REFRIGERATOR GARLIC DILL PICKLES
Also called "Deli Dills Refrigerator Pickles." These are the BEST dill pickles ever! You don't need to can/process these pickles, as they keep in your frig for up 9 - 12 months. This is my most-requested recipe. Everybody LOVES them.

Steps:
- Bring brine solution of water, vinegar & salt to a boil, then turn off burner.
- In an ice cream bucket, layer dill head(s), garlic chunks, onion slices and cucumbers. Small cucumbers can be thrown in whole. Larger cucumbers should be quartered.
- Pour warm (not hot) brine over the cucumbers and place a plate on top to keep the cucumbers submerged. Cover bucker & put in frig. Pickles can be eaten after 5 day. Pickles will last in frig for 9 - 12 months.
- NOTE: Other ingredients (such as hot peppers, whole black pepper corns, mustard seeds, red pepper flakes, etc. ) can be added to the ice cream bucket for a different flavor sensation.

STUFFED DILL PICKLES

Steps:
- Cut off both ends of the dill pickles to create a flat surface.
- Using a thin potato peeler or a sharp knife or Uncle Bill's Dill Pickle Corer, and core out each dill pickle. (You can save the core for another use).
- Stand the pickles on end on paper towelling and let drain until all liquid is drained, about 30 minutes. In addition, run some rolled paper towelling through the core to remove any liquid that did not drain.
- Meanwhile, in a mixing bowl, cream the cheese, add onion and garlic and mix until well blended. Add Tabasco sauce and mix well to blend.
- Using a cake decorator or a small spoon, stuff each pickle. Wrap the stuffed pickles in plastic wrap and refrigerate until cheese is firm, about 2 hours.
- Before serving, slice pickles into 3/4 inch slices and place slices on a serving plate. (Cover and refrigerate any unused pickles). These pickles are also good for lunches.
- You may also add some finely chopped Smoked Salmon to the filling, or some finely chopped black olives, or finely chopped cooked ham. Try mixing equal amounts of Cheese-Whiz and cream cheese, or use the different cream cheese that are available.

GRANDMA'S DILL PICKLES (TASTE OF HOME RECIPE)
These crispy spears have a slightly salty, tart flavor with a good balance of dill, garlic and peppers. They are already great and have only sat for 2 weeks in the brine! My family is requesting I make as many as possible!

Steps:
- In a dutch oven bring water, vinegar and salt to a boil; boil for 10 minutes.
- Pack cucumbers into quart jars within 1/2 inch of top.
- Place one dill head, two garlic cloves and two peppers in each jar.
- Ladle boiling liquid over cucumbers, leaving 1/4 inch head space.
- Place lids and screw on bands fingertip tight.
- Process for 10 minutes in a boiling water bath.

BRINED GARLIC DILL PICKLES
Dept. of Agriculture in Missouri has a fantastic Extension center with monthly newsletters about canning, gardening, etc. I collected several books on canning from them. The recipe here is posted at request.

Steps:
- Wash cucumbers in cold water then dry on rack or wipe dry.
- Place half the pickle spices, garlic and a layer of dill in a 5 gallon crock or jar.
- Fill the container with cucumbers to within 3-4 inches from top.
- Place a layer of dill and remaining spices and garlic on top of cucumbers.
- Thoroughly mix the vinegar, salt and water and pour over the cucumbers.
- Cover with a heavy plate (weigh it down with a jar of water) so that the cucumbers stay under the brine.
- Cover loosely with a towel.
- Keep pickles at room temperature and remove scum daily when it forms, (3-5 days).
- Do not stir pickles but make sure they are always covered with brine.
- If necessary make additional brine using original recipe.
- In about 3 weeks the cucumbers should be olive green and have a desirable flavor.
- Any white spots will disappear in processing.
- Strain the brine before using as it is preferred for the added flavor.
- Pack pickles firmly into clean, hot quart jars.
- Add several pieces of dill and a clove or two of garlic to each jar, then cover with boiling brine to 1/2 inch from top.
- Adjust lids and process 15 minutes in water bath, beginning the time as soon as the jars are in the actively boiling water.
- Cloudiness of brine is typical when the original brine is used as the covering liquid.

- Bring a large stockpot water to a boil. Add cucumbers, immediately remove from heat, and drain in a colander. Rinse with cold water and reserve.
- Combine pickling liquid ingredients in a medium saucepan and bring to a boil. Place cucumbers in a large container with remaining vegetables and herbs. Pour hot pickling liquid over cucumber mixture and let cool. Tap down solids until liquid rises to top. Cover with plastic wrap and let stand at room temperature 1 day. Transfer to a sealed container and refrigerate 3 days before serving. Store indefinitely.

