix, nutmeg, eggs, water, vegetable oil and rum with a mixer on medium speed until smooth. Add coconut flakes and stir until combined.
- Pour over pineapple, cherry and nut mixture in bundt pan.
- Bake for 50-60 minutes, or until toothpick inserted is removed clean. Place on a baking rack to cool.
- While cake is cooling, prepare the rum glaze. Melt butter in a small saucepan over medium heat. Add sugar, then add water. Stir to combine. Increase heat to high and boil for 5 minutes, stirring frequently.
- Remove from heat, slowly add rum (exercise caution when adding rum, mixture will bubble) and stir well to combine.
- Once cake has cooled, invert onto a serving plate. Using a skewer or toothpick, pierce holes throughout the cake. Drizzle glaze over top and sides of cake, allowing it to absorb the glaze. Garnish with the marinated cherries and grapes.
TROPICAL BEACH BUM CAKE

- Prepare both boxes of vanilla pudding according to the package directions, using an electric mixer. Blend the cream cheese into the pudding, mixing thoroughly to remove any lumps. Fold the whipped cream into the cream cheese-pudding mixture.
- Spread a third of the graham cracker crumbs into an even layer in a low-sided clear bowl. Pour half of the pudding over the crumbs and spread until it reaches the sides of the bowl using an offset spatula. Repeat this process once, setting the remaining third of the graham cracker crumbs aside. Cover with plastic wrap pressed directly against the surface of the pudding and chill in the refrigerator for at least 2 hours.
- Remove and discard the plastic wrap. Following the edge of the bowl, create a 1 1/2-inch border of blue sparkle gel around the edge of of the pudding. Use a small offset spatula to gently spread the blue sparkle gel, creating the look and texture of ocean waves. Cover the remaining exposed pudding by piling the reserved graham cracker crumbs on top, mounding in the center, to resemble an island in the ocean.
- Cut the sour candy belts into small rectangles to resemble beach towels and place them around the cake with the bear crackers on top of each one. Place a few bear crackers inside peach candy rings (to look like inner tubes) and place them in the blue sparkle gel so that they appear to be bobbing in the water.
- To make the palm trees: Insert a mint stem into each wafer cookie, pushing down until the leaves meet the top of the cookie. Gently press into the center of the graham cracker crumb island.
- To make the candy crab: Use scissors to snip a small triangle out of the rounded side of a cherry slice, positioning it close to the flat side, to look like a claw. Snip a small notch out of the opposite side along the curve, to fashion the arm that the claw is attached to. Repeat this process with a second cherry slice. Insert a toothpick lengthwise into each arm and set aside. Prepare the crab body by holding the rounded sides of 2 cherry slices together back to back. Secure together using 2 toothpicks, being sure to push the toothpicks deep enough so they are only exposed on top. To make the eyes, use a dab of blue sparkle gel to attach an eyeball to the bottom of each gumdrop. Secure the gumdrops on the toothpicks sticking out of the crab body. Push the claw toothpicks into the sides of the crab body. Bury the bottom half of the crab body in the graham cracker crumb sand.
- Sprinkle the island with sanding sugars where the ocean meets the graham cracker crumbs. Refrigerate until ready to serve.
TROPICAL DREAM CAKE
Well, you'd better kick off your shoes, grab a straw hat, your sunglasses and a Mai Tai with the frilly toothpick because you'll be off to the islands, mon! The name tells all! Wonderful cake for outdoors get-togethers, pool parties, pot lucks, and everything in-between. Rich with pineapple and a kiss of rum, this is a great cake. Decorate it with coconut, cherries, (frilly toothpicks) or anything else you can think of. I'd suggest a cream cheese frosting for this, as well as coconut.I have dyed the coconut to pastel colors for different occasions, holidays, etc. and it looks so pretty! If using frosting, make sure that the cake has been cooled to room temperature.

- Grease and flour 3 9-inch cake pans.
- In a large bowl, cream sugar and margarine until fluffy. Add eggs, one at a time, beating after each adition.
- In another bowl, mix flour, soda and salt together. Add flavorings to buttermilk. Add flour mixture to butter mixture, alternately with buttermilk, ending with flour. Stir in pineapple and coconut.
- Pour into prepared cake pans and bake for 25 minutes or until toothpick inserted into center comes out clean.
TROPICAL RUM CAKE
My hubby came up with this variation of our rum cake recipe. Not big on pineapple or mango? Just use white rum and a yellow cake mix. Just as delish!

