1 tbsp Olive Oil
1 Zucchini (Shredded )
½ Onion (Diced )
2 Cans of Kidney Beans (Do not drain )
2 Cans of Crushed Tomatoes (15 oz. )
2 tbsp Chili Powder
1 tsp Cumin
1 tsp Garlic Salt
1 tsp Pepper
2 cups Chicken Broth

Steps:

  • Heat the olive oil in a large pot over medium heat.
  • Then add in the turkey and brown the ground turkey. Add in the shredded zucchini and onion.
  • Cook until translucent.
  • Add in the remaining ingredients.
  • Cook on low and allow it to simmer for about 20 minutes to let all the flavors combine
  • You may need to add more water or broth if you don't want the chili to be as thick.

1 medium Sweet Onion (Diced)
¼ Cup Water
1 Pound Ground Turkey
2 teaspoons Cumin
1 teaspoon Paprika
1 teaspoon Chill Powder
1 tablespoon Oregano
2 tablespoons Parsley
1 teaspoon Salt (I start with a teaspoon and taste, adding more if necessary)
1 teaspoon Ground Pepper (I start with a teaspoon and taste, adding more if necessary)
4 Cups Tomatoes (Diced including any juices, Also equal to 2 cans that are 14.5 ounces each)
2 Cups Low Sodium Chicken Broth
5 1/4 Cups Kidney Beans (Also equal 3 cans that are 16 ounces each)
1 Bay Leaf

Steps:

  • Dice sweet onion and celery into bite sized pieces.
  • Heat up a large pot on medium-high heat Add a little pan spray or olive oil, then add the celery and onion. Sautee for 1-3 minutes, then add water and cook another 2-3 minutes until vegetables are soft.
  • Add the ground turkey to the pan. Break up turkey with a wooden spatula. Add cumin, paprkia, chili powder, oregano, salt and pepper. Continue sauteeing the ground turkey for 5-7 minutes or until turkey is cooked through all the way and has no pink.
  • Add the tomatoes, broth, beans and bay leaf to the pot. Turn the temperature on the stove up to high and bring the pot to a rolling boil on high. Once the entire surface of the chili is bubbling, cover the pot with a lid and turn down the heat to medium.
  • Allow the pot to cook for 20-30 minutes or until everything is bubbly, hot and delicious. Remove the bay leaf before serving. Garnish with your favorite toppings and enjoy!

4 tsp Chile powder
1 Tbsp Paprika

1 Can Crushed tomatoes ((14.5 oz))
1 Can Dark red kidney beans, (drained and rinsed (14oz) (leave out for paleo/whole30))

2 Tbsp Tomato paste
1 tsp Salt
Pinch of pepper
2 Bay leaves
1/4 Cup Parsley, (minced)

Steps:

  • Heat 1 Tbsp of the oil in a large pan on medium high heat. Add in the potato, onion, pepper, celery and garlic and cook until they begin to soften, about 5 minutes.
  • Add the rest of the oil and the turkey to the pan. Cook until the turkey begins to brown, about 3-4 minutes. Drain off any of the liquid.
  • Add in the spices and cook until the turkey is no longer pink and the spices are fragrant, about 3-4 minutes.
  • Add in the fire roasted tomatoes, crushed tomatoes, beans, water, tomato paste, salt and pepper and stir until well combined. Then, bring to a boil.
  • Once boiling, stir in the bay leaves, turn the heat to medium low and cover the pan. Simmer for 30 minutes, stirring occasionally.
  • Once simmered, remove the bay leaves and stir in the parsley.

Delicious with sweet corn bread and shredded Cheddar cheese. After the initial cooking on the stove, you can easily transfer this to a slow cooker.

1 large onion, diced

1 medium yellow onion, chopped
3 cloves garlic, minced (from jar is ok)
1 1/2 lbs ground turkey
1 (10 ounce) can diced tomatoes with mild green chilies
1 teaspoon ground cumin
1/2 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cinnamon
1/2 tablespoon light brown sugar
1/4 teaspoon ground cayenne pepper

Steps:

  • In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.
  • Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.
  • Saute for 5 more minutes.
  • Add black beans, corn and chicken broth to the pot.
  • Puree cannellini beans in a blender or food processor.
  • Add puree to the pot.
  • Stir well and simmer for 10 minutes.
  • If the turkey mixture seems dry when browning, add a splash of olive oil.
  • The spice measurements are approximate.
  • If you want more or less heat, adjust the cayenne and the hot sauce.
  • If desired, garnish with sour cream, shredded cheese or green onions.

