1 lb pork tenderloin, cut into 8 equal pieces and pounded 1/4-inch thick
1/4 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1 tablespoon extra virgin olive oil
3 tablespoons thinly sliced scallions
chutney
3/4 cup diced yellow onion
1 1/4 cups chopped peeled granny smith apples (about 2 medium)
1/4 cup chopped dried apricot, plus
2 tablespoons chopped dried apricots
1 tablespoon apple cider vinegar
3/4 teaspoon ground ginger
1/2 teaspoon dry mustard
1/2 cup apple juice, plus
2 tablespoons apple juice

Steps:

  • Sprinkle both sides of the pork pieces with some of the salt and pepper.
  • Set aside.
  • To make the chutney, coat a large nonstick skillet with nonstick cooking spray and add the onion.
  • Cover and cook over medium heat for about 3 minutes, until the onion starts to soften (add a little water if the skillet becomes too dry).
  • Add the apples, apricots, vinegar, ginger, mustard, and about 1/3 cup of the apple juice.
  • Cover and cook over medium heat for about 5 minutes, stirring occasionally, until the apples and onions are tender and the apricots are plumped.
  • Remove the mixture from the skillet and set aside.
  • Wipe out the skillet, and then coat with the olive oil and preheat over medium-high heat.
  • Add the pork and cook for 2 to 3 minutes on each side, until nicely browned and no longer pink inside.
  • Remove the pork from the skillet and set aside to keep warm.
  • Return the apple mixture to the skillet and add the remaining apple juice.
  • Bring the mixture to a boil over medium-high heat and cook for a couple of minutes, stirring frequently, until most of the liquid has evaporated.
  • To serve, place 2 pork medallions on each of 4 serving plates and top with some of the chutney and a sprinkling of scallions.
  • Serve hot.

2 teaspoons apple cider vinegar

Steps:

  • Combine the apricot jam, mustard, vinegar and lots of black pepper in the jam jar or a mason jar. Shake until well blended.
  • Use the glaze like you would a BBQ sauce. Brush on or pour over pieces of grilled or pan-seared chicken, pork chop or salmon just before it's done cooking and let cook for an additional 1 to 2 minutes.

1/2 cup Dijon mustard
1 tablespoon honey
Salt and freshly ground pepper
2 (1-pound) pork tenderloins, cut into medallions and pounded thin
Olive oil
16 (6-inch) wooden skewers, soaked in cold water for 30 minutes

Steps:

  • Heat grill to high. Whisk together the molasses, mustard, and honey in a small bowl. Season with salt and pepper, to taste.
  • Skewer 1 piece of pork onto 2 skewers so that the meat lies flat. Brush the meat with oil and season with salt and pepper. Grill for 2 to 3 minutes per side or until cooked through, brushing with the glaze every minute. Remove from the grill and brush with more of the glaze. Serve immediately.

1 (4 1/2 to 5 1/2-pound) bone-in pork loin end roast
Kosher salt and freshly ground black pepper
1 1/2 cups apple juice
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
3 tablespoons spicy brown mustard

Steps:

  • Preheat the oven to 350 degrees F. Take the pork out of the refrigerator 45 minutes before you are ready to roast to allow the pork to come to temperature.
  • Place the pork into a roasting pan fitted with a rack or onto a baking sheet, fat side up, and season with salt and pepper. Put in the oven and roast for 1 hour. Meanwhile, make the glaze.
  • In a saucepan over medium-high heat, bring the apple juice to a boil and reduce it by half, about 10 minutes. Whisk in the brown sugar, soy sauce, Worcestershire sauce, and mustard and simmer until thickened, another 5 to 7 minutes.
  • After the pork has roasted for 1 hour, start brushing it with the glaze every 15 minutes. Cook until the roast reaches an internal temperature of 150 degrees F, about 2 hours total cook time. Remove from the oven, give it another coating of glaze, and let it rest, uncovered, for 15 minutes before carving. (Reserve 1 cup of the meat for the Round 2 Recipe Pork Hash).

1/2 cup white wine vinegar
1/2 teaspoon fresh ginger, grated
1 small garlic clove, minced
1/4 teaspoon ground cinnamon
2 cups tart cooking apples, peeled, cored, and chopped (2 medium)
1/2 cup dried apricot, snipped
1/4 cup onion, chopped
1/2 teaspoon dried thyme, crushed
3 tablespoons apple juice
2 tablespoons dijon-style mustard
1/2 teaspoon dried thyme, crushed
1 1/4 lbs boneless pork loin

Steps:

  • Soak twenty to twenty-four 6-inch wooden skewers in water for 30 minutes before grilling or broiling. Drain before using
  • For chutney:.
  • In a medium saucepan, stir together brown sugar, vinegar, ginger, garlic, and cinnamon. Stir in apple, dried apricots, onion, and 1/2 teaspoon thyme. Bring mixture to boiling over medium heat; reduce heat. Cover and boil gently for 10 minutes. Uncover and boil gently about 5 minutes more or until chutney reaches desired consistency.   • Meanwhile, in a small bowl, stir together apple juice, Dijon mustard, and 1/2 teaspoon thyme; set aside.
  • Trim fat from pork. Cut pork across the grain into thin strips about 3 inches long and 1 inch wide.
  • Thread pork strips, accordion-style, onto wooden skewers.
  • Lightly brush mustard mixture on both sides of pork
  • Place skewers on the rack of an uncovered grill directly over medium-hot coals.
  • Grill for 7 to 8 minutes or until pork is slightly pink in center, turning once. (Or place skewers on the unheated rack of a broiler pan. Broil 5 to 6 inches from the heat for 7 to 8 minutes or until pork is slightly pink in center, turning once.)
  • To serve, arrange skewers on a serving platter; serve with chutney.

My family now refers to it as "Emergency Room Roast." I served it with sweet potato casserole and creamed spinach. (BTW, my dad was in the ER but he's just fine now, thank you!)
