2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons olive oil

1 tablespoon olive oil
2 shallots, chopped
2 cloves garlic, chopped
2 cups brown sugar
3/4 cup balsamic vinegar
1/2 cup red wine
1/2 cup apple cider
2 teaspoons green peppercorns* (See Cook's Note)
1 bay leaf
1 cup seeded and chopped plum tomatoes
1/2 cup chopped red bell pepper
5 sprigs Italian parsley
3 tablespoons soy sauce
1 1/2 ounces bourbon
1 tablespoon olive oil
3 large onions, thinly sliced (about 2 pounds)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
1 small red cabbage, thinly sliced (about 1 pound)
1/4 cup apple cider
1/4 cup brown sugar
1/4 cup red wine vinegar

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the pork with the salt and pepper. Heat the olive oil in an ovenproof skillet over high heat and sear the pork on all sides. Place the skillet into the oven and roast the pork for 8 to 10 minutes. Let the meat rest for 5 minutes before cutting. Slicing on a diagonal, cut each tenderloin into 4 or 5 pieces.
  • In a medium pot heat the oil over medium heat and add the shallots and garlic, cook until soft, but not browned. Add the brown sugar, balsamic, red wine, apple cider, green peppercorns, bay leaf, tomatoes, red peppers, parsley, and soy sauce. Simmer until reduced by 1/2.
  • Strain the sauce and add the bourbon. Serve warm over sliced pork tenderloin or chops.
  • In a large pot heat the olive oil over medium-high heat and saute the onions until soft. Add the cinnamon, cloves, and cumin and cook for 30 seconds. Mix in the cabbage and saute for 5 minutes, until wilted. Add the cider, sugar, and vinegar. Cover and braise over low heat until the cabbage is tender, about 20 minutes. Serve warm.

1 small head green cabbage, cut into 8 wedges
4 tablespoons unsalted butter (2 tablespoons melted)
Kosher salt and freshly ground pepper
2 small pork tenderloins (about 1 3/4 pounds total), trimmed
2 teaspoons ground coriander
1 red bell pepper, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon paprika
2 tablespoons white wine vinegar
1 teaspoon sugar
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 500˚. Place the cabbage on a baking sheet, leaving room for the pork. Brush the cabbage all over with the melted butter; season with salt and pepper. Roast 15 minutes.
  • Meanwhile, rub the pork with salt, pepper and the coriander. Melt 1 tablespoon butter in a large skillet over medium-high heat. Add the pork and cook, turning, until browned all over, 8 minutes (reduce the heat if the pork is getting too dark). Transfer the pork to the baking sheet with the cabbage; reserve the skillet. Roast the pork and cabbage together until a thermometer inserted in the center of the pork registers 145˚, 13 to 15 minutes; transfer to a cutting board. Continue roasting the cabbage until browned, 5 to 10 more minutes.
  • Melt the remaining 1 tablespoon butter in the reserved skillet over medium-high heat. Add the bell pepper, onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is soft, about 5 minutes. Add the paprika and stir until toasted, 30 seconds. Stir in the vinegar and sugar, then pour in 1/3 cup water, scraping up the bottom of the skillet. Cook until a thin sauce forms, 1 to 2 minutes; season with salt and pepper.
  • Slice the pork and divide among plates along with the cabbage. Spoon the bell pepper mixture over the pork; top with the parsley.

Steps:

  • Combine pork, salt and pepper to taste, wine, stock, carrots and garlic in a saucepan, Dutch oven or slow cooker. Bring to a boil, then adjust heat so that mixture simmers steadily but not vigorously. (If using a slow cooker, just turn it to ''high'' and let cook for at least three hours.)
  • Cook, stirring every half-hour or so, until meat is very tender and just about falling apart, at least an hour and most likely a bit longer. Use a slotted spoon to remove solid ingredients to a bowl, then turn heat to high. (If using a slow cooker, transfer liquid to a saucepan for this step.) Reduce to about a cup, or even less. Taste and adjust seasoning, then lower heat and stir in butter.
  • Add solids to sauce and reheat. Serve over egg noodles, garnished with parsley.

