MY FAVORITE NAVY BEAN SOUP...SO EASY TO PREPARE!
This is a wonderful hearty soup, great for using leftover ham from the holidays. Note 1: For a richer-tasting stock, take half of the cooked beans and puree them with the metal blade of your food processor and then add them back to the soup. Note 2: You can soak the beans overnight to speed up the preparation process and omit cooking in the first step of the directions. This soup is comfort food at its best. You will love it. Don't let the number of Steps in the Directions divert you: I always try to make my preparation directions explicit and detailed...to make preparation easier, not more difficult!

OLD FASHIONED BEAN SOUP RECIPE
This old fashioned recipe for ham and bean soup is full of flavor. It is easy to make and can be made on the stovetop or in a slow cooker.

Steps:
- Rinse beans, picking out any bad ones. Cover with water so there is a couple of inches of water over the top of the beans; soak overnight. Drain and add 4-5 cups water (enough to cover beans) in a large soup pot. Bring to quick boil over high heat. Reduce heat and add remaining ingredients. If soup bone is not mostly covered with water add a little more. Bring soup back to a boil and then reduce heat to low; cover and simmer for 2 1/2 hours, until beans are very tender. When beans are tender, remove the soup bone and cut off any meat and add back into the soup. If you have additional leftover ham, some can be added to the soup to provide a little more meat to the soup if desired. If mixture appears too thick, add a little boiling water. SLOW COOKER: Use basically the same directions only after bringing the beans to a quick boil, pour them and the water into the slow cooker. Add all the remaining ingredients, cover and turn slow cooker on low. Cook for 10 hours or until beans are tender. To speed cooking time you can cook on high for the first hour and then turn down to low and cook for 7 hours. Note: A small amount of baking soda added to the soup during cooking will reduce the amount of gas in the beans.

Steps:
- The Night Before: Place the dried beans in a large bowl and cover with three inches of water. Soak the dried beans overnight (up to 24 hours) to soften. Drain when ready to use.
- Place a large 6 quart pot over medium heat. Add the oil, ham bone, onions, and garlic. Sauté for 3-5 minutes to soften the onions.
- Then add in the drained beans, thyme, ground cumin, crushed red pepper, 10 cups of water, and any remaining ham scraps. (Do not salt the soup until the end, because ham bones can be very salty.)
- Bring the soup to a boil. Lower the heat and simmer for 60-90 minutes, covered, until the beans are very soft. Uncover and stir occasionally, then place the lid back on top.
- Use a fork to pull any remaining ham off the bone and stir it into the soup. Discard the bone. Add 1-2 cups additional water if the soup is too thick. Taste, then salt and pepper as needed.

Steps:
- Cut pork into 2-inch cubes. Slice one of the onions into rings and place directly on top of the pork. Press down on the onions lightly to squeeze out some of their juice. Place in the fridge to marinate overnight.
- Take the pork out of the refrigerator. Remove the onions and throw them away. In an oiled soup pot over medium heat, sear the sides of the pork until they brown.
- Add the diced onions and sliced carrots. Sauté until the veggies turn golden brown.
- Add the white beans, bay leaves and boiled water. Lower the heat to a simmer and cook for an hour and a half. Season with salt and pepper. Note: You may need to add more water, as the beans tend to absorb liquid.
- Remove the soup from heat. Garnish with fresh dill and enjoy!

CONGRESSIONAL BEAN SOUP- GRANDMA'S
Grandma had this recipe for years and made it in a stockpot. It was supposedly developed for the US Congress in the eartly 1900's. Later both Mom and Grandma made this in a crockpot and added seasonings. The original recipe is rather bland. Adjust the seasonings to your taste. This is good served hot with corn bread.

Steps:
- 1. Originally Grandma made this soup in a stock pot. Later she and my Mom it in a crock pot. Since that easier I have used the crock pot directions.
- 2. Place all ingredients in Crock-Pot. Cover and cook on low 8-10 hours or until beans are tender. Adjust seasonings. These beans can be bland so more spices may be to your liking. Serve hot with corn bread.
- 3. Remove bay leaf and ham bone if used. Serve hot with corn bread.

- Navy Bean Ham Bone Soup. Have a leftover ham bone and a pound of dry navy beans just sitting around your house? If so, use them to make this delightful, hearty ham bone soup.
- Hearty White Bean Chili. There’s just something about slow cooker chili that’s hard to beat. Yes, it takes over 6 hours to make, but all that slow simmering makes the flavors come through in robust, wonderful ways.
- Southwestern Navy Bean Soup. If you want a soup that’s just as filling and appetizing as the chili but doesn’t take nearly as long to make, you can have southwestern navy bean soup ready in just 45 minutes.
- White Bean Burgers With Tomato Olive Relish. Soups and chilis aren’t the only things you can make with navy beans. You can also prepare thick, juicy white bean burgers with a ton of flavor.
- Vegan White Bean Tacos With Jalapeno Cilantro Sauce. If you’re a tacos-before-burgers type of vegan, check out this recipe instead. The jalapeno cilantro sauce on these is exceptional, as is everything else.
- Vegan Lemon and White Bean Pasta. If you’re in the mood for a slightly zestier pasta, give this vegan lemon and white bean pasta a try. You can use whatever pasta you like best, but I usually stick to the tubular varieties (penne, rigatoni, or ziti).
- Tuscan White Bean Pasta. For the longest time, I wasn’t a bean and pasta kind of person. I just didn’t think the two things went well together. However, I’m not ashamed to admit when I’m wrong, and I was wrong.
- Chicken and White Bean Enchiladas With Creamy Salsa Verde. These cheesy chicken enchiladas take some time and work to get right (25 minutes of prep and an hour to cook), but they’ll taste phenomenal, and the whole family will love them.
- Kale and White Bean Pizza. Beans on pizza may seem strange, but if you enjoy spinach and mushrooms on your pizza, then you’ll love kale and white beans, too.
- Easy White Bean Salad. White bean salad is a cool, refreshing, and totally chunky salad that’s ideal for those summer barbecues with the family. It has a light, zesty flavor (thanks mainly to the cherry tomatoes, mint, parsley, lemon, and feta cheese) but is surprisingly filling.

- Rinse and sort the beans, carefully looking for dirt or small rocks. Put rinsed beans in a large pan and cover with two inches of water. Let soak for at least 8 hours, or use the "quick soak" method.
- To "quick soak" the beans, put the pot of beans and water on the stove over hight heat. Bring to a rolling boil. Boil for two minutes, then cover with a lid and remove from heat. Let soak for one hour. A spoon of baking soda can be added to the water before soaking (after removing from heat) to aid in breaking down the beans for easier digestion.
- For making the soup, dice the carrot and celery stalk. Heat the oil in the soup pot over low or medium-low heat. Add the carrot and celery and cook until tender, stirring often. Do not allow the vegetables to brown.
