6 eggs
1 cup mayo
1 tablespoon mustard
1 tablespoon finely diced dill pickles or relish
1 tablespoon apple cider vinegar
1 tablespoon white sugar
1 teaspoon celery seed
1 teaspoon sea salt
1 teaspoon black pepper
4 minutes

Steps:

  • Prepare hard-boiled eggs using the desired method, peel, and set aside to cool.
  • Wash potatoes and quarter.
  • Bring a pot of water to a boil with a little bit of salt. Boil potatoes until very tender.
  • Combine mayo, mustard, diced dill pickles, apple cider vinegar, sugar, celery seed, salt, and pepper.
  • Mash potatoes with five of the hard-boiled eggs. Mix in dressing.
  • Refrigerate and serve cold. Top with a sliced hard-boiled egg.

15 pounds potatoes, peeled and cubed
4 cups mayonnaise
1 cup sweet pickle relish
1/4 cup prepared mustard
1 jar (4 ounces) diced pimientos, drained
2 tablespoons salt
1 tablespoon sugar
2 teaspoons pepper
6 celery ribs, chopped
8 hard-boiled large eggs, chopped
1 small onion, chopped
Paprika and green pepper rings, optional

Steps:

  • Place potatoes in two stockpots and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and cool to room temperature. , In a large bowl, combine the mayonnaise, relish, mustard, pimientos, salt, sugar and pepper. Divide the potatoes, celery, eggs and onion between two very large bowls; add mayonnaise mixture. Stir to combine. , Cover and refrigerate for at least 1 hour. Garnish with paprika and green pepper rings if desired.

It is delicious and a family traditional recipe I learned (without measurements) from my wife's grandmother. Serve hot, warm, or cold. Can be made ahead and refrigerated for one or two nights.

5 pounds potatoes, peeled and diced
1 ½ cups mayonnaise
1 medium onion, finely diced
¼ cup yellow mustard
¼ cup milk
3 tablespoons butter, cut into pieces
2 tablespoons sweet pickle juice
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground paprika, or more to taste
10 medium sweet pickles, diced
6 large hard-cooked eggs, divided

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until fork-tender, about 20 minutes. Drain.
  • Transfer potatoes to a bowl and blend with an electric mixer. Add mayonnaise, onion, mustard, milk, butter, pickle juice, salt, pepper, and 1/2 teaspoon paprika; blend until smooth. Blend in pickles. Dice 5 eggs and blend into the mixture. Taste and adjust seasonings as needed.
  • Transfer to a serving bowl and smooth the top with a rubber spatula. Slice the remaining egg in half lengthwise and press on top. Garnish with paprika.

When I used to cater, this is what I usually made to serve along with my barbecued pork sandwiches. If you have a large event to cook for, I hope this recipe helps you out! Serves 50.

15 lbs red potatoes
water
1 teaspoon salt, approximately
5 tablespoons Dijon mustard
2 1/2 teaspoons salt
1 1/4 teaspoons fresh ground black pepper
2 1/2 teaspoons sugar
1/2 cup cider vinegar
1/2 cup salad oil (vegetable)
2 bunches green onions, cut into 1/2-inch slices
2 1/2 cups mayonnaise (or more)
15 hard-boiled eggs, chopped

Steps:

  • Cook whole, unpeeled red skinned potatoes in lightly salted water,(about 1 tsp.salt), until just tender, don't over cook to mush. *About 12 minutes. Only 10 if your potatoes are very small.
  • Drain and cover with cold water to cool.
  • Peel potatoes if desired (I prefer the skins left on) and cut into 1/2" cubes. Place in a large bowl.
  • In a seperate bowl, beat together the 2 1/2 teaspoons salt, mustard, pepper, sugar and vinegar until well blended.
  • Slowly whisk in oil.
  • Add mustard dressing to potatoes; toss lightly but thoroughly.
  • Cover and let stand 1-2 hours.
  • Add green onions, eggs and mayo.
  • Mix thoroughly.
  • Adjust seasonings, namely salt. It may need more to taste.
  • Serve immediately or cover and refrigerate overnight.
  • *If making a day ahead, be sure to taste before serving! Potatoes as well as eggs really absorb salt and your salad can sometimes taste like you forgot to add it. Add more salt as needed.