1 tablespoon (1/2 ounce) unsalted butter
2 large shallots, trimmed, peeled, and chopped (2 tablespoons)
1/4 cup balsamic vinegar
1 cup ruby port
1 cup Brown Veal Stock
For pork loin:
Kosher salt
3 tablespoons granulated sugar
2 tablespoons cracked black peppercorns
1 tablespoons dried thyme
4 whole cloves
4 whole allspice, cracked
1 bay leaf
1 center-cut pork loin, rib bones left in (2 1/2 to 3 pounds)
1 head (1 pound) red cabbage, cored, split and cut into 1/4-inch slices
Freshly cracked black pepper
1 large onion (12 ounces), peeled and cut into1/2-inch-thick round slices
1 tablespoon vegetable oil
1 large garlic clove, peeled and chopped(1 teaspoon)
1/4 cup balsamic vinegar
8 fresh sage leaves, chopped fine
1 tablespoon drained capers
Prepare the Port Wine Sauce. In a small saucepan, over medium-high heat, melt the butter. Sauté the shallots until wilted, about 5 minutes. Pour in 1/4 cup balsamic vinegar and cook until completely absorbed, about 2 to 3 minutes. Add the port and cook until 1/2 cup remains, about 5 to 10 minutes. Add the stock and cook until the sauce begins to thicken, about 5 to 10 minutes. Strain the sauce through a fine-mesh strainer into a double boiler and keep warm.
Brine the pork:
Crack the allspice. In a kettle bring water to a boil and add allspice, salt, sugar, 2 tablespoons pepper, thyme, cloves, and bay leaf and simmer 15 minutes. Cool brine in bowl large enough to hold brine and pork. Chill brine for 2 hours.
Add pork, making sure it is completely covered with brine. Marinate, covered and chilled, at least 2 days or up to three.

Steps:

  • In a large stockpot, bring approximately 4 quarts of water to a boil and add 1 tablespoon of kosher salt. Fill a large mixing bowl with ice water. Blanch the red cabbage for about 30 seconds in a strainer in the large stockpot. After blanching, plunge the strainer containing the cabbage in the ice water for about 30 seconds. Dry the cabbage with a towel and reserve. Preheat the oven to 400 degrees. Season the pork lightly with black pepper.In a large cast-iron skillet, over medium-high heat, brown the pork loin on all sides, about 10 to 15 minutes. When properly browned, remove the pork loin to a platter and reserve. Distribute the onion slices on the bottom of the cast-iron skillet and place the browned pork loin on top. Transfer to the oven and roast until the internal temperature of the pork is 150 degrees, about 20 to 25 minutes. Remove the cast-iron skillet from the oven, transfer the pork loin from the skillet to a platter and let it rest in a warm spot. Scrape the bottom of the skillet to loosen any browned particles. Remove any burned onions. Sauté remaining onions over medium heat until caramelized, about 10 minutes, remove from the pan and reserve. In a large sauté pan, over high heat, preheat the vegetable oil. Add the garlic and blanched cabbage. Sauté until the cabbage is thoroughly heated through, but still crisp, about 4 to 5 minutes. Add the 1/4 cup balsamic vinegar and the caramelized onions from the cast-iron skillet, stir briefly, add the sage and capers, and season with kosher salt and black pepper to taste. Remove from the heat and keep warm. To serve, cut the pork loin into 1/2-inch-to-2-inch-thick slices with one bone in each slice. Place the cooked cabbage on a large warm platter. Arrange the slices of pork on the cabbage, ladle the sauce over, and serve immediately.