- Cut ends off cucumbers and wash.
- Pack the cucumbers in jar with dill and garlic to taste.
- (I prefer fresh dill from my garden--usually two to four dill heads. Four garlic cloves seems to hit the happy medium mark for the whole family--the garlic flavor does get stronger as they stand though.) Stir together the warm water, vinegar and canning salt, then pour over the cucumbers.
- Place the slice of dark rye bread on top.
- Put lid on loosely.
- Set in the sun for four days.
- Take the rye bread off.
- Chill for two days and then you can use them.
GRANDMA'S DILL PICKLES

- Wash cucumbers using cloth and cold water.
- Drain, Place in large crock or pot.
- Mix 1 1/2 cups salt and 32 cups water to make 5% brine. If you need to, mix more in same proportions to cover cucumbers.
- Poor brine over cucumbers and let stand 24hrs, then drain.
- Wash and sterilize jars and lids. Keep jars in boiling hot water untill ready to use. Keep lids with seals in simmering (NOT BOILING)water untill ready to use.
- Combine Vinegar, 3/4 cups salt, sugar, and 9 cups water.
- Tie mixed pickeling spices in cheese cloth and add to vinegar, sugar, salt and water.
- Heat to boiling then discard cheese cloth.
- Pack cucumbers in clean HOT jars.
- Add 2 teaspoons mustard seed, alum, 1-2 garlic cloves, 3 heads dill or 1 tabelspoon dill seed to each jar.
- Cover with boiling water, filling jars 1/2" from top.
- Put seals and lids on, process in a canner. If you don't have a canner, you can cover the jars with BOILING water and place in your oven at 200F for about 20 minutes. The jars and liquid need to be hot in order for it to seal.

UNCLE BILL'S DILL PICKLES
I have been making this recipe for many years and have had excellent success each and every time. They stay nice and crunchy for a long time.

Steps:
- PREPARATION OF DILL CUKES THE NIGHT BEFORE.
- Remove blossom ends and stems and discard.
- Place dill cukes into a large tub or a clean laundry tub.
- Cover with cold water.
- Add 2 bags of ice cubes or 1 block of ice.
- Let chill overnight.
- BRINE.
- In a cooking pot, add water, vinegar, pickling salt and brown sugar and bring to boil.
- Boil for 2 minutes.
- Prepare 4- 1 quart wide mouth canning jars by washing well with soap and water and then rinsing well with hot water.
- Place jars upside down on the rack in the oven and heat at 325 F for about 15 minutes.
- Wash and drain dill cukes.
- Place 1 dill head and stem in the bottom of each jar.
- Stuff the jars with cukes, vertically.
- Stuff a few sliced carrots, 5 garlic cloves and 4 horseradish pieces in the voids between the cukes in each jar.
- Stuff one Jalapeno pepper into each jar.
- Place another dill head and stem on top of the cukes in each jar.
- Fill jars with hot brine to within 1/2" of top of jars.
- Make sure that none of the dill head is touching the top of the jar.
- Push the dill heads down if necessary.
- Wipe tops of jars clean.
- Prepare canning lids according to manufacturers instructions.
- Place lids on jars and screw on screw tops finger tight only.
- Prepare a canner and bring water to a boil.
- Place jars in rack with lids up and immerse in the boiling water.
- Boil or process for 10 minutes.
- Remove jars onto a dish towel and cover with another dish towel to cool.
- Jars are sealed when the lids pop and are concave (curved down).
- Should any jar not seal, just remove the lid and discard and place another prepared lid and repeat the process.
- When cooled and sealed, label jars and store in a cool, dark place.
- Allow 4 to 5 weeks for flavors to develop before using.
- This recipe makes 4- 1 quart jars and requires 12 to 16 dill cukes for each quart depending on the size of the cukes.
- Dill cukes should be 4" to 5" long and as fresh as possible.
NANA MAE'S GARLIC DILL PICKLES
My grandmother was famous for her garlic dill pickles and we loved them. She made them each summer and they were never ready until Thanksgiving. She used rusty screw on lids that took strong muscle to remove......but the real test of these pickles was when she had Grandpa George "test" them to make sure they were OK for us to eat while we looked on, wondering what would happen to him if they weren't! These pickles are not refrigerated until after they are opened. Do not process them in a hot water bath. Follow the direction and enjoy very crunchy dill pickles. Should your brine become cloudy prior to opening do NOT eat these, it should stay clear. These pickles are fabulous and easy to make.

- Boil together vinegar, water and salt.
- Wash cukes and cut into spears.
- Pack in five clean and hot (Sterilized)right from the oven, 1-quart canning jars.
- To each jar add 1-3 cloves of garlic, and 2-3 flowers of dill.

- Seal with a hot lid. Allow to cool, then store on a shelf in your cupboard.

- Clean and sterilize your jars, lids and rings and a ladle or heat-proof measuring cup with a handle, and a chopstick or butterknife. You can do this one of two ways. Either wash in your dishwasher and use the heat dry cycle or immerse jars and rings, ladle and butterknife in boiling water for five minutes and hold in the hot water while preparing the cucumbers. To sterilize the lids with boiling water, place them in a bowl and pour the boiling water over them. I opt for the dishwasher. Getting a dishwasher changed my canning life!
- To make the pickles, scrub the cucumbers and take a small slice off the blossom end of the cucumber. Taking off about 1/16" from the end of the cucumber is a little more crunchy pickle insurance. If left intact, the blossom end can release a compound that causes soft pickles.