2 1/2 pounds russet potatoes, 3 medium-large potatoes, peeled and cubed
2 ribs celery, finely chopped
1/2 small to medium yellow skinned onion, finely chopped
3 tablespoons chopped pimento, drained
3 tablespoons sweet pickle relish
1/3 cup mayonnaise, eyeball it
1/3 cup yellow mustard, eyeball it
Salt and pepper
2 tablespoons chopped parsley, optional

Steps:

  • Boil potatoes in salted water 10 to12 minutes, or until just tender. Drain the potatoes and spread out onto a cookie sheet to cool quickly, about 10 minutes.
  • In a bowl, combine celery, onion, pimento, relish, mayonnaise and mustard.
  • When you are ready to serve, combine cooled potatoes with other ingredients. Stir the potatoes to combine and season with salt and pepper.

1/2-3/4 cup chopped red onion
2 green onions with tops, sliced

1/3 teaspoon pepper
1/4 teaspoon lime juice

Steps:

  • Place the potatoes in a saucepan and cover with water.
  • Cover and bring to a boil; cook until tender, about 25 minutes.

  • Meanwhile, combine the remaining ingredients.

juice of 1 lemon
3 spring onions , chopped

Steps:

  • Cook the potatoes in a large pan of salted water until just tender, about 10-15 mins. Meanwhile, whisk together the olive oil, mustard and lemon juice in a large bowl. Drain the potatoes and leave to cool for 5 mins, then tip into the bowl along with the spring onions. Toss everything until the potatoes are well coated. Leave to cool. The dish will keep in a covered container in the fridge for up to 2 days.

1 cup chopped onion
1 cup chopped green pepper
4 cups finely slivered celery
2 cups diced cucumbers

12 hard-boiled eggs
1/2 cup flour
1/4 cup sugar
1 tablespoon dry mustard
1 tablespoon salt
1/2 teaspoon pepper
cayenne
1 quart milk
4 eggs
1 cup distilled white vinegar
1/4 cup butter

Steps:

  • FOR THE POTATO SALAD: Cook 10 pounds waxy new crop potatoes in salted boiling water to cover. Peel and dice. Spread in 3 serving pans, 9 by 15 inches. Sprinkle with 1 cup finely chopped onion. Cover evenly with Hot Salad Dressing. With wide spatula turn potatoes carefully in the dressing to coat completely. Let stand in a warm place, covered, for half an hour. At serving time, sprinkle with 1 cup chopped green pepper, 4 cups finely slivered celery, and 2 cups diced cucumber. Carefully toss to mix ingredients. Adjust seasoning, if necessary, with salt, pepper, and cayenne. Separately grate the yolks and whites of 12 hard cooked eggs and sprinkle on the salad in patterns through a paper doily, keeping the colors separate. Makes about 50 servings, 2/3 cup each.
  • FOR THE HOT SALAD DRESSING:.
  • Put a 2 quart pan into a roasting pan with hot water in it. In the pan, mix together 1/2 cup flour, 1/4 cup sugar, 1 Tablespoon each dry mustard and salt, 1/2 teaspoon pepper, and a generous dash of cayenne. Gradually add 1 quart hot milk, stirring until smooth. Cook, stirring, until the sauce bubbles and thickens. Cook 10 minutes, stirring often. Beat 4 eggs lightly, warm them with a little hot sauce, and stir them into the pan. Cook for a minute or two. Remove the pan from the hot water and add 1 cup full strength distilled vinegar (not the mild seasoned type). Swirl in 1/4 cup butter. If the sauce seems too thick, add a few tablespoons of water to thin it as desired. Taste and adjust the seasoning with more salt and pepper to taste. Makes 1 1/2 quarts.

400g good-quality mayonnaise
2 tbsp American mustard
2 tbsp cider vinegar
2 tbsp honey
hard-boiled eggs , finely chopped
8 spring onions , sliced

  • Put the potatoes in a pan of salted water, bring to the boil, then cover and simmer for 8-10 mins or until cooked through - a cutlery knife should easily pierce them. Drain and leave to cool in a colander.