1 boneless pork loin roast (2 to 3 pounds)
1 medium onion, coarsely chopped
2 carrots, peeled and cut into 1/4-inch cubes
1 celery rib, cut into 1/4-inch cubes
1 garlic clove, peeled and crushed
bouquet garni (3 sprigs parsley, 1 sprig thyme, 1 large bay leaf)
6 juniper berries
salt and pepper
2 -3 cups full-bodied red wine (Burgundy or Merlot)
1 tablespoon raspberry or other fruity red wine vinegar
4 tablespoons vegetable oil
1/2 cup cognac
1 -2 tablespoon red currant jelly
1 -2 teaspoon potato starch

Steps:

  • One to two days before, place the meat, onion, carrots, celery, garlic, bouquet garni, juniper berries and salt and pepper in a large glass or earthenware bowl. Pour in enough red wine to just cover the meat, then add the vinegar. Cover with plastic wrap, then refrigerate, the longer the better.
  • Remove meat from marinade and pat dry. Heat 2 tablespoons of butter and the oil in a large Dutch oven over high heat until hot but not smoking. Reduce heat to medium, add the meat, and brown on all sides, about 15 minutes. Off the heat, flambé the roast with the Cognac. (To flambé: heat alcohol in saucepan, then remove from burner. Have lid at the ready, just in case. Stand back, and ignite liquid with long match. Pour flaming alcohol over meat.).
  • Add the marinade, and all the ingredients in it. Simmer, partially covered, over low heat until the meat is tender, about one hour. Transfer meat to a cutting board, and let rest for 10 minutes before slicing.
  • Strain the cooking liquids through a sieve, reserving the vegetables. Discard garni. Return the the liquid to the Dutch oven, and boil, uncovered, over high heat to reduce by one third, about 5 to 7 minutes.
  • Finish the sauce: Purée the vegetables and cooking liquid in a blender to a smooth consistency. It should be a thick, full-flavored sauce. Return to the pan and reheat it. Add the red currant jelly and whisk until well blended. If the sauce seems thin, add a little potato starch dissolved in 1 tablespoon water or wine. Whisk in the remaining 2 tablespoons of butter. Do not boil.
  • Slice the meat, and arrange on a platter. Spoon some of the sauce over the sliced meat, and pass the rest in a sauceboat.

1/2 cup kosher salt
1/2 cup packed brown sugar
6 fresh thyme sprigs
3 fresh rosemary sprigs
3 fresh sage sprigs
3 bay leaves
1 tablespoon fennel seed
1 tablespoon coriander seeds
1 tablespoon whole peppercorns
PORK:
1 boneless whole pork loin roast (4 pounds)
1 tablespoon olive oil
2 teaspoons each minced fresh marjoram, rosemary, sage and thyme
1/2 teaspoon pepper
1 cup water
SAUCE:
1/4 cup butter, cubed
3 shallots, thinly sliced
1-1/2 cups port wine
1 bay leaf
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 tablespoons white wine vinegar
4 teaspoons sugar
1/4 cup heavy whipping cream
1-1/2 teaspoons minced fresh thyme
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon browning sauce, optional
2 teaspoons cornstarch
2 teaspoons cold water

Steps:

  • In a Dutch oven, combine the first 10 ingredients. Bring to a boil. Cook and stir until salt and sugar are dissolved. Remove from the heat; cool brine to room temperature., Place a 2-gallon resealable plastic bag inside a second resealable bag; add roast. Carefully pour cooled brine into bag. Squeeze out as much air as possible; seal bags and turn to coat. Place in a large bowl. Refrigerate for 18-24 hours, turning occasionally., Drain and discard brine; pat roast dry. In a small bowl, combine the oil, herbs and pepper; rub over pork. Place roast on a rack in a large shallow roasting pan. Pour water into pan. Bake at 350° for 1 hour 20 minutes or until a thermometer reads 145°., For sauce, melt butter in a large saucepan. Add shallots; cook and stir until tender. Stir in wine and bay leaf. Bring to a boil; cook until liquid is reduced by half. Stir in the broth, vinegar and sugar. Cook, uncovered, for 20-25 minutes or until slightly thickened., Stir in the cream, thyme, salt, pepper and browning sauce if desired. Discard bay leaf. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened., Transfer roast to a serving platter. 3 pounds pork roast
¼ cup butter
2 cloves garlic, minced
2 carrots, diced
1 tablespoon chopped fresh parsley
1 bay leaf
1 teaspoon salt
⅛ teaspoon pepper
1 ½ tablespoons tomato paste
1 ½ tablespoons sugar
1 ½ cups red wine
16 ounces fresh mushrooms, sliced