2 pounds ground turkey (I used extra lean)
1 medium/large sweet Vidalia onion, diced small
1 medium/large red bell pepper, diced small
3 to 5 garlic cloves, finely pressed or minced
2 to 3 teaspoons kosher salt, or to taste* (see Note below)
1 teaspoon freshly ground black pepper, or to taste
one 15.5-ounce can red kidney beans (I used low-salt), drained and rinsed if desired
one 15-ounce can black beans (I used no-salt added), drained and rinsed if desired
one 14.5-ounce can petite diced tomatoes (I used no-salt added)
one 8-ounce can tomato sauce, plus 8 ounces water used to rinse out can (I used no-salt added)
about 8 ounces water, chicken or vegetable broth, optional (see step 5 below)
two 4-ounce cans diced green chilis (I used fire-roasted)

Steps:

  • To a large Dutch oven, add 2 tablespoons olive oil, turkey, and cook over medium-high heat to brown, crumbling it with a spatula as it cooks and tossing it to ensure even cooking. Cook through, about 5 minutes or as necessary.
  • Add the onions, red pepper, drizzle remaining 2 tablespoons over the top, stir, and cook for about 5 to 7 minutes, or until vegetables have softened, stir intermittently.
  • Add the garlic, salt (Note because I used all low-salt or no-salt added products I use 3 teaspoons salt total; if you're using salted versions of the other ingredients reduce salt level to 1/2 to 1 teaspoon to start with and add more if necessary), pepper, and cook for about 1 minute, stir intermittently.
  • Add the beans, diced tomatoes, tomato sauce, rinse can out with 8 ounces water and add the water, green chilis, cumin, chili powder, smoked paprika, bay leaves, and stir.
  • Depending on how thick you like your chili and if you prefer more broth, you may wish to add up to 8 additional ounces water, chicken or vegetable broth.
  • Bring to boil and cook for about 10 to 15 or until chili has reduced and thickened some.
  • Stir, taste, optionally add sugar to taste (I added 2 teaspoons because the sugar balances the acid from the tomatoes and peppers), and add more salt, pepper, or seasonings to taste.
  • Remove bay leaves.
  • Ladle into bowls and optionally garnish with sour cream, green onions, shredded cheese, crushed tortilla chips or crackers.

1 (8 ounce) jar green chili salsa (mild, medium, or hot ( to your taste)

1 tablespoon minced garlic

Steps:

  • 1. Add ground turkey and chopped onion to frying pan (or for one pot meal - in large cooking pot), and cook and crumble turkey until done. Onions will soften while turkey is cooking. Drain any fat from pan.
  • 2. Place turkey onion mixture into large cooking pot, and and all remaining ingredients.
  • 3. Stir and bring to simmer. Simmer for one hour or longer.
  • At step two you can also put all ingredients except corn in slow cooker and cook on low all day. Corn should be added 1-2 hours prior to when you want to serve the chili.

15 oz tomato sauce
15 oz corn (drained (or use 2 ears cooked corn))

Steps:

  • In a 5 Qt pot or dutch oven over medium/high heat, add 1 Tbsp olive oil and sautee 1 lb ground turkey until cooked through (5 min).
  • Add diced purple onion, 1 tsp cumin powder, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp oregano, 1 tsp salt and 1/4 tsp pepper. Saute 5 minutes or until onions are softened.
  • Add drained and rinsed black beans, pinto beans with juice and white beans with juice. Also add diced jalapeños, canned diced tomatoes with juice, tomato sauce, and drained corn.
  • Stir to combine and bring to a boil then reduce heat and simmer uncovered 20 minutes, stirring occasionally. Season to taste towards the end of cooking (I like to add an extra 1/2 tsp salt).

Steps:

  • In a large pot, heat olive oil. Saute onion and bell peppers unti onions become translucent and peppers soften. Add the turkey and crumble. If there is excess fat, drain. Add chili powder, grill season, cumin, and Worcestershire. Add beer and deglaze the pan, scraping up the drippings and cooking off the alcohol. Add the tomato and barbecue sauces. Simmer for ten minutes. Spoon into bowls and top with cheese and other garnishes.

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil in a large wide pot or dutch oven over medium-high heat. Reserve 1/3 cup chopped onion, then add the rest of the onion and the garlic to the pot; season with salt and pepper. Cook, stirring, until softened, 3 to 5 minutes. Add the turkey and cook, breaking it up into small pieces, until cooked through, about 3 more minutes. Add the chili powder, cinnamon, cocoa powder, 1/2 teaspoon salt and a few grinds of pepper. Sauté over medium-high heat for five minutes and add the next eight ingredients (salt through the bay leaf) and stir occasionally until the meat is cooked for about five additional minutes. Add the beer and reduce the heat to medium. 2. Add the diced tomatoes with their juice and the sauce. Stir to combine. 3. Rinse the beans thoroughly and add to the chili. Stir to combine, and bring to a boil. Cover and reduce the heat to low. Simmer for at least two hours and up to five, stirring occasionally and making sure to keep the heat low enough to avoid burning. 4. Serve with cornbread, shredded cheddar cheese, sour cream and a lime wedge.
