NANA'S BANANA BREAD
In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

Steps:
- Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
- Beat butter in a large bowl with an electric mixer until light and fluffy.
- Add granulated Sugar and brown sugar; Beat until well blended.
- Add egg, egg whites and vanilla; blend.
- Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
- In a separate bowl, combine flour, baking soda, salt and baking powder.
- Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
- Mix in the walnuts.
- Pour batter evenly into prepared 9 inch round pan (or loaf pan).
- Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

NANA'S NUT BREAD
This recipe was my grandmother's. The breads are baked in coffee cans!

Steps:
- Cream shortening with sugar. Mix in eggs. Dissolve soda in milk, and add to the creamed mixture. Stir in flour, cream of tartar, and salt. Stir in nuts.
- Pour batter into a 3 pound coffee can, or several 1 pound soup cans; fill containers 1/2 to 3/4 full.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until a tester inserted in the center of loaf comes out clean.

My Nanna Towgood has been making this loaf bread for over 40 years, and its a family favorite--moist, flavorful, and just the right amount of sweetness. You may substitute chocolate chips for the walnuts if you desire.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- In a blender, combine milk, eggs, oil, sugar, banana pieces, and vanilla extract. Process until smooth. In a large bowl, sift together all the flour, cinnamon, baking powder, baking soda, and salt. Add banana mixture to dry ingredients. Mix well. Stir in nuts. Pour batter into prepared pan.
- Bake in preheated oven for 55 to 60 minutes until golden brown, an a toothpick inserted into center of the loaf comes out clean.

- Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder and salt.
- In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
- In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
- Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
- Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.
NANA'S ZUCCHINI BANANA BREAD
Seeing all the recipes for zucchini posted lately reminded me of a Christmas and Thanksgiving favorite in my home. Nana made it when i was little and later when i had my own family I carried on the tradition. The smaller loaves are so moist and the flavor is unbelieveable. Noone would ever guess there was zucchini in the batter....

Steps:
- 1. Put bananas, zucchini, eggs, sugar,vanilla and oil in a large bowl. Mix well to blend all ingredients.
- 2. In separate bowl mix together flour, soda, salt, cinnamon and ground nuts. Add this to the large bowl and mix just until blended.
- 3. Pour mix into 5 to 7 mini loaf pans that have been sprayed with no stick cooking spray.
- 4. Bake in oven preheated to 350 degrees for about 30 to 35 minutes or until toothpick inserted in centers comes out clean. (You can also do this in large loaf pan and cook for 55 minutes to 1 hour. The smaller loaves tend to come out more moist)
- 5. Allow to cool for 10 to 15 minutes and then remove from pans.
- 6. Glaze: Mix milk and powdered sugar in small bowl till desired consistency (I like mine thick but pourable) add in enough vanilla or banana extract (optional) to taste. Drizzle over loafs. Sprinkle with additional ground nuts.
- 7. Keep one (or two or three) for yourself and share the rest with your family and friends. (I wrap mine in pretty colored cellophane and tie with ribbons for thanksgiving treats for co-workers and friends.)
NANA'S GRAPENUT BREAD
Steps:
- Soak grapenuts in buttermilk for 10 minutes.
- Add remaining ingredients to grapenut mixture.
- Place in 2 greased & floured bread pans. Let set for 30 minutes before baking.
- Bake at 350 degrees F for 30-35 minutes.

BANANA WALNUT BREAD

- Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
- In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
- With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

This recipe was featured in an email that I received this morning from Splenda. "A tasty and healthy banana bread. This bread has potassium and fiber from the bananas, omega three fatty acids from the walnuts, and no cholesterol!"

- Preheat oven to 350 degrees F. Spray a 9X5-inch loaf pan with nonstick cooking spray. Set aside.
- Blend the dry ingredients in a large mixing bowl. Set aside.
- Add oil, buttermilk and vanilla to the mashed bananas. Mix well. Pour banana mixture into dry ingredients. Stir until just mixed.
- Add chopped walnuts. Stir until just mixed.
- Pour batter into prepared pan. Bake 45-55 minutes or until rich brown and the center is set.
- Note: Black walnuts can be used to create a uniquely flavored banana bread.