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat bacon drippings in a large skillet over medium-high heat. Brown roast on all sides. Remove roast to a casserole dish. Place butter, garlic, and carrots in the skillet. Reduce heat to medium. Stir in parsley, bay leaf, salt, pepper, tomato paste, and sugar. Pour in red wine, and stir to combine. Pour over pork roast.
  • Bake in preheated oven for 1 hour. Remove, and arrange mushrooms around the roast. Return to oven, and bake 1/2 hour.

PORK LOIN BRAISED IN WINE AND RED PEPPERS



Pork Loin Braised in Wine and Red Peppers image

I have made this pork loin so many times it is absolutely the best! I prefer a bone-in loin but you can use either bone-in or without the bone! You can also do this with thick-cut pork chops too! If you want a thicker sauce you can thicken it up after cooking with some flour and cold water. Plan ahead the pork needs to marinate overnight. Serve this with crusty buns to soak up the sauce. Cooking time is only estimated depending on the size of the porl loin. If desired you can omit stuffing the roast with garlic cloves. If you are serving this to more than 6 people then prepare two pork loins. This complete dish can be prepared a day in advance, just place half of sauce in an oven proof dish, top with pork slices, the cover with remaining sauce, cover and refrigerate, the following day, cover dish and rewarm in a 325 degree oven until heated through, serve with more sauce. This is delicious!

1 tablespoon minced fresh garlic
10 large whole garlic cloves, sliced in half (can leave them whole)
1 pinch allspice
1 (2 lb) pork loin roast, rolled and tied (if you are using a bone-in roast then it will weigh more)
1/4 cup olive oil
2 medium onions, chopped
1 -2 tablespoon chopped fresh garlic
2 large red bell peppers, coarsley chopped (or sliced)
1 lb fresh small bottom mushroom
1 1/2 cups dry white wine
2 cups crushed tomato puree
2 cups beef broth
2 large bay leaves
1 1/2 tablespoons dried marjoram, crumbled
salt and pepper

Steps:

  • In a bowl, combine the seasoning salt, black pepper, minced garlic and pinch allspice.
  • Cut small slits in the loin about 3/4-inch deep and stuff with the halved garlic cloves.
  • Rub the loin with the seasonings on all sides.
  • Place in a glass dish, cover and refrigerate overnight.
  • Set oven to 350 degrees.
  • Remove from the fridge and let the loin rest on top of the counter to come down to almost room temperature before browning.
  • Heat olive oil in a Dutch oven over medium-high heat.
  • Add in the pork loin and brown on all sides (this should take about 10-15 minutes) remove to a plate.
  • Add in onions (adding in more oil if needed) saute for about 10 minutes.
  • Add in chopped garlic and red bell peppers; saute for about 5 minutes.
  • Add in wine, crushed tomatoes, beef broth, bay leaves, button mushrooms and marjoram; mix to combine with a wooden spoon.
  • Add in the browned pork loin (fat side-up) and all the drippings from the plate; bring to a boil.
  • Cover with an oven-proof tight fitting lid and place in oven to cook for about 45-60 minutes, or until the pork is tender (might take longer than 1 hour).
  • Transfer the loin to a serving plate and let rest for 15 minutes.
  • Season the sauce with salt and pepper to taste.
  • *NOTE* although this next step is only optional, I prefer to reduce the sauce slightly, but you do not have to do this, just serve the sauce as is without reducing.
  • Place the Dutch oven on top of the stove and boil the sauce (uncovered) to reduce slightly while the pork is resting (about 15 minutes).
  • Slice the pork and drizzle the sauce on top, pass the rest of the sauce at the table.
  • Delicious!
