1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter
3/4 cup milk
2 medium comice pears, peeled and sliced 1/8 inch
1 teaspoon ground cinnamon
1 cup brown sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 8x8-inch pan.
  • Sift together flour, baking powder, salt.
  • In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
  • Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
  • Add milk alternatively with the dry ingredients, starting and ending with flour.
  • Pour half of the batter into baking pan.
  • Cover with pears, then pour the remaining half of the batter, covering the pears completely.
  • Bake for 35-40 minutes, or until toothpick inserted comes out clean.
  • Let cool completely.

1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 lb baking apple
3/4 cup sugar
2 eggs

Steps:

  • Preheat the oven to 350°F Melt the butter in a small saucepan or in a non-metallic bowl set in the microwave. Grease a nonstick 8-inch round cake pan (not springform) with 1 tablespoon of the butter using a pastry brush or paper towel.
  • Combine the flour, baking powder, and salt in a small mixing bowl. Wash, peel, and core the apples. Cut them in eighths and arrange over the bottom of the pan.
  • In a medium mixing bowl, whisk the sugar with the eggs until fluffy. Add the flour mixture and whisk until combined. Add the melted butter and whisk again until blended. Pour the batter evenly over the fruit and bake for 40 minutes, until the top is set and golden brown.
  • Let the cake settle on a cooling rack for 10 minutes. Run a knife around the pan to loosen and flip the cake onto a plate; if any piece of fruit has stuck to the bottom of the pan, scrape it off carefully and place it back on the cake where it belongs. Flip the cake again onto a serving plate - work cautiously so as not to squish the cake between the two plates. Let cool and serve slightly warm or at room temperature.

1-1/2 cups sugar
3/4 cup fat-free plain yogurt
1/2 cup canola oil
4 large egg whites
1 large egg
3 cups all-purpose flour
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 cups chopped peeled fresh pears
1/3 cup chopped pecans
1 teaspoon confectioners' sugar

Steps:

  • Coat a 10-in. fluted tube pan with cooking spray and sprinkle with flour. In a large bowl, beat the sugar, yogurt, oil, egg whites and egg until well blended. Combine the flour, baking soda, cinnamon, salt, nutmeg and cloves; gradually beat into yogurt mixture until blended. Stir in pears and pecans., Transfer to prepared pan. Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.

1 1/2 cups butter or 1 1/2 cups Parkay margarine
2 1/4 cups sugar
3/4 cup milk
3 cups flour
6 eggs
2 teaspoons vanilla
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • (I use self rising flour and it turns out as well. But my grandmother baked this for her children so its a very old recipe.) Cream butter and sugar.
  • Add eggs one at time.
  • Mix vanilla with milk and add to creamed mixture.
  • Mix real good,then use a wooded spoon and stir real good.
  • Put in tube pan.
  • Bake at 350 for 1 hour and 20 minutes.
  • Remove from over and let cool.

2 cups sifted flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1 1/2 cups sugar
1 cup humko corn oil
3 eggs
1 cup pitted, cooked prune
1 cup coarsely chopped nuts (, I use pecans)

Steps:

  • Place flour, salt, soda, allspice, cinnamon and sugar in mixing bowl.
  • add the oil and the eggs and mix until well blended.
  • Add the prunes and beat throughly.
  • Add the nuts and stir well.
  • Pour into a lightly greased and floured 9" tube pan.
  • Bake at 300 for 1 hour and 45 minutes and remove from pan.
  • Cool on rack until completely cool.
  • I got this recipe from my grandmother but I think she may have gotten it from Humko oil as it used the brand name.
  • I don't know if the company is still in business but the cake sure is.
  • It's definitely a keeper!

My Grandmother and Great Grandmother made this for years for family functions. It was always apple cake until my Grandmother moved into a house that had pear trees. It's fantastic with pears also.

2 c sugar
2 eggs
1 1/4 c oil
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 c chopped pecans
3 c chopped apples or pears
2 tsp vanilla

Steps:

  • 1. Mix flour, baking soda, cinnamon, salt and oil. Beat eggs and add sugar. Mix with flour mixture. Add pecans, fruit and vanilla. Bake in a bundt or tube pan for 1 hour at 350 degrees.
