Adapted from a recipe originally posted by Kris Lundberg at allrecipes.com. My version doesn't use oil, so if you clean your chicken well, it is VERY low fat! See note below for serving suggestions.

1/2 lb boneless skinless chicken breast, cut into strips
12 ounces fresh broccoli florets
3 ounces baby carrots, julienne cut
3/4 cup chicken broth
3/4-1 cup water
4 tablespoons reduced sodium soy sauce
1 teaspoon fresh minced ginger
1 teaspoon minced garlic
2 teaspoons cornstarch
2 tablespoons water
nonstick cooking spray
rice, for serving

Steps:

  • In a small bowl, combine soy sauce, ginger, and garlic. Set aside for later.
  • Spray a skillet with non-stick cooking spray. Add chicken and stir-fry until no longer pink. Remove and keep warm.
  • Add 1 cup water and vegetables to skillet. Cover and steam over medium heat until crisp/tender, stirring occasionally. Remove and keep warm, draining any extra water.
  • Add chicken broth to pan, bringing to a boil.
  • Reduce heat; add vegetables, chicken, and soy sauce mixture. Stir fry for about 5 minutes at a simmer, until heated through.
  • Combine cornstarch and 2T of water, and stir into skillet. Bring to a boil. Cook for a few minutes, until thickened.
  • Serve over hot rice!
  • NOTE: I like to throw the rice right into the stir fry at the end and mix it all up, adding some egg white as well for a "fried rice" feel. You may need to add more soy sauce depending on how much rice you use!

3 tablespoons white wine
2 tablespoons cornstarch
1/2-1 teaspoon powdered ginger or 1 1/2 teaspoons fresh grated ginger

1 lb large shrimp, peeled and deveined
3 cloves garlic, minced
4 cups broccoli florets, blanched
1 large red bell pepper, cut into strips
1 large yellow bell pepper, cut into strips
4 ounces snow peas
1 (15 ounce) can baby corn, nuggets drained
1 (8 ounce) can sliced water chestnuts, drained
4 scallions, sliced

Steps:

  • In bowl, blend water, soy sauce, wine, cornstarch, and ginger until smooth.

Low Sodium Beef Stir Fry (Korean Spicy Noodles) has rice noodles with tender beef and your favorite vegetables all bathed in a spicy oil, ginger, garlic and toasted sesame oil sauce.

1 pound flank steak cut across the grain into thin 1/8" slices then cut into about 1" length pieces
1-2 Tbsp vegetable oil
1 Tbsp sesame oil
8 oz. Pad Thai noodles
1 yellow onion sliced thin (then cut into 1" lengths)
3.5 oz. favorite mushrooms sliced about 1 small carton
1 cup carrots (take deep cuts with peeler from about 3 medium carrots)
1 red bell pepper sliced and about 1" long
2 cups spinach
1/3 cup Lea and Perrins low sodium Worcestershire sauce
3 tablespoons brown sugar
2 tablespoons rice wine or a regular white cooking wine
2 tablespoons Hot chili oil or more if desired*
1/2 teaspoon pepper
1 tablespoon pre-minced garlic
1 teaspoon ground ginger
1 tablespoon cornstarch
1 1/2 teaspoons Herb Ox beef bouillon no sodium granules
3 green onions chopped
1 tablespoon sesame seeds

Steps:

  • Mix together marinade ingredients in a medium container that can be covered. (Tupperware bowl). Add beef slices and coat in marinade. Marinate at room temperature for 30 minutes or cover and refrigerate until ready to use if marinating longer than 30 minutes.
  • Cook the noodles according to package directions or to basically just loosen up. They should take just a couple of minutes. Take care not to overcook as you want the noodles to soak up sauce during final cooking. Noodles come packaged curled over you can break them at the fold for an easier length to work with.
  • Heat 1 ½ teaspoons vegetable oil in a large nonstick skillet over high heat until hot and shimmering. Add enough of the beef slices to the skillet to cook in a single layer, cook without stirring for 1 minute, then flip beef over and sear just until browned, about 1-2 minutes. Do not overcook, it will still cook some more later, or it won't be as tender! You're just looking to brown it a bit here. Transfer beef into a bowl or plate and cover. Repeat with remaining beef slices as necessary.
  • Once beef is removed to the now empty pan add 2 teaspoons sesame oil over medium high heat. Add the onions, carrots and mushrooms and sauté for 3 minutes while stirring often. Add the bell peppers just at the end and stir-fry until crisp tender. I like the peppers crisp therefore I barely cook them.
  • Reduce heat to medium low. Add the noodles, beef and remaining sauce and cook while stirring to mix well and until noodles are warmed and sauce has thickened slightly, 4-5 minutes. Add spinach toss and cook and stir one minute, or just until spinach begins to wilt.
  • Taste and add additional hot chili oil if desired for more heat.
  • Garnish on top of serving with green onions and a sprinkle of sesame seeds.

