Steps:
- Stir together sugar, butter, brandy, and extracts in a large bowl, then stir in almonds and eggs. Stir in flour, baking powder, and salt until just combined.
- Chill dough, covered, 30 minutes.
- Preheat oven to 350°F with rack in middle.
- Using moistened hands, halve dough and form 2 (16-by 2-inch) loaves on an ungreased large baking sheet.
- Bake until pale golden, about 30 minutes. Carefully transfer loaves to a rack and cool 15 minutes.
- Cut loaves into 3/4-inch slices with a serrated knife.
- Arrange biscotti, with a cut side down, on a clean baking sheet and bake until golden, 20 to 25 minutes. Transfer to rack to cool completely.
ANISE BISCOTTI
Delicious, with a hint of licorice flavor. You can store these in an airtight container for over a month.

- Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper or foil.
- In large mixing bowl, beat sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Combine brandy, anise extract and vanilla in a small bowl or measuring cup. In a medium bowl, combine flour, baking powder and salt. Alternately add dry ingredients and brandy mixture to the butter mixture, beginning and ending with the dry ingredients. Stir in the almonds and aniseed.
- Drop dough by spoonfuls onto prepared sheet, forming two 2 x 13-inch long strips on each sheet. Smooth dough into logs with moistened fingertips.
- Bake about30 to 35 minutes or until golden and firm to the touch. Place cookie sheets on racks and cool completely. Reduce the oven temperature to 300 degrees F.
- Cut cooled logs on the diagonal into 3/4-inch thick slices using a serrated knife. Place slices on cookie sheets.
- Bake for about 20 minutes, turning after 10 minutes, until dry and slightly brown. Remove to a rack and cool.

NONNA'S BISCOTTI
A few years ago, I copied down my Italian grandmother's recipes. She had collected them all in a box, in preparation for moving to a retirement community. Unfortunately, during the move, she lost the box, and now I'm the sole recipient of her culinary heritage. She was a fine cook, and a wonderful baker. She died a few months ago.

Steps:
- Preheat oven to 350 degrees.
- Sift together flour, baking powder and salt.
- Cream butter, sugar and flavoring. Beat in eggs and egg yolks, one at a time. Add the flour mixture and almonds.
- Turn out on a floured board and knead gently until smooth.
- Divide dough in half. Shape each half into a roll, 1 1/2 inch in diameter.
- Place on a lightly greased cookie sheet and bake for 30 - 35 minutes.
- Remove from oven and let cool slightly.
- Cut diagonally into slices 2/3 inch wide.
- Place back onto cookie sheet and toast in the oven for about 10 minutes for crisp cookies.

- Preheat oven to 350°F. Line 2 heavy large baking sheets with foil. Beat sugar and butter in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Mix flour, baking powder and salt in medium bowl. Combine brandy, anise extract and vanilla extract in glass measuring cup. Add dry ingredients and brandy mixture alternately to sugar mixture, beginning and ending with dry ingredients. Stir in almonds and aniseed.
- Drop dough by spoonfuls onto prepared baking sheets, forming two 2-inch-wide, 13-inch-long strips on each sheet. Moisten fingertips and smooth dough into logs. Bake until golden and firm to touch, about 40 minutes. Transfer sheets to racks and cool completely.
- Reduce oven temperature to 300°F. Transfer cooled logs to work surface. Using serrated knife, cut logs on diagonal into 3/4-inch-thick slices. Arrange slices on baking sheets.
- Bake cookies until dry and slightly brown, turning every 10 minutes, about 40 minutes. Transfer to rack; cool. (Can be made 2 weeks ahead. Store in airtight containers at room temperature.)
ANISETTE BISCOTTI
An anise flavoured biscotti that's super quick and easy to make. A great introduction to biscotti making!

Steps:
- Beat the eggs, sugar, oil, and anise extract together in a large mixing bowl.
- Combine the flour and baking powder together in a separate bowl.
- Add the flour mixture to the egg mixture a little at a time while mixing until all the flour is incorporated into a soft dough.
- Cover with food-safe plastic wrap and refrigerate for a minimum of 30 minutes.
- Heat oven to 350 and prepare a baking sheet lined with parchment paper.
- Remove dough from fridge and divide into 2 or 3 portions. Form each portion into a thick log and place onto baking tray.
- Bake for 25 minutes or just until they begin to turn a golden colour.
- Remove from the oven and as soon as you can touch the loaves, carefully transfer to a cutting board and cut them into diagonal strips.
- Place them back on the baking pan and bake for another 10 minutes.
- Remove from oven and let cool.
ANISE BISCOTTI
The name for biscotti comes from the Italian words "bis" (twice) and "cotti" (cooked). "First you bake the biscotti loaves, then you slice and toast them. Twice cooked! Twice delicious!"

- Preheat oven to 350°F.
- Beat the eggs well.
- Add sugar, oil, salt, and anise flavoring and beat well.
- Sift flour and baking powder together. Add to egg mixture.
- Grease 2 bread pans (12" X 3 1/2" X 2 1/2") and line them with waxed paper (or parchment paper) about 17" X 3 1/2 " wide. (The extra ends will provide a handle to remove the loaves later.)
- Ladle batter into prepared pans until about 1 inch deep.
- Bake at 350° for 25-35 minutes. Remove loaves from pan and slice (about 1/2 inch thick).
- Place slices on cookie sheets and return to the hot oven to toast. (DO NOT use insulated pans!) Be careful as the bottom of the cookie browns first. Turn them over and toast the other side.
- Remove when both sides are toasty colored. Let cool.
- "These are not the industrial-strength biscotti that the coffee shops sell. They are fragile and need to be handled with TLC. But, hey, the broken cookies are so good that we put them in a little bowl with milk and eat them with a spoon! And they do freeze well! Just pop them in the toaster to freshen them up. They're fabulous dipped in coffee or milk.".

- In a small bowl, beat eggs and sugar for 2 minutes or until thickened. Add oil and extracts; mix well. Combine the flour, baking powder and salt; beat into egg mixture. Beat in lemon zest and aniseed. , Divide dough in half. On a lightly floured surface, shape each portion into a 12x2-in. rectangle. Transfer to a baking sheet lined with parchment. - Preheat oven to 375 degrees F ( 190 degrees C ).
- In a large bowl, cream together butter and sugar Gradually add the vanilla and eggs while mixing. Sift together the flour and baking powder; stir into the egg mixture. For plain biscotti, do not add anything else (see Cook's Note). Stir in the anise extract and anise seed. Add walnuts if desired.
- Wet or grease your hands and shape dough out into 4 logs as long as your baking sheet will allow. Pat each one to about 3/4 inch in height, and 3 inches wide. Brush with beaten egg yolks.
- Bake in the preheated oven for 15 minutes, until golden brown. Slice logs at an angle, cutting pieces into 1/2 to 3/4-inch wide cookies. Place slices back onto the cookie sheet, standing upright, if possible; leave a gap between the slices. Return to the oven and bake until cookies are dry and lightly toasted, about 10 minutes more.

Place slices cut side down on ungreased baking sheets. , Bake at 325° for 12-16 minutes or until firm and golden brown, turning once. Remove to wire racks to cool. , In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over biscotti. Let stand until chocolate is set.
