Steps:
- Mince garlic and mask to a paste with salt using a heavy knife.
- Transfer to a food processor along with the remaining ingredients and blend.
- Roll into a 6-inch log in a sheet of plastic wrap, tisting the ends closed; Chill, covered, at least 2 hours for flavors to blend.
- Bring to room temperature before using.

GARLIC BUTTER
Cooking time is chilling time. Herb butters are a nifty way to spice up any meal. I like herbed butters as a quick easy way to flavor frozen or canned veggies. Just add a dab of herbed butter and heat up the veggies. You can substitute margarine for the butter. If you choose to use dried herbs instead of fresh use 1 1/2 times the amount called for.

- Let butter soften to room temperature.
- Beat in other ingredients.
- Pack butter into molds or crocks or form balls with a melon baller.
- Chill for at least 3 hours before serving.
- Can be stored for upto 1 month in the refrigerator or 3 months in the freezer.

GARLIC BUTTER
Sometimes the basics are the best! I've used this simple recipe for years to make garlic bread, and any leftovers go great on barbequed steaks, pasta, rice or potatoes. You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste. This flavorful butter goes with so many things it would be impossible to list them all. I make up triple batches, making them into logs and freezing them. That way they are on hand at a moments notice to put on fish, slip under the skin of chicken, or melt over a New York strip steak.

- 1. In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth.
- My NOTE: I made 6 pounds of this for a buffet. This garlic butter is perfect, but not for a buffet. The butter tastes too salty to be used as a "spread". It is a recipe for topping french bread for toasting, adding to mashed potatoes, baked potatoes, etc. Many uses, and has a long shelf life. Make some to have on hand. A boost to the ordinary for sure.
- * I cut the recipe in half, subbed 1 tsp of garlic powder & 1/4 tsp salt for the garlic salt.

- If you used margarine and thought the 1 tbsp garlic salt made it way too salty so I cut down to 1 tsp the next time the next time I use margarine. Much better! I didn't have italian seasoning so I used what I had on hand - 1/4 tsp each of dried basil, oregano and thyme, and a pinch of red pepper flakes to taste.
GARLIC BUTTER NEW POTATOES
I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

- Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
- Meanwhile, melt the butter in a small skillet over medium-high heat.
- Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
- Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
- Enjoy!

GARLIC BUTTER
This is a recipe I made based on other recipes, but omitting some of the ingredients from each of the other recipes. My kids aren't fond of the butters that include the oregano, basil and rosemary etc. This makes a great garlic bread or is good served over pasta or vegetables.

This garlic butter is much better than any storebought. Vampires beware...it is a garlic lover's treat! Can easily be frozen in ice cube trays (make sure to plastic wrap the tray, or it will smell up your freezer) or ziplocks.

- Butter is ready to use right away.
- Can be stored in fridge for a couple of weeks, but if you don't use much of it, it can be frozen into desired portions.