1 1/2 teaspoons fresh ginger, grated
1 tablespoon low-sodium teriyaki sauce
2 tablespoons frozen orange juice concentrate, thawed
1 (13 3/4 ounce) can sodium-free chicken broth
1/4-1/2 teaspoon crushed red pepper flakes
1 tablespoon cornstarch
2 teaspoons cornstarch
1 lb pork tenderloin, trimmed of fat
2 tablespoons olive oil or 2 tablespoons peanut oil
2 -3 garlic cloves, minced
3/4 lb snow peas
1 cup thinly sliced carrot
hot cooked white rice (for 4 servings) or brown rice (for 4 servings)

Steps:

  • Whisk together all sauce ingredients until smooth and well blended.
  • Slice pork into thin strips and stir-fry over high heat in 1 tablespoon oil until browned.
  • Remove from pan and keep warm.
  • Heat remaining oil in skillet and add snow peas, garlic, and carrots.
  • Stir-fry over medium-high heat for 3-4 minutes, or until carrots start to soften.
  • Return pork to skillet and toss with vegetables to combine.
  • Rewhisk sauce and add to skillet.
  • Cook 5-6 minutes, or until sauce thickens and clears.
  • Serve over rice.

MY STIR "FRY" (LOW FAT, LOW SODIUM)



My Stir

Not authentic! but does have an Asian flavor. I love stir fries but wanted something that works with my eating plan. Though I am still experimenting with this, here is my current version. It does not make extra sauce but is somewhat dry, because I don't eat it with rice. I lightly steam the veggies (sometimes I add chicken) in water or broth and then give them a very quick fry in a small amount of oil. The veggies are only suggestions - use what you like. If you are not concerned with sodium content, feel free to add more soy and/or peanut sauce.

1 1/2 cups broccoli florets
1 small carrot, thinly sliced on the diagonal
1 large button mushroom, quartered and thinly sliced
15 -20 snow pea pods, strings removed
1/8 large white onion, sliced
2 garlic cloves, peeled and minced
1 knob ginger, about 1 inch long, peeled and minced
3 -4 ounces chicken tenders, cut into bite-size pieces (easiest when partially frozen) (optional)
4 tablespoons water or 4 tablespoons chicken broth
2 -3 teaspoons dark sesame oil
2 teaspoons low sodium soy sauce
1 teaspoon bottled thai peanut sauce (I like San J brand)
fresh ground black pepper
cayenne pepper (optional)
2 tablespoons cashew pieces, roasted, unsalted (optional)

Steps:

  • Strip the tough membranes off the broccoli and thinly slice the florets (I use the stalks also).
  • Have all ingredients cut and ready to go.
  • Use a large skillet with a tight-fitting lid.
  • Add water or broth to the skillet, raise heat to high. Once the liquid starts boiling, lower heat and steam the veggies and chicken (if using), for about 3-4 minutes, depending on degree of crispness or tenderness desired.
  • Uncover to make sure that liquid has evaporated.
  • Add oil, soy sauce and peanut sauce; fry quickly for about a minute.
  • Season to taste with black and/or cayenne pepper.
  • If you are adding cashews and want them very crunchy, sprinkle them on top just before serving. If you want them slightly tenderized, add them earlier so as to briefly cook them.
  • Enjoy!
  • NOTE: If your snow pea pods are very young and tender, you may want to add them a couple of minutes after beginning cooking.
