My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. The recipe also tastes amazing when cooked in a Dutch oven. -Julie Koets, Elkhart, Indiana

3 pounds red potatoes, cut into 1/2-inch cubes
2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
4 bacon strips, cooked and crumbled
1 medium onion, chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
Additional chopped fresh parsley, optional

Steps:

  • Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets over campfire or grill; cook 15 minutes on each side or until potatoes are tender. Open packets carefully to allow steam to escape. If desired, sprinkle with additional parsley.

One of our favorites dinner sides is a baked potato in foil. Whether you're hoping to make a grilled baked potato in foil or a baked potato in oven wrapped in foil, we'll teach you how to make a perfect baked potato every time!

6 large Idaho potatoes
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
Butter
Salt and pepper
Sour cream or Greek yogurt

Steps:

  • First, preheat the grill or oven to 450ºF.
  • Run potatoes under warm water and use a scrubby to remove any dirt or residue and then and pat dry with a towel to dry.
  • Drizzle potatoes with olive oil and use your hands to massage the oil into the skin. Then, generously season the entire potato with salt and pepper.
  • Individually wrap each potato in a piece of tin foil.
  • Place potatoes directly on the grill grates over direct heat. Cover, and let cook for 45-60 minutes. Rotating every 10 minutes.
  • Place potatoes directly on your oven racks and let cook for 45-60 minutes rotating after 30 minutes.
  • After 45 minutes, pierce one of the potatoes with a fork to see how tender they are. Once they are easily poked you know they are done!
  • Remove from heat, let sit for 15 minutes to cool, and then unwrap from foil to eat.
  • Top with your favorite toppings and enjoy!

2 lb. sweet potatoes (about 4), peeled, cut into 3/4-inch pieces
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup KRAFT Chipotle Aioli
1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350°F.
  • Place potatoes in large microwaveable bowl. Add enough water to completely cover potatoes.
  • Microwave on HIGH 10 min. (Note: Potatoes should not be cooked until tender.) Drain potatoes; return to bowl.
  • Mix sour cream and aioli until blended. Add to potatoes; mix lightly.
  • Spoon potato mixture onto large sheet of foil sprayed with cooking spray; top with cheese. Fold foil to make packet. Place on grill over unlit area; cover.
  • Grill 15 min. or until potatoes are tender, monitoring for consistent grill temperature. Cut slits in foil to release steam before opening packet.

An old favorite of my dad's that was a childhood summertime staple at BBQs ... it's an easy and delicous side with very little cleanup!

3 large baking potatoes, peeled and thinly sliced
4 -5 slices bacon, crisp-cooked
1 large onion, sliced thin
1/2 lb sharp cheddar cheese, cubed
1/8 cup butter
salt and pepper

Steps:

  • Slice potatoes thinly onto a big piece of heavy aluminum foil and sprinkle with salt and pepper.
  • Crumble bacon over potatoes. Add onion and cheese cubes.
  • Slice butter over all and mix mixture gently on the foil.
  • Bring edges of foil up, leaving room for steam expansion. Seal with a double fold.
  • Place package on grill and cook about 1 hour, turning several times. Be careful not to burn.

My Family's Favourite Potatoes in Foil image

I'm sure there's a recipe out there somewhere for this, but years ago when camping, I used to slice potatoes in foil, add seasoning salt and butter and bbq. After time, I started to be a little creative and this is what I came up with. I hope you enjoy as much as my family does! Ingredient measurements are approximate as I make this without measuring and adopt to number of people I am serving for dinner. Don't be put off by the list of directions as this is really simple to make; most of this is helpful hints I have found out while making the recipe! Plus I tend to be long winded!

5 -6 medium potatoes
2 tablespoons of your favourite herb and garlic seasoning
1 -2 teaspoon garlic powder
1 -1 1/2 cup grated old cheddar cheese
1/2 cup precooked bacon bits

Steps:

  • In a bowl, slice potatoes.
  • Add seasoning, garlic powder, grated cheese and bacon pieces.
  • Mix and transfer to greased tinfoil. Wrap and transfer to bbq grill on medium heat.
  • Takes about 45 minutes to 1 hour to cook but depends on heat temperature of bbq.
  • During cooking, turn a few times.
  • I make this in a bowl and transfer to foil, but you can make right on the tinfoil and mix it on the foil.
  • I use 'Pam' on the foil for easy release of potatoes.
  • I double wrap foil in case one layer breaks open when cooking/turning.
  • New red or white potatoes are great with skins on.
  • You could easily add sliced onions; we don't because of family preference (husband hates them!).
  • You can easily add more or less cheese or bacon to suit your taste. I have also used grated marble cheese when I ran out of cheddar and it worked well.
  • Any jar kind of dried herb and garlic seasoning works well (with the larger pieces of spices) but you can also use Mrs. Dash seasoning, seasoning salt, cajun spice to heat it up a little - I've tried all these and they all work well).
  • I don't add butter to the potatoes in the foil and they are still plenty moist, but you could if you wanted to.
  • Don't think that the spices are too much - they really seem to mellow with the potatoes during cooking. I know sometimes when I make it, it looks like a lot of spice but you don't really taste if (except cajun or seasoning salt).
  • Watch you don't overcook or the cheese will burn and stick to the foil!

4 tsp. TACO BELL® Taco Seasoning Mix
2 cups ORE-IDA Potatoes O'Brien
1 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
1/2 cup TACO BELL® Thick & Chunky Salsa
1/4 cup sour cream

Steps:

  • Heat oven to 400°F.
  • Mix meat and seasoning mix. Layer 1/4 each of the potatoes, meat mixture, cheese and salsa in center of 4 large sheets of heavy-duty foil.
  • Fold foil to make 4 packets. Place in rimmed baking sheet.
  • Bake 15 min. or until meat is done. Remove from oven; let stand 5 min. Cut slits in foil to release steam before opening packets. Serve with sour cream.
