3 pounds russet potatoes
Kosher salt
3/4 cup milk
1/2 cup sour cream
6 tablespoons unsalted butter, melted
2 large egg yolks
Freshly cracked black pepper
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 cup pearl onions, fresh or frozen
2 tablespoons canola oil
1/2 yellow onion, diced
2 sprigs fresh rosemary, minced
2 pounds ground lamb
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 1/2 tablespoons all-purpose flour
1 tablespoon sherry vinegar
1 cup chicken stock
1 cup frozen peas and carrots
1/2 cup fresh parsley, chopped
3 tablespoons unsalted butter, melted
1/4 cup grated Parmesan
Chopped fresh parsley, for garnish

Steps:

  • For the potato topping: Peel and cube the potatoes into 1-inch dice. Put in a large pot and add enough cold water to cover the potatoes by 1 inch. Season the water with salt and bring to a boil. Boil the potatoes until tender, about 10 minutes. Drain the potatoes and pass through a ricer. Add the milk, sour cream, melted butter and egg yolks to the potatoes and stir with a wooden spoon until smooth. Season with salt and pepper and reserve.
  • For the filling: Preheat the oven to 375 degrees F.
  • In a medium saute pan over medium heat, melt the butter with the olive oil. Add the pearl onions and cook, shaking the pan occasionally so the onions brown on all sides, until caramelized, about 5 minutes. Set aside.
  • In a large ovensafe shallow braising pan, heat the canola oil over medium-high heat. Add the onions and rosemary and cook, stirring often, until the onions are slightly browned and soft, 3 to 5 minutes. Add the lamb and season with salt and pepper. Continue to cook until the lamb cooked through, 4 to 6 minutes. Add the tomato paste, flour and sherry vinegar and cook for 2 more minutes. Add the chicken stock, peas and carrots and pearl onions and bring to a boil. Season with salt and pepper and stir in the parsley.
  • For the additional topping: Top the lamb mixture with an even layer of the potato topping. Drizzle with the melted butter and sprinkle with the Parmesan. Transfer to the oven and bake until the topping is lightly browned, about 40 minutes. Garnish with additional parsley.

"It's the best comfort food." The recipe is easy to adjust based on what you have: You can substitute ground beef or turkey for the lamb or swap the potato for cauliflower or turnip purée.

  • Top the lamb mixture with an even layer of the potatoes. For the topping: Drizzle the potatoes with the melted butter and sprinkle with the Parmesan. Transfer to the oven and bake until the potatoes are lightly browned, about 40 minutes. Garnish with additional parsley.

Steps:

  • Heat oven to 400ºF.
  • Cook potatoes in boiling water in large saucepan 15 min. or until tender.
  • Meanwhile, brown meat with onions in large skillet on medium-high heat; drain. Add tomatoes, tomato paste, Italian dressing and Worcestershire sauce; mix well. Simmer on medium-low heat 5 min. or until slightly thickened, stirring occasionally. Spoon into 8-inch square dish sprayed with cooking spray.

1 small cooking onion, chopped
1 tablespoon garlic salt
2 tablespoons Worcestershire sauce

6 large potatoes (or 2 packages instant mashed potatoes)
6 slices processed cheese

Steps:

MY version of Shepherd's Pie...... image

This is my favorite kind of shepherd's pie. It's probably closer to what true English shepherd's pie is, but if not I'm not worried. I didn't know there was any other way to make it, I thought it was always made like my mom made it (which is the next recipe I'm posting, 'Vs. Mom's version of Shepherd's Pie).

4 -5 medium potatoes, peeled and cubed
1 tablespoon butter
1/2 cup heavy cream or 1/2 cup sour cream (or a combination)
3 tablespoons bacon fat
1 1/2 tablespoons flour
1 cup beef stock or 1 cup beef broth
1 stalk celery, finely sliced
1 medium onion, finely chopped
1 carrot, peeled and finely sliced
1 can drained peas (type of peas to your preference)
1 lb ground beef (the leaner, the better)
1 teaspoon dried thyme
1 teaspoon dried rosemary
ground nutmeg
ground cloves

Steps:

  • Combine the herbs and grind in a mortar (If you don't have a mortar and pestle, sort of crush them into your palm with your thumb, but be careful with the rosemary, it's pointy!).
  • Boil potatoes until cooked through.
  • Drain; mash or rice the potatoes.
  • Add the butter and stir until the butter has melted.
  • Add the heavy/sour cream.
  • Stir until the potatoes are very smooth.
  • In a frying pan, heat the bacon fat until hot but not smoking.
  • Add the carrot, onion, and celery, stirring occasionally, until the carrots are tender.
  • Add the ground beef and cook over medium heat, breaking up the meat as it cooks, until browned.
  • Skim off all the fat but reserve any juices.
  • Sprinkle the flour over the beef and cook, stirring, until the flour has dissolved.
  • Add the beef stock, peas (I use the whole can, you may want to use less), rosemary and thyme, and a pinch each of the cloves and nutmeg.
  • Simmer, stirring occasionally, until the sauce has thickened.
  • Turn the meat mixture into a 1 1/2 qt casserole, and even the mixture out with a rubber spatula.
  • Gently spoon the potatoes over the top and smooth with a rubber spatula, using gentle sweeping motions.
  • Sprinkle a little heavy cream over the top and bake in a 400 degree F oven for about 1/2 hour to heat through.
  • The cream should brown over the potatoes.
  • Serve warm.

1 tablespoon cornstarch
1/8 teaspoon nutmeg

Steps:

  • Preheat oven to 400 degrees F.
  • Cook potatoes in boiling salted water until tender, about 20 minutes.
  • Drain potatoes and mash
  • add 2 tbsp. of the butter and enough milk to have a firm but not runny consistency.
  • Season potatoes with salt and pepper to taste.
  • Heat 1 tbsp. butter in saute pan; add onion, and saute for 5 minutes.
  • Add ground beef, and cook until beef is lightly browned; drain off any excess fat.
  • Add carrots and mushrooms to beef and cook until tender, about 10 minutes, adding 1-2 tbsp. water to keep beef from drying out, as needed.
  • Add Worcestershire sauce.
  • Stir together and add beef broth and cornstarch; bring all to a boil, stirring constantly.
  • Add nutmeg.
  • Remove from heat.
  • Place meat mixture into ovenproof casserole dish; cover with mashed potatoes.
  • Sprinkle with paprika if you like.
  • Bake at 400 degrees for 25-30 minutes, or until potatoes are light golden.
  • Serve.