- Preheat oven to 325 degrees. Blend the first 6 ingredients then beat on high for 6 mins.
- Pour batter into a non stick Bundt Pan (I still spray lightly with Baker's Joy before I add batter)
- Bake in a pre-heated oven on middle rack for 40 to 45 minutes. Top should be golden brown. Remove from oven.
- While cake is still hot add topping ingredients to a small saucepan on a med heat. Bring to a boil and let rapidly boil for a couple minutes, while stirring. Watch carefully so it doesn't boil over. Take a large fork (with 2 tines) and poke holes in still hot cake. Slowly pour or spoon topping over entire hot cake and leave in bundt pan until all the liquid is absorbed. Then turn cake upside down on serving plate. Sprinkle with powdered sugar or decorate with fresh fruit. Very rich, so easily cut into 16 servings. Even better if cake is still a little warm. A crown pleaser for sure. (make sure everyone knows there is alcohol in cake in case of sensitivites) Enjoy!

- Position a rack in the middle of the oven and preheat to 350°F.
- Make the glaze and pineapples:.
- In a small saucepan over moderate heat, combine the brown sugar and 1 cup rum, and bring to a simmer. Continue simmering, stirring occasionally, until reduced by about 1/3. Whisk in the butter. Add the pineapple slices, gently stirring to coat them in the glaze, then let them sit for about 3 minutes. Transfer the pineapple slices to the bottom of a 9-inch square cake pan, arranging them to cover the bottom. Save the rum glaze for serving.
- Make the cake:.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on high until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat on medium until fully incorporated. Add the vanilla and rum, and beat for 30 seconds. Fold in the flour and salt. Scrape the batter (it will be thick) over the pineapples in the pan. Sprinkle the pecans over the batter and bake until a tester inserted in the center comes out clean, about 1 hour and 10 minutes. Let the cake cool on a rack for 15 minutes then flip it onto a serving plate so that the pineapples are on top.

- Grease and lightly flour eight 1-cup fluted tube pans or six 4-1/2x2-1/2x1-1/2-inch individual loaf pans and set pans aside.
- In a medium bowl combine flour, baking powder, and baking soda; set aside.
- In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds, add brown sugar; beat until combined.
- Add eggs, one at a time, beating on medium speed until combined (The batter may appear curdled).
- Combine 1/4 cup rum or pineapple juice, 1/4 cup pineapple juice, the corn syrup, ginger, and vanilla.
- Add flour mixture and rum mixture alternately to butter mixture, beating on low speed after each addition just until combined.
- Fold in fruit bits and nuts.
- Spread batter in prepared pan.
- Bake in a 325 degree oven for 20 to 25 minutes for fluted tube pans or 30 to 35 minutes for loaf pans or until a toothpick inserted into centers comes out clean.
- Cool cakes in pans on wire racks for 10 minutes. Remove from pans; cool at least 1 hour on racks.
- Poke holes in cakes using a wooden toothpick or bamboo skewer.
- Soak eight or six 8-inch-square pieces of double thickness 100-percent cotton cheesecloth with the 1/3 cup rum or pineapple juice and wrap each cake in rum- or juice-soaked cheesecloth.
- Wrap each cake tightly in foil or seal in a plastic bag.
- Chill in refrigerator for 24 hours.
- Remove foil or remove cakes from bags; drizzle with 1/4 cup rum or pineapple juice. Rewrap with foil or return to plastic bags and refrigerate at least 24 hours.
- Remove cheesecloth before serving.
- If desired, sprinkle with sifted powdered sugar. Makes 6 or 8 cakes (24 servings).
- Make-Ahead Tip: Prepare Tropical Fruit Cake as directed through until the 24 hr chill, except refrigerate up to 5 days. (Or prepare Tropical Fruit Cakes as directed through up to 24 hr chill, except do not sprinkle with powdered sugar. Place in self-sealing freezer bags. Seal, label, and freeze up to 3 months.)
- To serve, thaw frozen cakes in freezer bags in the refrigerator overnight. Serve as directed.
