NANA'S FAVORITE DEVIL'S FOOD CAKE FROM REDDIT
A very popular and easy chocolate cake with a super smooth frosting.

Steps:
- Preheat oven to 350 F. Grease and flour two 9 inch round pans or one 13x9 inch pan. If halving the recipe, use two 6 inch round pans.
- In a large mixing bowl, whisk together flour, salt, baking soda, baking powder and sugar.
- Whisk together the cocoa powder and the hot coffee and let it cool.
- Add the cocoa mixture to the bowl with the dry ingredients, then stir in the oil, milk, eggs and vanilla.
- Pour the batter into the pans.
- Bake at 350 for 30 to 35 minutes. (or until done). Alternatively, you can bake at 375 for 27 minutes or until done. I prefer the lower and slightly longer time for cakes.
NANA'S HOMEMADE CHOCOLATE PUDDING
A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

Steps:
- Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.
- Heat saucepan over medium heat. Pour milk in slowly, whisking constantly until incorporated. Cook, stirring often with a metal spoon, until pudding is noticeably thicker and clings to the spoon, about 10 minutes.
- Remove from heat and stir in vanilla extract. Divide between 4 small bowls and serve immediately, or chill in the refrigerator for at least 2 hours.

- Preheat oven to 375°. Line 12 muffin cups with paper or foil liners. Mix cocoa and boiling water until smooth; cool completely., Beat butter and sugar until blended. Beat in eggs, 1 at a time. In another bowl, whisk together flour, baking powder and salt; add to butter mixture alternately with applesauce, beating well after each addition. Beat in cocoa mixture., Fill prepared muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool 10 minutes before removing to a wire rack to cool completely., Beat confectioners' sugar, butter, cream and extract until smooth. If desired, tint frosting green with food coloring. Stir in chocolate chips. Spread over cupcakes. If desired, top with candies.

NANA'S NEVER FAIL CHOCOLATE ICING
This is my Nana's recipe and my whole family loves it. It's simple to make but sooo good! It has a fudge-like taste and is wonderful on cake.

- Combine all ingredients except vanilla in a saucepan. Stir over medium heat until sugar dissolves. When mixture comes to a rapid boil, boil one minute.

- Make cake layers:
- Preheat oven to 350°F. Butter 2 (8- by 2-inch) round cake pans and dust with flour, knocking out excess.
- Stir together milk and vinegar and set aside to "sour" (mixture will curdle). Melt chocolate and butter with water in a large metal bowl set over a saucepan of simmering water, whisking until smooth. Cool slightly. Sift together flour, baking soda, and salt. Beat sugar into chocolate mixture with an electric mixer. Add eggs, 1 at a time, beating well after each addition, then beat in vanilla. Add flour mixture and beat on low speed just until combined. Add soured milk and beat on high speed 2 minutes.
- Divide batter evenly between cake pans. Bake in middle of oven until tops of layers spring back when touched lightly and edges have just started to pull away from sides of pans, about 35 minutes. Cool layers in pans on racks 5 minutes. Run a thin knife around edges of pans, then invert layers onto racks to cool completely.
- Make frosting:
- Bring sugar and cream to a boil in a heavy saucepan, stirring constantly, and simmer 10 minutes. Remove from heat and add chocolate, butter, and vanilla, stirring until smooth. Transfer to a bowl and cool to room temperature, stirring occasionally. Chill frosting, stirring frequently, until thickened and spreadable.
- Assemble cake:
- Brush any loose crumbs from layers and put 1 layer upside down on a serving plate. Spread with about 1 cup frosting. Place other layer on top, right side up. Frost top and sides of cake with remaining frosting.
NANA'S EASY NO EGG CHOCOLATE CAKE
This recipe came from a collection of recipes from members of The American Rose Society given to me by my mother-in-law in the late 1960's. I started making it for my young family because I was looking for a cake I could make without eggs. It was so easy, so moist and they loved it. We had it for dessert about 3-4 times a month when they were growing up. When we're together, I still make it for them and my grandchildren, who refer to it as Nana's Chocolate Cake. It's been a real hit for over 40 years.

- Mix all dry ingredients together in a bowl. Make 3 holes (2small, 1 big) in the mix; put vanilla in one of the small holes, vinegar in the other, and oil in the third. Pour the water over all and beat with a fork or large spoon until all ingredients are mixed. Pour into a prepared (greased and floured) oblong pan (9 x 13). Bake in preheated oven at 350 degrees for 30-35 minute.
- Chocolate Frosting.
- Cook the first three ingredients over low heat until blended. Pour into a bowl and add the box of confectioner's sugar and vanilla. Mix well until blended completely. Spread over warm, but not hot, cake.

NANA'S CHOCOLATE CHERRY CAKE
This was one of my Nana's signature cakes...We all loved cherry cordials and received them for Christmas quite a few times! This cake was my Nana's way of giving us that same simple pleasure, but in a more healthy (???) way! YUM-O!!!

Steps:
- Mix cake mix, eggs and flavorings until well-blended. (I use a hand mixer and mix for at least 2 minutes.).
- Fold in cherry pie filling (gently).
- Spread batter into a 8" x 12" pan that has been greased and floured.
- Bake at 350 degrees until done. (40-50 minutes, according to the cake mix package.).
- Frost with dark chocolate frosting.
